JELLY ROLL
A 1944 vegetable shortening advertisement claimed that their product produced lighter cakes without even creaming the shortening to soften it. To prove it, they offered this Jelly Roll recipe that beats the shortening with the dry ingredients and half of the eggs using an electric mixer.

- Preheat oven to 375 degrees F. Grease a jelly roll pan; line with parchment or waxed paper and grease paper.
- Stir together the flour, sugar, baking powder, and salt in a large bowl. Add the butter, 2 eggs, and the vanilla to the dry ingredients and beat with an electric mixer on high speed until fluffy. Separate the remaining 2 eggs. Place the whites in a small bowl and beat the yolks into the batter.
- With clean beaters, beat the egg whites at high speed until they are stiff; fold beaten whites into the batter just until no white streaks remain.
- Spread batter into the prepared pan and bake until the center springs back when lightly pressed, about 15 minutes.
- Sift confectioners' sugar over a linen towel that has been spread out on a work surface; invert cake onto towel. Quickly, remove parchment, trim off crisp cake edges, spread cake with jam, and roll up using towel as an aid. Tightly roll cake in towel and set aside, open side down, until completely cool, about 30 minutes. Transfer to serving plate and slice crosswise.

- Add sugar and water mix well
- Add flour, salt, baking powder and extract mix well.
- Beat egg whites until stiff enough to stand in peaks.
- Then fold into the rest.
- Preheat oven to 375°F
- Grease large baking sheet/jellyroll sheet.
- Bake until sponge is golden and springs to the touch.
- Turn out on cloth dusted with Confectioners sugar.
- Using the cloth as an aid, roll up the cake. Let cool. Unroll and Spread with jelly and reroll and trim the ends.
- Place on platter.

- Preheat oven to 350*.
- Grease 15 1/2" X 10 1/2" X 1" pan.
- Line bottom with wax paper.
- in small bowl, combine flour, cocoa, baking powder and salt.
- Set aside.
- In large bowl, beat eggs, sugar, vanilla until thick& pale yellow.
- Beat in flour& oil mix.
- Spread in prepared pan.
- Bake 10-12 min til brown.
- Sprinkle towel with conf.

- Immediately invert cake onto towel.
- Gently peel off wax paper.
- Roll warm cake with towel inside.
- Place seam side down on wire rack.

SWISS JELLY ROLL
This swiss jelly roll is what I use for the basis of my trifle. My grandmother always used jelly rolls instead of lady fingers, and now I do the same; the difference is I make this from scratch. I have tried a number of different recipes, amd eventually settled on my own fusion of several recipes and techniques.

- Set oven to 340 fan/375 and line the bottom of a 9x13 inch jelly roll pan with parchment paper.
- Whip egg whites with two tbsp of sugar and cream of tartar until medium peaks form.
- Whip egg yolks with remaining sugar and seeds from vanilla bean until yolks have doubled in volume.
- Sift half of dry ingredients into yolk mixture and whisk to combine.
- Add half of egg whites and whisk only until combined.
- Sift remaining dry ingredients into mixture and whisk to combine.
- Add remaining egg whites and fold in gently with a scraper until the egg whites are combined.
- Pour into pan and spread evenly, smoothing the top as much as possible to ensure even baking.
- Bake for 10-12 minutes, or until sponge bounces back when pressed in the middle.
- Remove from oven and use an offset knife to loosen the roll from the edges of the pan.
- Dust with icing sugar amd turn out onto a clean tea towel. Remove the parchment paper and dust with icing sugar.
- While still warm from the oven, roll the sponge and allow to cool before unrolling. This will allow the sponge to reroll later without cracking.
- Unroll, add your favourite jam and/or cream filling and reroll. Cut the ends square and dust with icing sugar.

GRANDMA KATE'S JELLY ROLL SPONGE CAKE
this is an easy one-bowl sponge cake without butter! My mother and my Grandma Kate's favorite was raspberry jam in this roll, but it's also good with grape or strawberry. I like homemade blackberry, with the seeds strained out. Just use your favorite. My family always used the cake as the base for fresh strawberry or peach shortcake - it would soak up the fruit juices but not fall apart like pound cake.

- Preheat oven to 375 degrees F.
- PREPARE PAN: Carefully grease the bottom only of a pan, either jelly roll 11" X 17" X 1", or if using for shortcake, bake in a 9" X 13". Line bottom only with parchment if desired; set aside.
- PREPARE TOWEL: Place a clean linen kitchen towel flat on counter. Sift powdered sugar over the towel to cover it completely.
- PREPARE JELLY: Place ¾ to 1 cup jelly or jam of your choice into a bowl. Stir vigorously to break up jelly and make it easy to spread.
- PREPARE BATTER: Beat eggs well. Add sugar, vanilla and salt, and beat for at least 5 minutes. The sugar and egg mixture should be pale yellow and increased in volume, and leave a ribbon when the beater is raised.
- Sift flour, salt and baking powder together in a small bowl. Gradually fold the flour into the egg mixture, trying to keep as much volume as possible.
- Turn batter into prepared pan, spread gently to even thickness.
- Bake for 10 to 15 minutes, until light golden brown around the edges, and the center springs back when touched lightly with a finger.
- Remove from oven. For jelly roll, allow to cool for 1 to 2 minutes, while loosening the edges with a butter knife. When edges are loose, turn the cake out onto the sugared towel. Remove parchment immediately.
- Roll up along the long edge, rolling the towel up inside the cake roll. Let set for a few minutes, unroll while still warm, then right away spread inner surface with jam, reroll, and wrap roll in sugared towel to hold in place until cool.
- Place on serving plate or board with seam side down. Top with additional powdered sugar. Slice into 1" slices.

This recipe is so easy my mother would let me make it when I was only 10. I love raspberry and apricot jam, so those two would be used most often. Sometimes I would use lemon curd just to mix things up a bit.

- Beat eggs until thick. Gradually beat in remaining ingredients.
- Pour into jelly roll pan and bake at 350 degrees for 12 - 15 minutes.
- While jelly roll is baking, lay out a clean linen dish towel and sift about 1/2 cup of confectiones sugar onto it.
- Do not let jelly roll cool after taking out of the oven. Immediately turn out onto the prepared dish towel. Spread with favorite jam or jelly and use towel to help roll into a log shape. Trim ends. The powdered sugar will have stuck to jelly roll. Let cool and serve.

GRANDMA'S OLD-FASHIONED YEAST ROLLS
This recipe is one of our family traditions. We don't know how old it is, but it is at least Depression Era (no milk, no eggs). It was handed down from my Grandma Pearl Nash. She never wrote down the recipe, always measured by memory and her hands. She developed breast cancer in the early 60's and shortly before she died. My Daddy asked her to measure out all the ingredients so the recipe would not be lost. He carried her into the kitchen, where she carefully placed the ingredients on newsprint paper. My mama (who my kids called Tutu) shifted the ingredients into measuring cups and spoons to record the amounts.

- Dissolve yeast in warm water in the bowl of a stand mixer fitted with the dough hook. Stir in sugar and salt until you see foam rising. Add 3 cups flour and 3/4 cup shortening; mix with the dough hook until the mixture is the consistency of a thick pancake batter.
- Fill a pot with hot (not boiling) water.
- Remove the mixer bowl and cover it with plastic wrap and a towel. Place the bowl over the pot of hot water, making sure the bottom does not touch the water. Let rise until doubled in size, 45 minutes to 1 hour.
- Place the bowl back on your stand mixer and gradually mix in remaining 4 cups flour until dough is smooth and elastic; you may need to add up to 1 additional cup.
- Heavily grease two 9x13-inch pans with shortening.
- Divide dough into 24 balls. Place 12 balls into each of the prepared pans; cover with plastic wrap and a towel. Let rise in a warm area until doubled in size, about 1 hour; balls will start out at about 1 1/2 inches in diameter but will rise and touch the sides of the pans.
- Preheat the oven to 375 degrees F (190 degrees C).
- Bake rolls in the preheated oven until golden brown on top, 25 to 30 minutes. Remove from the oven and brush melted butter over top.

A friend gave this recipe to my a long time ago and I have really enjoyed making it. You can always make it in advance and store in the freezer without filling. When you want to serve it, take it out and fill with your favorite filling, like ice cream.

- Prepare a large cookie sheet with lining it with wax paper.
- Mix together sugar, whole eggs and water.
- Beat in remaining ingredients.
- Pour into prepared cookie sheet and bake at 375 degF for 12-15 minutes.
- Remove from oven and turn out onto a clean, moist teatowel springled with icing sugar.
- Quickly remove the wax paper and trim off crisp edges.
- While still warm, roll cake into tea towel into a roll, rolling the towel with the cake.
