GRANDMA'S CHRISTMAS MEATBALLS

3 pounds ground beef chuck
1 (14 ounce) can evaporated milk
1 (1 ounce) package onion soup mix
¼ cup dry bread crumbs, or as needed
1 tablespoon Worcestershire sauce
2 cups ketchup
1 cup brown sugar
½ cup port wine
1 tablespoon Worcestershire sauce

Steps:

  • Mix ground chuck, evaporated milk, onion soup mix, bread crumbs, and 1 tablespoon Worcestershire sauce together in a bowl. Refrigerate for 1 hour. Form approximately 40 small meatballs and place on a baking sheet.
  • Set the oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Broil meatballs until just browned, 2 to 3 minutes. Turn meatballs over and continue broiling until browned on other side, about 2 minutes more.
  • Transfer meatballs to a slow cooker.
  • Combine ketchup, brown sugar, port wine, and 1 tablespoon Worcestershire sauce in a saucepan over medium heat. Cook and stir until dissolved, about 2 minutes. Pour over the meatballs in the slow cooker. Cook on High until meatballs are no longer pink in the middle and the sauce is thick, at least 1 hour.

1 cup butter, 2 sticks
1 cup packed dark brown sugar
1 (8 oz.) pkg. chopped dates
1 egg beaten
3 cups rice krispies
1 cup sweetened flaked coconut
1/2 cup chopped maraschino cherries, red and green
1 tsp. vanilla
*powdered sugar, for rolling

Steps:

  • 1. In dutch oven, or heavy bottomed pot, melt butter over medium heat. Watch, don't brown. Stir in dark brown sugar and dates. Stir til melted a little. Remove from heat and add egg whisking in *QUICKLY* so you don't scramble the egg. Whisk til mixed well. Return to heat and stir constantly til boiling. Boil and stir one minute. Remove from heat, add rest of ingredients, cool til cool enough to handle. Roll into balls. Roll in powdered sugar. Makes 3-4 dozen depending on size. 1 - 1 1/2" balls. Store airtight. Freezes well.

STIR AND COOK 7 MINUTES
2 large eggs
2/3 c sugar
3 Tbsp butter
1 c dates, chopped
REMOVE FROM HEAT AND ADD FOLLOWING
1 tsp vanilla extract
2 c rice krispies
1 c pecans (chopped)
FORM INTO BALLS AND ROLL IN COCONUT

Steps:

  • 1. Follow directions included in ingredient section.
  • 2. After it is all mixed together, let it cool for 30 minutes to an hour. The mixture forms into a ball much easier. Then roll in coconut.

A holiday tradition. My mother made these date balls every year at Christmas time. They may be stored in a plastic or glass container. If the weather is warm, keep them in the refrigerator. Make sure balls are cooled thoroughly before storing.

½ cup margarine
3 cups crispy rice cereal
1 cup chopped pecans
1 teaspoon vanilla extract
½ cup confectioners' sugar, or as needed

Steps:

  • Cook and stir dates, sugar, and margarine in a large saucepan over low heat until sugar dissolves; remove from heat. Fold crispy rice cereal, pecans, and vanilla extract into the date mixture until evenly mixed.
  • Grease your hands with margarine. Roll date mixture into 1-inch balls.
  • Spread confectioners' sugar into a shallow dish; roll date balls in confectioners' sugar to coat.

1 cup coconut

  • In heavy-bottomed,lg.
  • saucepan or pot,melt butter.
  • Stir in brown sugar and dates.
  • Cook til sugar is melted.
  • Remove from heat and QUICKLY stir in egg well.
  • Return to med.
  • heat, stirring constantly, til boiling.
  • Boil and stir 1 minute.
  • Remove from heat, stir in rest of ingredients, and let cool off til easily handled.
  • Roll into balls, about 1" or so, roll in powdered sugar to coat.
  • Store airtight.

There are a few classic recipes I absolutely have to pull out every Christmas, and this is one of those. These chewy balls are surprisingly crunchy and they look so pretty on a holiday candy tray.

1/2 cup butter
1 cup chopped dates
3/4 cup sugar
2 eggs, beaten
1 cup chopped pecans
1 cup crisp rice cereal
1 teaspoon vanilla extract
2 cups sweetened shredded coconut

Steps:

  • In a saucepan, melt butter over low heat. Stir in the dates, sugar and eggs. Cook and stir over low heat for 10-15 minutes or until thermometer reads 160°. Remove from the heat; stir in the pecans, cereal and vanilla. When cool enough to handle, shape into 1-in. balls; roll in coconut. Place on waxed paper-lined baking sheets. Refrigerate for 1-2 hours or until firm. Store in an airtight container in the refrigerator.
