Steps:
- Thirty minutes to an hour before serving, combine the strawberries, balsamic vinegar, sugar, and pepper in a bowl. Set aside at room temperature.
- Place a serving of the strawberries in a bowl with a scoop of ice cream on top and dust lightly with lemon zest.
BALSAMIC MARINATED STRAWBERRIES WITH PEPPER OVER CHOCOLATE AND CARAMEL ICE CREAM
Steps:
- Place strawberries, vinegar, pepper and sugar in a bowl. Stir mixture with back of fork then let stand for 1 hour. Shave the 2 ounces of milk chocolate bar with a vegetable peeler into a small bowl. To plate, place ice cream in the middle of a plate, then top with strawberries, mint, and chocolate.
BALSAMIC STRAWBERRIES WITH RICOTTA CREAM
Steps:
- Put the ricotta cheese, honey and vanilla extract into the small bowl of a food processor and process until smooth, about 1 minute. Transfer to a small bowl and refrigerate for at least 2 hours.
- In a small saucepan combine the vinegar and sugar and bring to a boil. Simmer over medium heat for 2 minutes, stirring occasionally. Allow to cool completely.
- In a medium bowl, toss the berries with the basil and the balsamic syrup.
- Divide the cream among 4 cocktail glasses, top with the berry mixture and serve.

- Toss strawberries and other berries, if using, with the 1/4 cup sugar, and let sit for 10 minutes or longer. Do not refrigerate.
- Sprinkle with the vinegar; toss gently, then taste and add more sugar or vinegar if necessary. Sprinkle with the pepper, toss again, and serve, garnished with the mint, if you like. Spoon into a glass or bowl, and serve next to cookies or a piece of cake.

PANNA COTTA WITH BALSAMIC STRAWBERRIES
Steps:
- In a small bowl, sprinkle the gelatin on 1 1/2 tablespoons of cold water. Stir and set aside for 10 minutes to allow the gelatin to dissolve.
- Meanwhile, in a medium bowl, whisk together 3/4 cup of the cream, the yogurt, vanilla extract, and vanilla bean seeds. Heat the remaining 3/4 cup of cream and the 1/3 cup of sugar in a small saucepan and bring to a simmer over medium heat. Off the heat, add the softened gelatin to the hot cream and stir to dissolve. Pour the hot cream-gelatin mixture into the cold cream-yogurt mixture and stir to combine. Pour into 4 (6 to 8-ounce) ramekins or custard cups and refrigerate uncovered until cold. When the panna cottas are thoroughly chilled, cover with plastic wrap and refrigerate overnight.
- Combine the strawberries, balsamic vinegar, 1 tablespoon sugar, and pepper 30 minutes to 1 hour before serving. Set aside at room temperature.
- To serve, run a small knife around each dessert in the ramkein and dip the bottom of each ramekin quickly in a bowl of hot tap water. Invert each ramekin onto a dessert plate and surround the panna cotta with strawberries. Dust lightly with freshly grated lemon zest and serve.
BALSAMIC STRAWBERRIES

- Mix all in a dish and marinate at room temperature for 20 minutes or refrigerate overnight.
- Alternative Notes: Make a glaze: In a small saucepan, mix 2.5 Tb caster sugar (no substitutes ie. not splenda), vanilla, pepper and balsamic vinegar with 2 tablespoons of water and cook over a low - medium heat, stirring continuously, until all of the sugar has dissolved and the mixture has reduced by half to a sticky syrup. (This takes about 5 minutes). Allow to cool. Pour over strawberries and marinate for 1 hour.
- Serving Suggestions: Serve as is, or on hot pancakes or crepes with vanilla ice cream, or in a tall martini glass with vanilla creme fraiche or vanilla yoghurt garnished with freshly milled cracked black pepper and pistatios or lightly toasted almond flakes and a basil or mint leaf, or topped on a bowl of vanilla ice cream, or on a chocolate fudge (300ml cream with 300g dark chocolate melted and combined then divided into 4 serving cups and refigerated for an hour til firm) with a dollop of cream.
