1 lb ground Italian sausage
2 lbs ground beef
2 cups chopped onions
15 ounces tomato sauce
14 ounces diced tomatoes, undrained
2 tablespoons quick-cooking tapioca
2 tablespoons finely chopped seeded jalapenos
2 teaspoons sugar
2 teaspoons dried oregano
roll
cheddar cheese, shredded

Steps:

  • In a large skillet, brown the meat.
  • In a crockpot, combine onion, tomato sauce, diced tomatoes, tapioca, peppers, sugar and oregano.
  • Cover and cook on low 8-10 hours or high 4-5 hours.
  • Spoon into rolls. Top with cheese if desired.

I really enjoy Vienna sausage, but I just got tired of eating them right out of the can. For all of the canned meat fans, this is for us. Prep time doesn't include cooking of eggs. Chill time is "cook time".

2 (5 ounce) cans vienna sausages, drained
2 hard-boiled eggs, finely chopped
4 tablespoons sweet pickle relish
1/2-3/4 cup mayonnaise (may need a little more to make it more spreadable)
1 1/2-2 teaspoons granulated sugar (depending on your sweet tooth)
salt
pepper
garlic powder

Steps:

  • In a medium sized bowl, add Vienna sausage, mashing well.
  • Add rest of ingredients, mixing well.
  • Chill for at least 2 hours.
  • Serve as a sandwich spread or as a dip for assorted crackers and veggies.

1 lb lean ground beef
1/2 lb ground lamb
1 egg white
4 garlic cloves, minced
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons ground black pepper
1 teaspoon cayenne pepper
1/2 teaspoon paprika
1 onion, finely chopped
4 white bread or 4 rolls

Steps:

  • In a large bowl, combine the ground pork, ground beef, ground lamb and egg white. Add the garlic, salt, baking soda, black pepper, cayenne pepper and paprika. Mix well using your hands.
  • Form into finger length sausages about 3/4 inch thick. Arrange in a plate.
  • Cover with plastic wrap or wax paper and refrigerate for one hour to one day, to let the flavors settle and the mixture become firm.
  • Preheat the grill, medium-low heat. Lightly oil the grilling surface.
  • Grill cevapcici until cooked through, turning as needed. The grilling usually takes about 30 minutes.
  • Serve in warmed or grilled pita bread, white bread or rolls on a bed of chopped onions, with your choice of toppings such as kajmak, sour cream, cottage cheese, fresh peppers, ajvar or tomatoes.

I've always made this with sweet Italian sausage, but have recently started doing it with Polish kielbasa as well. The directions are for Italian sausage and works just fine for either hot or sweet sausage; the Polish sausage doesn't require parboiling unless you just want to do so to reduce fat.

4 -6 italian sweet sausage or 4 -6 hot Italian sausages
1 1/4 cups dry white wine or 1 1/4 cups water, divided
2 -4 teaspoons extra virgin olive oil, divided
2 large onions, thinly sliced,lengthwise
2 -3 cloves garlic, minced
3 -4 large red bell peppers or 3 -4 large green bell peppers, seeded and thinly sliced
salt & freshly ground black pepper
4 -6 large crusty French rolls, split and warmed in oven
4 -12 slices provolone cheese, 1 to 2 slices per sandwich (desirable) (optional)
1 -2 cup fairly spicy marinara sauce (if not spicy, simmer with garlic and red pepper flakes or cayenne pepper to taste)

Steps:

  • Poke the sausages all over with a fork, and place in a large lidded skillet with 1-2 Tsp extra virgin olive oil and 1 cup white wine or water, turn on heat to medium, and partially cover.
  • When pan begins to boil, turn sausages, and continue to simmer, turning several more times.
  • When liquid has evaporated, uncover, and continue cooking until sausages have browned to your taste.
  • Remove sausages from pan, and set on paper towels to drain.
  • Drain all grease from skillet, but do not wash or rinse it.
  • Add 1-2 Tsp more extra virgin olive oil to pan, and place on medium heat.
  • Add onions, and garlic, and season to taste with salt and pepper.
  • Moisture from the onions should be enough to deglaze the pan, but you can add 1/4 cup white wine or water, if desired, to help with the job.
  • Stir the onions, scraping the bottom to pick up and dissolve browned bits from the sausage.
  • Continue cooking and tossing until onions are almost translucent.
  • Add peppers, and toss to combine with onions.
  • Turn up heat to medium-high, and continue to toss and cook until peppers are crisp-tender or to your taste.
  • Bury the sausage in the vegetables to reheat if necessary.
  • I usually serve on crusty French rolls or Bolillos, crusty Mexican rolls that have been heated in the oven.
  • Either one is better than your typical hoagie roll.
  • I split the warmed roll, brush on a little marinara sauce, split the sausages lengthwise, and pile on the onions and peppers.
  • If desired, line the roll with a slice of provolone and/or place one on top of the sausage and veggies.

County Fair Italian Sausage Sandwiches image

The only difference between mine and the ones you get at the county fair is that mine are much better -- more TLC! This has become my favorite sandwich over the years and when I serve them at cookouts along with other items (brats, burgers, dogs, etc.) these are ALWAYS the first to go. The recipe is primarily set up as an outdoor cooking technique but they are easy enough to do on the stovetop, except you don't get that great smoke flavor. I prefer to do mine over a campfire of hot coals in an all-steel wok but a charcoal or gas grill and pan will do just as well. If you're using a gas grill, toss a few wet wood chips on the lava rock to make some good smoke. Bon Appétit!

6 Italian sausages
6 buns, bratwurst-type
1 green bell pepper, trimmed and de-seeded, cut into chunks
1 red bell pepper, trimmed and de-seeded, cut into chunks (or yellow)
2 fresh jalapeno peppers, de-seeded and chopped
2 medium sweet onions, peeled and cut into chunks
4 tablespoons olive oil
32 ounces beer, divided (not "lite")

Steps:

  • Parboil the sausages in 24 ounces of the beer for 10 minutes, then drain and discard the beer. Place the sausages aside in tinfoil or in a covered bowl where they'll stay warm.
  • Place a wok or pan over high heat and after it has heated, pour in the olive oil. Before the olive oil smokes, dump in all the peppers and onions. Toss and stir them with some frequency and when you see the first indication of any browning, add in the sausages.
  • When the sausages have browned a bit, pour in the reserved 8 ounces of beer and stir.
  • When the beer has pretty much evaporated, serve the sausages, peppers and onions on pre-warmed (or steamed) buns. The buns are easily steamed at home by placing them in a gallon-sized zip-lock bag, flipping in about a tablespoon of water with your fingers and microwave the nearly-closed bag for about 15-20 seconds on the defrost mode -- don't do them on HIGH or they'll get rubbery!

1 medium red apple
1 tablespoon olive oil
1/3 cup Dijon mustard
1 teaspoon oregano
6 fresh Italian sausages
6 bratwurst sandwich buns

Steps:

  • Slice the onion thinly and separate into rings. Core the apple and slice thinly. Mix mustard and oregano together. Prick sausages in several places with a fork.
  • In a medium bowl toss the onions, apple, and olive oil. Fold a 36x18" sheet of heavy foil in half. Place onion/apple mixture on the foil. Fold edges together and crimp to seal.
  • Heat the grill to medium heat (direct). Place foil packet on grill; close and grill for 10 minutes.
  • Add sausages to the grill rack (leave the foil packet on). Brush with mustard mix. Grill 16-18 minutes, until no longer pink, turning occasionally and brushing with mustard mix.
  • Serve sausages in the buns, topped with the onion/apple mixture.
