CHINESE CHICKEN SALAD

Fresh, crunchy and so good! I made this up when my favorite Chinese dressing mix was discontinued. My husband loves this! We usually eat it just between the two of us while the kids eat a cheese pizza. But the kids usually end up eating some too.

1/2 head iceberg lettuce, chopped
2 boneless skinless chicken breasts, boiled and cut into bite size pieces
1 carrot, shredded
1/2 cucumber, peeled cut into quarters and thinly sliced
1 bunch fresh cilantro, chopped
3 green onions, sliced
1/4 cup peanuts, coarsely crushed (I do this in a ziplock bag and use my rolling pin) or 1/2 cup chow mein noodles (or a combo)
1/3 cup peanut oil
2 tablespoons toasted sesame oil
1/3 cup cider vinegar
2 tablespoons soy sauce
1/4 cup sugar
2 garlic cloves, minced
1 teaspoon fresh ginger, grated

Steps:

  • Prepare dressing by adding all ingredients to shaker, shake well and let sit a minimum to 1 hour.
  • Boil chicken until no longer pink, about 10-15 minute let cool then cut into bite size pieces.
  • While cooking chicken, chop lettuce, shred carrot, peel and slice cucumber, chop cilantro, slice onions, and crush peanuts.
  • Put everything in a salad bowl and toss very well with dressing (you may not use it all).
  • This is good with soft rolls or sesame crackers.

A quick and easy chicken salad with the most awesome rice vinegar dressing! Great use for leftover chicken. I got this recipe from a lovely co-worker, Grace (she says she always doubles the onion amount). Best served within one hour of mixing. Enjoy!

2 tablespoons salad oil
1 (3 ounce) package ramen noodles (do not use seasonings)
1/2 cup sliced almonds
2 tablespoons sesame seeds
2 cups shredded cooked chicken breasts
4 cups finely shredded cabbage (1 small head- or buy a package of cole slaw salad mix- it has 5 or 6 cups already shredded)
1/2 cup chopped green onion
salt, to taste
1/3 cup salad oil
1/3 cup rice vinegar (or distilled white vinegar)
3 teaspoons sugar
1/2 teaspoon pepper

Steps:

  • Heat oil in a wide frying pan over medium-high heat. Crumble noodles (do not use seasonings); add crumbled noodles with almonds and sesame seeds to hot oil. Cook, stirring until browned (3 to 4 minutes).
  • Lift out mixture from frying pan; drain.
  • In a salad bowl, combine noodle mixture, chicken, cabbage and onions. Season with salt to taste.
  • Mix together ingredients for Rice Vinegar Dressing and pour over salad; toss lightly until well coated.
  • Serve within 1 hour of mixing.

2/3 cup seasoned rice vinegar
2 1/2 cups water
1/2 cup sugar
1/4 cup plum sauce
1/8 cup soy sauce
1 tablespoon fresh ginger, grated
1 garlic clove, peeled, but left whole
1/4 tablespoon sesame oil

Steps:

  • Heat vinegar in a non-reactive pan over medium heat.
  • Add water and sugar, and bring to a boil.
  • When sugar is dissolved, remove from heat.
  • Add plum sauce, soy sauce, ginger, garlic, and sesame oil.
  • Refrigerate overnight.

This is a lower-fat clone of "Trader Joe's" sesame dressing that I devised for my sister. It is still as tasty as the original and is much better (less worse) for you.

1/2 cup peanuts or 1/2 cup canola oil
3 tablespoons toasted oriental sesame oil
1/2 teaspoon gum tragacanth or 1 teaspoon dry pectin
1 cup rice vinegar
1/4 cup sugar
2 tablespoons Kikkoman soy sauce
1/2 teaspoon salt
2 teaspoons dry mustard
2 -3 tablespoons toasted sesame seeds

Steps:

  • **Note:Gum tragacanth is an emulsifier and will keep the dressing from separating too much.
  • It is not absolutely necessary for the recipe, but it makes everything stick together much better.
  • If you can't find it, substitute 1 Tsp pectin powder, but at the pectin to the vinegar, not the oil.
  • Combine oils and gum tragacanth in blender on high speed.
  • Return oil mixture to measuring cup.
  • Add all remaining ingredients, except sesame seeds, to blender, and mix on high until well combined.
  • With blender running, add oil in a slow stream until dressing is emulsified.
  • Add sesame seeds, and pulse a couple of time to mix.
  • Pour dressing into a covered jar, and refrigerate at least one hour, until ready to use.
  • Makes about 12 3-Tbsp servings.
  • Serving Suggestion: Good on any salad, but especially good on mixed greens, topped with diced poached chicken, chow mein noodles, and toasted slivered almonds.

2 cups sugar
1 1/2 cups rice wine vinegar
2 teaspoons peeled grated fresh ginger (freeze it, peel with potato peeler)
2 tablespoons sesame oil
1 tablespoon fresh lemon juice
1 1/2 teaspoons salt
4 teaspoons coleman dry mustard
2 tablespoons soy sauce
1 clove garlic, minced (double if you like garlic)
4 tablespoons vegetable oil or 4 tablespoons canola oil
2 teaspoons cracked black pepper
2 heads romaine lettuce
1/4 cup toasted slivered almonds
1/4 cup diced celery
1/4 cup cooking oil
1 1/2 cups shredded cooked chicken breasts
2 tablespoons sesame seeds

Steps:

  • Sift sugar& mustard together.
  • Slowly add vinegar until smooth (whisk).
  • Place mixture on top of double boiler (or use diffuser under a regular pot instead).
  • Cook& stir on low until sugar is melted.
  • Stir in soy sauce, ginger, garlic and blend well.
  • Stir in oils.
  • Add lemon juice, salt& pepper.
  • Remove from stove, cool and refrigerate at least 4 hours.
  • Combine salad ingredients and drizzle dressing over top.

4 -5 chicken breasts, cooked, boned and sliced thin
6 cups iceberg lettuce, thinly shredded
3 green onions, thinly sliced
2 celery ribs, thinly sliced
1 (8 ounce) can water chestnuts, drained and sliced
2 cups bean sprouts
1/2 cup cilantro, coarsely chopped
salad dressing (Dom's chicken salad dressing, or dressing of your choice)
2 -3 cups bean thread noodles, deep-fried and drained, see note
1/4 cup sesame seeds
1/2 cup cashews

Steps:

  • In a salad bowl, combine chicken, lettuce, onion, celery, water chestnuts, bean sprouts and cilantro.
  • Drizzle dressing over mixture and toss lightly.
  • Add bean thread noodles and toss very lightly.
  • Top with sesame seeds and cashews.
  • NOTE: To deep-fry bean thread noodles, pour about 2" of vegetable oil in a skillet and heat on medium-high heat. To test temperature, drop in a single noodle. If it puffs up, oil is ready. Cook in small batches. As they puff, push them down and turn them to be sure they are all cooked. When they stop crackling (about 30 seconds), remove with a strainer and drain on paper towels.
