Graham-Flour and Jam Pastry Squares image

Kids and adults alike will love these better-for-you toaster pastries made with whole-wheat graham flour.

Number Of Ingredients 10

1 1/4 cups all-purpose flour, plus more for dusting
1 1/4 cups whole-wheat graham flour, such as Bob's Red Mill
1 1/2 teaspoons coarse salt
1 stick cold unsalted butter, cut into cubes
4 ounces cold cream cheese, cut into cubes
1/2 cup plus 1 tablespoon ice water
1 cup raspberry jam
1 large egg, lightly beaten
1/2 cup confectioners' sugar
1 to 2 tablespoons whole milk

Steps:

  • Pulse flours and salt in a food processor to combine. Add butter and cream cheese and pulse until small pieces remain. Add ice water and pulse until dough just starts to clump together.
  • Turn out dough (it will be crumbly) onto a clean work surface and divide in half. Wrap each in a piece of plastic wrap and press to form a flat rectangle. Refrigerate dough until firm, at least 20 minutes and up to 1 day.
  • Preheat oven to 375 degrees. Roll out each rectangle on a lightly floured piece of parchment to a 10-by-14 1/2-inch rectangle. Transfer one rectangle (with parchment) to a baking sheet. Spread jam on top, leaving a 1-inch border all around. Roll up remaining rectangle on rolling pin, then unroll on top of first rectangle. Press edges together, then use a crimped pastry wheel to trim all around. Brush beaten egg over top, then use a paring knife to cut a few vents in top crust. Refrigerate 30 minutes.
  • Bake until golden and jam is bubbling up through vents, about 35 minutes. Let cool completely on baking sheet on a wire rack. Pastry can be stored, covered in plastic, up to 1 day before glazing and cutting.
  • Whisk together confectioners' sugar and 1 tablespoon milk in a small bowl; if mixture is too thick to pour, add more milk, a drop at a time. Drizzle icing over top of pastry, then let set at least 10 minutes before cutting into 12 squares, 3 across short side, 4 down long side.

Besan Burfi (Sweet Gram Flour Squares) image

Besan, also known as gram flour, is flour made from "channa" or yellow dried chickpeas. It is readily available in Indian and Asian markets.

2 cups grated coconut or 2 cups desiccated coconut
1 cup gram flour ((besan))
3 cups sugar
3 tablespoons ghee or 3 tablespoons clarified butter
2 teaspoons cashews, crushed
1 cup water
1/3 teaspoon cardamom powder
1 pinch saffron

Steps:

  • Grease a shallow dish/pan with some ghee.
  • In a frying pan, heat 1 tablespoon of ghee and fry cashewnuts until golden; remove.
  • To the same ghee, gradually add the besan, stirring gently.
  • Fry on low heat until golden brown; remove and set aside.
  • Now in the same frying pan, heat 1 cup water and add sugar.
  • Boil on low heat until the sugar dissolves.
  • Increase flame and boil briskly until a thick syrup is obtained.
  • Add the dessicated coconut and fried besan.
  • Stir until the mixture solidifies and starts to leave the sides of the pan.
  • Add the rest of the ghee and saffron; mix well and allow to cook for a couple of minutes.
  • Remove from flame, add the nuts, cardamom powder and mix well.
  • Pour into the greased dish, and while still warm, cut into 1.5 inch squares.
  • Cool completely and store in an airtight tin.

I'm going to make this for my family because they should celebrate their visas and not be depressed like me. They have reason to celebrate and have been wanting to eat this sweet since sometime, so I will just cook this one up for 'em. We watched Chef Rakesh Sethi make this on Mirch Masala, a very popular cooking(recipe) serial on Star Plus, yesterday at 11:30am. The number of servings is a guesstimate.

Number Of Ingredients 7

400 g desi ghee, softened
500 g gram flour
1/2 cup flour
400 g sugar
300 ml water
1 -2 drop yellow food coloring
2 tablespoons pistachios, chopped (for garnish) or 2 leaves edible silver foil (for garnish)

Steps:

  • Heat a pan on medium flame.
  • When hot, spoon ghee into it.
  • Allow to melt.
  • Add gramflour and flour.
  • Cook till the rawness of the gramflour is gone.
  • This will take about 20 minutes.
  • You will know when it's done when you see bubbles on the sides of the pan.
  • When this happens, remove the pan from heat and keep aside.
  • Now, put sugar in another pan.
  • Add water and yellow food colour.
  • Cook on low-medium flame till the sugar melts.
  • Add the gramflour-desi ghee mixture and mix well.
  • Now grease a tray with desi ghee.
  • Transfer the above prepared mixture into it.
  • Garnish with chopped pistachios or edible silver foil.
  • Do not use both together.
  • Allow to cool completely.
  • Refrigerate to allow it to set.
  • Once set, cut into squares or triangles or blocks and serve as a dessert after your meal.
