GRANDMA'S OLD FASHIONED FUDGE

This recipe was passed down to me and it's one of the better recipes that I have tried. Long before marshmallow creme came into any recipe, this is a recipe that came out of a 1930's-1940's cookbook.

2 c sugar
1 c milk
1/2 tsp salt
2 squares unsweetened chocolate
2 Tbsp corn syrup, light
2 Tbsp butter, room temperature
1 tsp vanilla extract
1/2 c nuts (pecan are the best~~optional)

Steps:

  • 1. In saucepan combine sugar, milk, salt, chocolate squares and corn syrup.
  • 2. Stir over low heat until sugar dissolves.
  • 3. Cook until temperature reaches 238* or until the water test is proven (1 tsp. of mixture in a bowl of cold water is dropped in and forms a soft ball and when squeezed by fingers are flattened).
  • 4. Remove from heat and drop in butter but do not stir then cool without stirring.
  • 5. Add vanilla then with a wooden spoon beat until candy looses sheen then add nuts if desired.
  • 6. Pour into a 8 x 8 square pan and cool completely and cut into squares.

MY GRANDMA'S PEANUT BUTTER FUDGE

1 cup crunchy peanut butter
1 cup marshmallow cream
2 cups white sugar
⅔ cup milk
1 teaspoon vanilla extract

Steps:

  • Mix together the peanut butter and marshmallow cream in a bowl; set aside. Lightly grease a square glass dish with butter.
  • Stir together the sugar and milk in a saucepan over medium-high heat; stirring occasionally, bring to a boil at 234 degrees F (110 degrees C) and then immediately remove from heat and stir in the peanut butter mixture and the vanilla; pour into the prepared dish and allow to cool to room temperature before serving.

This is a smooth rich chocolate fudge that my Grandmother had in an old cookbook.

4 1/2 c granulated sugar
1 can(s) evaporated milk
1 stick butter
3 c semi-sweet chocolate morsels
1 oz unsweetened baker's chocolate
1 tsp vanilla extract
1 c walnuts or pecans, chopped (optional)

Steps:

  • 1. Combine sugar and milk. Boil slowly (10) minutes. Remove from heat.
  • 2. Add vanilla, unsweetened baker's chocolate and chocolate morsels, stir until completely melted.
  • 3. Add butter. Stir until fudge is no longer glossy.
  • 4. Pour into buttered 9 x 13 pan. Refrigerate until firm. Cut into squares and serve!

How to make fudge the old fashioned way: just minutes of your time plus a few dollars of pantry ingredients gives you a candy shop quality homemade chocolate fudge perfect for gifting (or keeping!)

2 cups granulated sugar
1/4 cup cocoa powder (Hershey's is fine)
1/2 teaspoon salt
2/3 cup half and half
1 tablespoon corn syrup
3 tablespoons butter
2 teaspoons vanilla extract

Steps:

  • Combine all ingredients except butter and vanilla. In a 2 quart saucepan, combine the sugar, half and half, cocoa, salt, and corn syrup. Mix well with a whisk and bring to a boil over medium-low heat. While the fudge is cooking, butter a plate or baking dish for pouring the mixture into later.
  • Heat until the mixture reaches 240 degrees. Let the fudge cook until it reaches 240 degrees, checked with a candy thermometer or instant-read thermometer. Don't stir during the cooking process. Once the temperature is reached, immediately remove the pan from the heat.
  • Place butter and vanilla on top and allow to cool. Place the butter and vanilla on top of the fudge and allow it to cool. Do not mix or disturb the pan. Let it cool about. 20 minutes until the side of the pan is warm but not hot to the touch.
  • Mix with a hand mixer until fudge begins to firm up. Using a hand mixer on medium-low, beat the fudge for 1-3 minutes until it just begins to firm up and lose its shine.
  • Quickly pour into a buttered dish, cool, and cut. Once the fudge changes texture, immediately pour it into a dish to set. Work quickly. It if is not pourable, just scoop it out and flatten in the best you can. Allow it to cool for 20 minutes and cut into one-inch squares.

1 1/2 cups milk
1 teaspoon vanilla

Steps:

  • Lightly grease an 8 or 9-inch square pan.
  • Combine dry ingredients in heavy 4 quart saucepan.
  • Stir in milk.
  • Bring to a "bubbly" boil over medium heat, stirring constantly.
  • Boil, without stirring, to 234 degrees (soft ball stage). Remove from heat. Cool at room temperature to 110 degrees.
  • Beat with wooden spoon until thickens and loses gloss.
  • Quickly spread in prepared pan.

2 teaspoons cocoa
1 teaspoon Karo syrup
1 teaspoon vanilla extract
4 teaspoons butter

Steps:

  • Use 1 tsp butter to coat bottom andd sides of pot.
  • Add sugar, cocoa, kayro syrup and milk. Bring to boil stirring constantly.
  • Cook till temperature reaches 'soft ball' stage.
  • Remove from heat and add remaining butter and vanilla.
  • Cool till workable.
  • Beat by hand till fudge loses the gloss.
  • Pour into container sprayed with non-stick cooking spray.

1 tablespoon plus 1/2 cup butter, divided
3 milk chocolate candy bars (two 7 ounces, one 1.55 ounces), broken into pieces
4 cups semisweet chocolate chips
1 jar (7 ounces) marshmallow creme
1 can (12 ounces) evaporated milk
4-1/2 cups sugar
2 cups chopped walnuts

Steps:

  • Line a 13-in. x 9-in. pan with foil and butter the foil with 1 tablespoon butter; set aside. In a large heat-proof bowl, combine the candy bars, chocolate chips and marshmallow creme; set aside. , In a large heavy saucepan over medium-low heat, combine the milk, sugar and remaining butter. Bring to a boil, stirring constantly. Boil and stir for 4-1/2 minutes. Pour over chocolate mixture; stir until chocolate is melted and mixture is smooth and creamy. Stir in walnuts. Pour into prepared pan. Cover and refrigerate until firm., Using foil, lift fudge out of pan; cut into 1-in. squares. Store in an airtight container in the refrigerator.

This old-fashioned style of peanut butter fudge is not that easy to find out there. The ones I tend to run across always seem to be the soft, creamy version, which is not what I'm into. If it's going to feel like peanut butter in my mouth, then what's the point? No, I want something that feels dense and firm in my fingers but will almost instantly liquefy in when it hits my tongue.

1 pound powdered sugar
1 ¼ cups unsalted butter
1 ½ cups creamy peanut butter
½ teaspoon kosher salt
1 ½ teaspoons vanilla extract

Steps:

  • Sift sugar through a fine-mesh strainer into a large bowl.
  • Heat butter and peanut butter in a saucepan over medium heat. Whisk to combine and cook until bubbles appear on the edges, 3 to 5 minutes. Stir in salt and vanilla extract. Pour over powdered sugar in the bowl. Mix together using a spatula until smooth.
  • Spread mixture into an 8x8-inch baking pan lined with plastic wrap. Wrap fully and refrigerate until firm enough to cut but not too hard, 1 to 3 hours.
