ACORN SQUASH STUFFED WITH LAMB & CURRY
This recipe is from "Apple Companion", which I found at Amish Acres in the heart of Indiana's Amish country. If you ever have a chance, pick up a copy of this cookbook! I have found most of the recipes to be outstanding, including this one, which I make at least once every fall or winter.

- Cut acorn squash in half from stem to tip and scrape out seeds; set aside.
- In a heavy, non-reactive (such as enameled) skillet, melt the butter over medium heat. Sauté onion for 2-3 minutes.
- Quick trick: Use one of those handy green peeling/coring/slicing units that attach to the counter with suction. You can find these at most stores for around $20-if you don't have one, I recommend getting one. They work really well, and save lots of time!
- Core and slice the apple with the peeling arm wedged out of action. Slice the spiral to form small, uniform dice.
- Add the apple, garlic and curry powder to the skillet. Sauté, stirring, for about 3 more minutes, or until apple is beginning to soften and curry has become quite fragrant.
- Add lamb and mix thoroughly, breaking up chunks. Brown lamb and stir in cumin, cayenne and salt.
- Add cream; allow to boil and reduce until thick.
- Pack as much of the lamb mixture as possible into the hollowed-out squash halves. Place the squash in a baking dish just large enough to hold them upright.
- Pour 1 inch of boiling water in the dish and cover tightly. If baking in the oven, use foil. If microwaving, use microwave-safe plastic wrap, ventilated with 2 slits.
- Bake in preheated 400 F degree oven for 1 hour, or at 70% power in microwave for about 25 minutes, until the flesh of the squash is tender when pierced with a fork.

SOFT BREAD MACHINE NAAN
This is a classic flat bread of India. We have this almost every time we cook an Indian meal. This is based on a recipe from Madge Rosenberg's The Best Bread Machine Cookbook Ever -- Ethnic Breads .

- Add all ingredients except the butter and black sesame seeds in the order recommended for your bread machine. Process using the dough cycle.
- Preheat the oven to 450 degrees F. When the dough cycle ends, remove the dough from the machine and divide into 8 pieces. On a floured surface with a floured rolling pin, roll each piece into an 8-by-4-inch oval. Cover and let rise 20 minutes, or until doubled.
- Melt the butter for the topping. Brush the top of each naan with butter and sprinkle witht sesame seeds. Bake 7 to 10 minutes, or until golden. Lightly brush the bottom of each naan with water, stack, and cover, or eat as soon as they are cool enough to handle.

- Mix yeast with sugar and warm milk or water.
- Leave for 20 minutes.
- Sift flour and salt together in a large bowl.
- Make a well in the centre and put yoghurt, 2 tbsps oil or butter with the yeast mixture.
- Knead well and leave aside for 3-4 hours in a warm place until it doubles in size.
- Punch down the dough and knead well again.
- Leave it till it doubles in size.
- Divide the dough into 6 portions.
- Roll out into a round disc of 6" diameter.
- Leave it aside so that it can double in size.
- Brush the top with remaining oil.
- Place them in a baking tray.
- Bake in a pre-heated oven (450 degrees Fahrenhit) for 5-6 minutes until the top turns brown in colour.
- Again, brush oil lightly over the sloping dark brown tops.
STUFFED NAAN BREAD WITH MINCED MEAT (KEEMA NAAN)

- To make the naan bread:.
- Sift the flour, salt, baking powder, yeast and sugar in a bowl and pour in the hand-hot milk, oil, yoghurt and the beaten egg and mix it all together to form a ball of dough.
- Place the dough on to a clean surface and knead it for 10 minutes or more, until it is smooth and satiny.
- Pour about 1/4 tsp oil into a large bowl and roll the ball of dough in it.
- Cover the bowl with a piece of cling film and set aside in a warm, draught-free place for an hour or until the dough has doubled in size.
- To make the mince stuffing:.
- Heat oil in a pan and on medium heat, fry the finely chopped onion, minced ginger and garlic till lightly golden browned.
- Add the mince meat, chopped chillies, spices and salt and stir fry till nicely browned.
- Add in the tomato puree and about 2-3 tbsp water and let the mixture cook thoroughly, stirring occasionally, till all the liquid have evaporated.
- Remember, NO LIQUID SHOULD REMAIN. If the mince stuffing is 'wet', it will be impossible to roll out the naans without bursting them.
- Keep aside to cool completely then mix in the chopped coriander leaves.
- Back to making the naan bread:.
- Pre-heat your oven to the highest temperature. Put the heaviest baking tray to heat in the oven.
- Punch down the dough and knead it again and divide into 8 equal balls.
- While working on 1 ball, keep the remaining balls covered.
- Flatten the ball using your hands (or rolling pin), roll it out slightly and then place about 1 heaped tbsp of the mince stuffing in the centre and pull the edges up, seal and shape into a ball again.
- Dust will a little flour if needed and roll out into a tear-shaped naan, about 15 cm in length and about 12 cm at its widest.
- Brush the top with melted butter.
- Remove the hot baking tray from the oven, grease it well with butter and place the naan on to it (I cook 4 naans in one batch).
- Put it into the oven on the top rack for 2-3 minutes. It should puff up and brown slightly (do keep an eye on it after 2 mins).
- Once puffed up and browned on one side, flip the naan and back into the oven again for another 1-2 minutes till the top of naan goes golden brown (keep an eye after 1 minute).
- Wrap the naans in a clean tea towel and serve hot.
ONION STUFFED NAAN
I ate this in Malaysia. The menu description (spanked with fresh coriander leaves) cracked me up. The naan was truly delicious and more naan needs spanking IMO.

- Dough:.
- Add sugar and yeast to warm water. Let stand 10 minutes. Add yogurt, ghee, and egg. Mix. we will call this yeast water.
- In a large bowl, mix salt and flours.
- Add yeast water, and knead about 12 minutes. Cover with a damp cloth, and let stand for about an hour till it doubles in size. Ideal room temperature for dough to work will be around 80ºF.
- Punch down dough. Knead again and let it stand another hour till double in size.
- Divide dough in 8 equal size balls. Each ball will make one Naan. If you wish, you may put these balls in a freezer zip-lock bag and freeze away. To thaw, put them in the refrigerator section over night.
- Onion Mixture:.
- Melt the Ghee in a large frying pan. Add the onion and cook 5 minutes or until softened. remove from the heat and add the seasoning and chopped cilantro. Set aside.
- Baking Naan:.
- Preheat oven to 450 ºF.
- Divide the dough ball into two smaller but equal balls.
- Roll out one dough ball by hand to about 5" diameter set aside.
- Roll out the second dough ball by hand to about 5" diameter. Sprinkle about one Tablespoon of onion evenly on the top.
- Put the saved 5" diameter dough on top of the onions. Press and roll out to 6" round, oval or triangular shape.
- Wet you hand and lightly brush the top of the Naan. Sprinkle some cilantro evenly on the surface as garnish. Press the chopped cilantro leafs onto the surface.
- Brush the top of the rolled Naan with melted Ghee.
- Grease a baking sheet. Put the Naan on the baking sheet. Bake 6 to 8 minutes.
- Repeat until all the Naan have been baked.

GORKHALI STUFFED NAAN

Steps:
- To prepare lamb stuffing, in a sauté pan heat two tablespoons of oil.
- Add turmeric, garlic, ginger and curry powder; fry for a minute or so.
- Add ground lamb and sauté until cooked.
- Add chopped scallion and cilantro; makes well.
- Take off heat and allow cooling.
- In a large bowl, combine the flour, two tablespoons of melted butter, baking powder, baking soda, sugar and salt.
- Make a well in the center and add milk and yogurt, mixing it with the flour until a soft dough is formed.
- Dust kneading board with flour; place the dough on the board and knead for ten minutes or so.
- Cover with plastic wrap and let rest for 30 minutes.
- Knead the dough again for another five minutes.
- Divide the dough into three-inch balls.
- Roll out the dough balls into eight-inch circles.
- Cover with plastic wrap.
- Place two tablespoons of lamb stuffing at the centre of the naan.
- Fold all edges over towards the centre and pinch to enclose.
- Sprinkle some dusting flour on the kneading board and gently roll out the stuffed naan into a six-inch circle.
- Continue with other dough balls.
- Cover with plastic wrap.
- Brush naans with melted butter and place in the hot clay oven farther from the open fire.
- Bake in oven for 4-5 minutes until the naans have risen and surface has blistered and turned slightly brown.
- Do not over bake naans.
- Alternatively, you can place buttered naans on a baking stone and bake in a conventional oven at 450oF.
- You can also season naans with garlic, herbs, and other spices.
- Serve hot with vegetable or meat preparations.
