FRUIT CRUNCH SUNDAE

1 cup quick-cooking (not instant) rolled oats
1/2 cup sweetened, shredded coconut
1/2 cup sliced or slivered almonds
3 tablespoons vegetable oil
2 tablespoons good honey
8 to 10 strawberries, small-diced
1/2 cup blueberries
1/4 pineapple, small-diced
2 cups plain yogurt

Steps:

  • Preheat the oven to 350 degrees F.
  • Toss the oats, coconut, almonds, oil, and honey together in a large bowl until they are completely combined. Pour onto a sheet pan and bake, stirring occasionally with a spatula, until the mixture turns a nice, even golden brown, about 20 minutes.
  • Remove the granola from the oven and allow to cool, stirring once.
  • Combine the strawberries, blueberries, and pineapple in a bowl. In 4 ice cream sundae glasses, layer first the fruit, then the yogurt, and the cooled granola alternately until you fill the glasses. Serve with a long spoon.

COOKIES FOR SANTA SUNDAE

Two 1/2-cup scoops mint chocolate chip ice cream
Two 1/2-cup scoops cookies and cream ice cream
Two 1/2-cup scoops chocolate chip cookie dough ice cream
2 tablespoons hot caramel sauce
2 tablespoons hot fudge sauce
1 waffle cone, preferably a red velvet cake cone if you can find one
Marshmallow cream, for topping
1 marshmallow
1 chocolate chip cookie
1 teaspoon edible red glitter

Steps:

  • Place the mint chocolate chip, cookies and cream and chocolate chip cookie dough ice cream in a serving dish, then drizzle over the caramel and fudge sauces. Place the waffle cone upside down on the ice cream. Put the marshmallow cream in a piping bag (or spoon it straight from the jar) and pipe or spoon small blobs of cream around the bottom of the cone to mimic the fur trim on a Santa hat. Stick the marshmallow on the tip of the cone. Break the cookie into 2 or 3 pieces and place around the edges of the sundae. Sprinkle over the red glitter.

1 quart vanilla ice cream
1 quart strawberry ice cream
Pineapple upside-down sauce, recipe follows
Strawberry sauce, recipe follows

Butterscotch sauce, recipe follows
Rich chocolate syrup, recipe follows
Chocolate-dipped frozen banana bonbons, recipe follows
1 pineapple
1 cup pineapple juice
2 tablespoons dark rum
2 teaspoons cornstarch
4 tablespoons (1/2 stick) unsalted butter
1 cup light brown sugar
2 pints strawberries, washed and trimmed
1/2 cup sugar
2 tablespoons Grand Marnier
1/2 cup heavy cream
2 teaspoons cocoa powder
2 teaspoons confectioners' sugar
1/4 cup water
1 cup sugar
1/4 cup (1/2 stick) unsweetened butter
1 cup heavy cream
1 tablespoon dark rum (recommended: Jamaican)
1/2 cup sweetened condensed milk
8 ounces semisweet chocolate
1/2 cup strong brewed coffee
1 cup light corn syrup
8 ounces semisweet chocolate
6 bananas, peeled and cut into 1-inch chunks
Long toothpicks
1 cup chopped peanuts or toasted coconut

Steps:

  • After you are finished making the various sundae components, scoop ice cream into a very large oval dish or platter. Place a scoop of the pineapple and strawberry sauces on top of the ice cream with a dollop of the cocoa whipped cream. Drizzle on the butterscotch and chocolate syrups then stick 2 banana bonbons into the bowl.
  • Trim the pineapple and slice into long quarters. Cut the flesh from the skin and slice each quarter in 3, lengthwise. Chop into little pieces, taking care to catch the juice. Combine the pineapple juice and rum and whisk in the cornstarch, creating a slurry. In a saucepan, melt the butter and brown sugar to bubbling. Add the pineapple and bring to a boil. Add the slurry and cook until bubbling and the cornstarch cannot be tasted.
  • Slice the strawberries, and macerate half of them in the sugar and Grand Marnier until juicy. Before serving, stir in the remaining strawberries.
  • Using whisk or electric beater, beat cream until almost thickened. Add cocoa powder and confectioners' sugar and continue beating until the ingredients are blended in and the whipped cream is firm.
  • Combine the water, sugar, and butter in a large saucepan and cook over high heat until light amber, about 5 minutes. Stand back as far as possible and slowly drizzle the cream into the pan. It will bubble up and may splatter, so protect your hands with an oven mitt or towel. Add the rum and cook for 4 to 5 minutes, occasionally swirling the sauce around the pan, until thickened and a rich golden brown. Strain the sauce and stir in the sweetened condensed milk. Store in a sealed container. This sauce will keep for 2 weeks in the refrigerator or 3 months in the freezer.
  • Finely chop the chocolate and put in a medium bowl. In a small saucepan, heat the coffee and corn syrup to a simmer. Pour the mixture over the chocolate and gently stir with a whisk until smooth and blended. Store in a sealed container. This syrup will keep for 4 weeks in the refrigerator or 6 months in the freezer.
  • Melt chocolate in a completely dry bowl or in the top of a double boiler set over barely simmering water. Pierce each of the banana chunks with 2 toothpicks. Dunk first into the chocolate to coat, then into the peanuts or coconut. Set on waxed paper-lined cookie sheet and freeze for 2 hours or overnight. For maximum flavor, let sit at room temperature for 10 minutes before serving.

PECAN PIE SUNDAE

3 pecan shortbread cookies, such as Sandies, crushed
1 1/2 cups butter pecan ice cream
Bourbon Whipped Cream, recipe follows
2 tablespoons chocolate sauce
1/4 cup candied pecans
1 cup heavy cream
2 tablespoons confectioners' sugar
1 tablespoon bourbon
1 teaspoon vanilla

Steps:

  • In a serving dish, add the crushed pecan cookies, scoops of butter pecan ice cream and a dollop of the Bourbon Whipped Cream. Top with the chocolate sauce and candied pecans.
  • In a chilled bowl, add the cream, sugar, bourbon and vanilla. Whisk until medium peaks form, 5 to 8 minutes.

1 (2 pound) pineapple, halved
3/8 cup plus 1 tablespoon cold water
2 limes, juiced
1/4 cup Kirsch
3 drops green food coloring
1/4 cup heavy cream, whipped
1/4-ounce packet of gelatin
1 banana, peeled and quartered lengthwise
1/8 cup flaked almonds
1 egg white
1/2 cup sugar
1/8 cup coconut flakes

Steps:

  • Scoop out pineapple flesh and freeze shells. Discard core. Blend flesh with 1/4 cup water. Pour into saucepan and cook over medium heat. Add lime juice and bring to boil. Boil for 2 minutes.
  • Combine gelatin and 1 tablespoon water. Dissolve this in pot with remaining water, over low heat. Add Kirsch and food coloring. Add to pineapple mixture and chill.
  • Once cooled, beat in whipped cream. Chill again.
  • Place two banana pieces in each pineapple shell. Sprinkle with almonds. Pour chilled mousse mixture over them. Place in refrigerator to set.
  • Once mousse is set, preheat broiler and place rack 3 inches from heat. Beat egg white, gradually adding sugar until stiff. Place in piping bag and pipe decorative swirls on top of the mousse, covering it completely. Broil for 3 minutes. Remove and sprinkle with coconut. Broil again for another minute to toast.

PUMPKIN TARTUFFO SUNDAE

1 pint soy milk
1 pint non-dairy whipped topping
1 vanilla bean, split lengthwise
1 cup pureed canned pumpkin
1 cup sugar substitute
8 egg whites

Steps:

  • Heat soy milk and non-dairy topping with vanilla bean. Allow to steep, remove bean, scrape seeds and add back to milk. Add pumpkin puree.
  • Combine sugar and egg whites. Temper over low flame and add back to milk mixture. Cook mixture, stirring constantly until thick. Place in freezer, stirring until mixture hardens, then freeze overnight.
  • Serve with whipped non-dairy topping and sugarless candy garnish.

CLASSIC HOT FUDGE SUNDAE

There is a reason a hot fudge sundae is such an enduring classic: That combination of warm, rich chocolate fudge mixing with frozen ice cream and melting it slightly is absolutely irresistible. Of course, if you have homemade fudge sauce and homemade ice cream, it gets even better. Vanilla ice cream is the standard here, but feel free to use your favorite flavor, or a combination of flavors. And if you like nuts, by all means use them here. The added crunch is marvelous against all the rich creaminess.

1/3 cup light corn syrup or honey

1 teaspoon vanilla extract or 1 tablespoon brandy or rum
1 cup chilled heavy cream
1 tablespoon superfine sugar, more to taste

Chopped toasted nuts, such as almonds, peanuts, or pecans (optional)
Cherries, for garnish (optional)

Steps:

  • In a medium saucepan over medium heat, bring the cream, sugar, corn syrup or honey, cocoa, and salt to a simmer, whisking until the sugar dissolves and the mixture thickens slightly, about 5 minutes.
  • Stir in the chocolate and let cook until the chocolate melts. Stir in butter and vanilla or liquor. Let cool slightly. Contrary to its name, hot fudge is best served warm, not piping hot.
  • For assembly, make the whipped cream. Using a whisk or an electric mixer, beat the cream, sugar, and vanilla until soft peaks form.
  • Pour a little fudge sauce into the bottoms of sundae dishes or bowls. Top with ice cream, then more hot fudge, then nuts if using. Cover all with whipped cream and a cherry if you like. Serve.

This hot fudge sundae is nothing close to what you grew up with. That's a good thing. Here, you'll mix up a dreamy concoction of cream, bananas, rum and frozen Heath bars, run it through an ice cream maker, and then douse it in a rich chocolate-butter sauce. You can't lose.

2 cups milk
3/4 cup sugar
1/2 vanilla bean, split lengthwise
6 egg yolks
1/4 cup heavy cream
3 medium ripe bananas
1 tablespoon fresh lemon juice
2 tablespoons dark rum
3 Heath bars, frozen, then broken into pieces
4 1/2 ounces unsweetened chocolate
1 1/2 tablespoons butter
2/3 cup water
2/3 cup sugar
1 tablespoon light corn syrup
1/8 cup milk

Steps:

  • To make the ice cream, combine the milk, a quarter cup of sugar and the vanilla bean in a saucepan. Over medium-high heat, bring the milk to a boil and let the sugar dissolve. Remove from the heat and let it sit for five minutes to infuse flavors. Then remove the vanilla bean.
  • In a large mixing bowl, whisk together the egg yolks with the remaining sugar. Pour the milk mixture into the egg yolk mixture and blend. Pour this mixture into the saucepan and return the pan to the heat.
  • Heating over medium high, stir the mixture continuously for about three minutes, until it coats the back of a spoon. At this point, remove the pan from the heat immediately, add the heavy cream and blend. Strain the custard into a bowl and place it over an ice bath to cool, again stirring continuously. Once cool, strain it into a bowl and place in the refrigerator.
  • Puree the bananas with the lemon juice. Add the puree and rum to the custard. Strain the mixture again.
  • Pour the custard mixture into an ice cream maker and process according to the manufacturer's instructions.
  • Remove the frozen ice cream from the machine and stir in the Heath bars until they are scattered throughout the ice cream. Place in the freezer until you are ready to assemble the sundaes.
  • To make the fudge sauce, melt the chocolate and butter in the top part of a double boiler over medium heat. In the meantime, combine the water, sugar and corn syrup in a saucepan and cook until it reaches the soft-ball stage (234 degrees).
  • Whisk the chocolate-butter mixture together with the sugar syrup until blended. Then blend in the milk. Keep the hot fudge in a warm water bath until you are ready to assemble the sundaes. Leftover sauce can be covered and refrigerated for several weeks. When ready to use, reheat in the top half of a double boiler.
  • Layer slices of ripe bananas, hot fudge sauce and ice cream in large Pilsener glasses.
