POOR MAN'S COOKIES
In the 1930s, producers of a popular radio program called Jake and Lena invited listeners to write in for this recipe. My mother changed the name from Jake and Lena Cookies to Poor Man's Cookies because they contained no eggs, milk or nuts. Despite the name, the cookies are rich in taste!

- In a large bowl, cream shortening and sugars until light and fluffy. Beat in water and vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Fold in oats., Drop dough by tablespoonfuls onto greased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Allow to stand 2 minutes before removing to a wire rack to cool.

POOR MAN'S COOKIES
These poor man's cookies are an old family recipe - spiced bar cookies with plump raisins and chopped walnuts.

- Preheat the oven to 375 degrees F. Grease a 9x13 baking pan.
- Combine water, raisins, and shortening in a medium saucepan. Boil over medium heat, covered, for 20 minutes. Remove from heat, remove the lid, and let cool for 10 minutes.
- While the raisin mixture is boiling, whisk together the flour, sugar, baking soda, baking powder, salt, cinnamon, nutmeg and cloves in a large bowl.
- Pour the slightly cooled raisin mixture over the dry ingredients and stir with a wooden spoon until mostly combined and moistened (the batter at this point will have the consistency of a paste). Add the beaten eggs and again stir with a spoon, until thoroughly combined. Stir in the chopped walnuts.
- Spread the batter into the prepared pan and bake for 25 to 30 minutes, until deeply browned and a toothpick inserted into the center comes out mostly clean with some moist crumbs attached.
- While the cookies are baking, prepare the glaze by whisking together the powdered sugar and warm water in a small bowl. As soon as you take the pan out of the oven, drizzle the glaze over the cookies and quickly spread into an even layer.
- Cool to room temperature before serving. Store leftovers in an airtight container at room temperature for up to 4 days.

- Combine soda and water;stir into oats mixture along with shortening and vanilla.
- Roll into walnut size balls.
- Bake at 350 for about 10 minutes or until golden brown.
- Remove from the oven and allow to stand 2 minutes before removing to a wire rack to cool.
GRANDMA'S POOR MAN'S CAKE
This cake is something my Grandma made during the depression. I always thought it sounded odd, but it is actually pretty good. My Dad said that as kids (he was one of 9) it was one thing that was always a treat.

- 1. In a large sauce pan boil 1 cup water, add first 6 ingredients, boil together until luke warm, stir. Remove from burner
- 2. In large mixing bowl add all dry ingredients, mix together with fork. Sift into the sauce pan. Mix well.
- 3. Grease or spray a 9x9 baking dish. Pour mixture in dish, and spread evenly.
- 4. Bake at 350 for 30-35 minutes. Watch it towards end so it doesn't get too dark. Enjoy! (You might be able to make this gluten free by using a gluten free flour, haven't tried it, but it might work.)
MY GRANDMA'S POOR MANS CASSEROLE
This casserole is amazing and I have never had anyone say different! Once you try it, I'm sure it will become a go to dish for you and your family too! GREAT for kids! (just don't tell them there is mushroom soup!)

Steps:
- Start off with cooking the white rice.
- As the rice is cooking start cooking your beef, I like to season it with pepper and mesquite seasonings, but you can also use garlic salt or any other seasonings you prefer.
- Once the meat and rice is done cooking mix together the meat, rice, and soup.
- Top it with the shredded cheddar cheese.
- Bake in the oven on 375 for about 30 minutes or until the cheddar is bubbly and starting to brown,.
- * Sometimes I like to mix corn into it to give it a little more nutrition/flavor.

GRANDMA'S POOR MAN'S PIE
This is an even simpler recipe that I grew up with (I've looked at the other recipes for Poor Man's Pie and Sugar Cream Pie - the other name for this type pie.) My grandmother's recipe was a 2-2/3-3 formula. It was called Poor Man's Pie because farmers always had the ingredients handy.

- Pre-heat oven to 350º.
- Mix the cream, sugar, and flour.
- Pour into an unbaked 8" pie shell.
- Float several thin pats of butter on top.
- Sprinkle with ground nutmeg.
- Bake at 350º for 30-45 minutes or until top is a nice golden brown.
- Chill, then refrigerate until ready to serve.
