Great-Grandma's Lemon Cake image

"Baking and giving" is a hobby of mine, and I love to bake my gifts by using old-fashioned recipes like this one, which was my great-grandmother's. There aren't too many shortcuts in these directions, but I enjoy aspect of "measuring and mixing"! This is one of my favorites, copied down from my mother's old cookbook.

Number Of Ingredients 9

5 large eggs, separated
1 cup butter, softened
3 cups sugar
1 tablespoon finely shredded lemon zest
3 tablespoons lemon juice
4 cups all-purpose flour
1/2 teaspoon baking soda
1 cup milk
Confectioners' sugar

Steps:

  • Let eggs stand at room temperature for 30 minutes. In a large bowl, cream butter and sugar. In a small bowl, beat egg yolks until thick and lemon-colored. Add to creamed mixture and beat well. Stir in lemon zest and juice. Combine flour and baking soda; add alternately with milk. In another bowl, beat egg whites on high speed until stiff peaks form; fold into batter., Pour into two well-greased 9x5-in. loaf pans. Bake at 325° for 65-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. Dust tops with confectioners' sugar.

LEMON CAKE FILLING

A luscious, brightly flavored, old fashioned cake filling from the US Regional Cookbook, Chicago Culinary Arts Institute, 1947. This makes enough filling for three 9 inch cake layers. Cooling time not included in preparation time.

Number Of Ingredients 7

1 cup sugar
4 tablespoons cornstarch
1 egg, beaten
1 cup water
1/2 cup lemon juice (fresh is best)
1 teaspoon lemon rind, grated (from the fresh lemon)
1 tablespoon butter (no substitutions)

Steps:

  • Mix sugar and cornstarch together thoroughly.
  • Combine the beaten egg, water, lemon juice and rind; add to dry ingredients.
  • Cook in a double boiler about 15 minutes, stirring constantly.
  • Add butter, beat well and cool before using.

This is a filling for a three layer cake. In grandmas time she had to use what was at hand, so fruit came off the farm, it was cooked and canned, and used as needed.

2 cup(s) apricots peeled and seeded cut into halfs
1-2 cup(s) water
2/3 cup(s) sugar
1 tablespoon(s) lemon juice
1/2 teaspoon(s) greded lemon rind

Steps:

  • Peel and seed the apricots and cook in just enough water to cover until tender and practically dry. Beat apricots until smooth.
  • Add sugar, lemon juice and grated lemon rind and cook until sugar has entirely dissolved. Let cool this will make enough filling for a 3-layer cake.

Another on of grandma's recipes. This recipe is more than 60 years old and has been tryed and true.

2 cup(s) sugar
2 tablespoon(s) corn syrup, light
3 ounce(s) chocolate ( squares )
1/2 cup(s) milk
2 tablespoon(s) butter

Steps:

  • Cook sugar, and corn syrup and chocolate squares and milk on low to midume heat (232 degrees ) or until a small amount of syrup forms a very soft ball when dropped into cold water.
  • Remove from heat, add vanilla and butter. Cool to lukewarm without stirring.
  • Beat until creamy and thick enough to spread. This will cover two ( 8" ) layers top and sides.

LEMON FILLING

3 large egg yolk

Steps:

  • Cream butter,shortening and sugar well. Add one egg at a time, beating well. Sift flour,baking powder and salt. Add flour and milk alternately to the sugar mixture, Add flavoring,pour into greased large oblong pan.
  • Preheat oven 350 Bake 1 hour are until done. Cool cake in pan, cut into squares,layer in a large bowl, pour lemon filling on each layer. Cake may be done before 1 hour.
  • Directions for Lemon Filling: In a large sauce pan or double boiler , combine sugar, flour, salt, mix well. Beat egg yolks, milk, water together, then whisk into sugar mixture. Cook over medium heat stirring constantly, until mixture thickens. Remove from heat and stir in grated lemon rind, lemon juice and butter, cool then pour over cake. Sometime i don't use the grated lemon rinds.

This is a a breakfast treat, it takes a little time, but worth the wate. You could always make it your own by changing the honey topping to cinnamon , raisins, sugar topping. In my Grandma's time honey twist was a unexpected treat.

1 c milk scaled
1/4 c shortening
1/2 c sugar
1 tsp salt
2 cakes of yeast
1/4 c lukewarm water
2 eggs beaten
5-6 c sifted flour
HONEY TOPPING
1/4 c butter
2/3 c confectioners sugar
1 egg white
2 Tbsp warm honey

Steps:

  • 1. Crumble yeast in a bowl with lukewarm water to soften.
  • 2. Pour scalded milk over shortening, sugar,and salt. Cool milk mixture to luckwarm , add yeast and eggs. Beat in flour to make a soft dough.
  • 3. Turn out onto a floured board and knead until smooth. Place in a large greased bowl cover, and let stand to rise until double in size.
  • 4. When light shape into a long roll about 1 " in diameter. Coil the roll into a greased cake pan begining at the outside edge and working into the center to cover the pan.
  • 5. Brush with honey topping and let stand to rise until doubled in size. Bake at 375 degrees for 25-30 minutes. It makes one large twist

GRANDMA DELLEPLAIN BUTTER FROSTING

This is one of my Grandmothers recipes that can be changed to a lemon, or pineapple, or orange frosting by just a few simple changes.

1/2 cup(s) butter at room temp.
3 cup(s) confectioners' sugar
4 tablespoon(s) cream or evaropated milk
1 teaspoon(s) vanilla extract

Steps:

  • Soften butter to room temp, and cream in remaining ingredients and continue creaming until mixture is well blended and fluffey.
  • This will cover the top and sides of two ( 8" ) layer cakes.
  • For LEMON FROSTING : add 1/2 teaspoon graded lemon rind and use lemon juice instead of vanilla.
  • For PINEALLLE FROSTING : use 1/3 cup crushed pineapple with juice instead of cream.
  • For ORANGR FROSTING : add 1 tablespoon grated orange rind and use orange juice instead of cream.
