GRANNY'S FRIED POTATO SLICES
I like this recipe because it is fairly easy to make, is quick to cook and inexpensive to make. I got the recipe from my father's mother when she was alive many years ago and she got it off of a lady she knew during the Great Depression of the 1930's. One tip I would like to make is to always make sure when cooking this recipe to have the cooking oil not only cover the top of the slices but underneath the slices as well in the deepest frying pan you have or deep fryer that you can also use. If you or your family like french fries a lot, then I am sure you will these, they are tasty but I am afraid addictive like french fries and fattening but enjoy them anyway!

Steps:
- You have to wash the potatoes before using them and then either peel them or leave skin on, then slice them across width ways into slices.
- Mix the salt, baking, flour together in a mixing bowl, gradually add the water to it until it is the consistency of batter.
- Preheat enough cooking oil in the either deepest frying pan you have or deep fryer to properly cook the potato slices.
- Dip the potato slices into the batter you have made until coated on both sides and then place in the hot cooking oil and fry until golden brown and cooked. Then serve them.
- You can use whatever you like on them, for example, salt and vinegar, salad dressing, gravy, etc. Number of servings or amount depends on the size of family you have or how much you can eat at one time.

Steps:
- Combine the potatoes, lemon juice, salt, pepper and oregano in a bowl, mix well and allow the potatoes to marinate for an hour or so.
- Heat the olive oil in a wok or deep skillet over high heat until it begins to smoke. Add the marinated potatoes and fry them, tossing gently but often, until they begin to brown. Adjust the seasonings, adding additional salt, pepper, lemon juice and oregano, as desired.
- Cook until nicely browned and just tender. Do not let the potatoes get so soft that they fall apart.

- Place the potato wedges in a large bowl and cover with hot water for 10 minutes. Drain and spread the wedges on a large, clean towel and pat very dry. Dry the large bowl to use again.
- Return the potato wedges back to the dry bowl. Season generously with Kosher salt and black pepper. Drizzle about 3 tablespoons of extra virgin olive oil. Toss to combine, making sure all the potatoes are well-coated.
- Arrange the potatoes in a single layer on a large, lightly oiled sheet pan (non-stick if possible). If you don't have a sheet pan that is large enough, use two pans.

- Preheat the oven to 425 degrees Fahrenheit. Evenly space the oven racks to ensure even cooking.
- (Watch this video or use a fry cutter.) Wash the potatoes, leaving the skins on. Slice off the ends of each potato, then slice off part of the side to make a base. Place the potato half cut side down and cut off a 3/8-inch slice, then lay the slice on its side and cut it into several long strips. Repeat until all potatoes have been cut into fries. The pieces can be uneven, but aim for as uniform of thickness as possible. See the video for full instructions!
- Place the cut fries into a medium bowl and rinse with cold water until water is clear. Then fill the bowl with cold water and allow to rest for 10 minutes (while the oven preheats). Then drain the potatoes and dry them thoroughly with a clean dish towel.
- Add the fries to a dry bowl and toss them with the olive oil, Greek seasoning and kosher salt. Line two baking sheets with parchment paper. Spread the fries in straight lines on the paper, placing them as far apart as possible.

- Peel the potatoes and cut in long pieces, don’t try to make them perfectly shaped. Soak them in a bowl of water for at least an hour. Drain and place them in a bowl, salt them and mix them with your hands so that all pieces are covered.
- In a pot or pan that has enough space for the potatoes in one layer, add some olive oil, about an inch high.
- Heat the olive oil on medium heat, once the oil starts making sizzling noises (I measured a temperature of about 330 F) you add the potatoes. Fry the potatoes at this temperature for about 5 minutes. Stir gently a few times so that the potatoes do not stick. After that, lower the heat and continue frying for another 5 minutes and then raise the heat slightly and fry for 2-3 minutes more until you have a golden color.
- Place a plate with paper towels and remove the fries with a slotted spoon and place them on the napkins. Place another napkin on top to absorb any oil.
