BEST STEAK MARINADE IN EXISTENCE
This is a family recipe that has been developed only over the last 5 years. In this short time it's made me famous in our close circle, but until now I've never shared it with anyone.

Steps:
- Place the soy sauce, olive oil, lemon juice, Worcestershire sauce, garlic powder, basil, parsley, and pepper in a blender. Add hot pepper sauce and garlic, if desired. Blend on high speed for 30 seconds until thoroughly mixed.
- Pour marinade over desired type of meat. Cover, and refrigerate for up to 8 hours. Cook meat as desired.

- Combine all ingredients in a small bowl and mix until combined. Add steaks and marinade to a zip lock bag, tossing the steaks a few times to coat. Press the excess air out, seal the bag, and refrigerate for 15 minutes to 2 hours. Remove steaks from bag and discard marinade. Grill steaks.

Steps:
- Place steaks in a flat baking dish or container. Cut slits at 1-inch intervals in the fat around the edges of the steaks. Gently pierce both sides of each steak a few times with a fork.
- Sprinkle each steak with salt, pepper, garlic powder, and Montreal steak seasoning. Pat seasonings into steaks.
- Whisk olive oil, Worcestershire sauce, soy sauce, balsamic vinegar, Dijon mustard, garlic, and liquid smoke together in a bowl. Pour marinade over steaks to coat. Cover container or baking dish with plastic wrap and marinate steaks in the refrigerator for 2 hours. Turn steaks over and marinate for another 2 hours.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Cook the steaks on the preheated grill until they start to firm, and are reddish-pink and juicy in the center, 8 to 10 minutes per side for medium-rare. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C).

- In a small bowl, whisk together soy sauce, lemon juice, olive oil, Worcestershire sauce, minced garlic, Italian seasoning, pepper, salt, and a pinch of red pepper. Add steaks to a resealable zip lock bag or large bowl and pour the marinade on top. Marinate for 2 hours or overnight.
- Turn the skillet to high heat. Add the steaks. Cook on each side for 3 minutes or until outside is browned. Reduce heat to medium-high. Cook the steaks to the desired doneness. Mine took about 10 minutes flipping 3 times to get a medium well.
- Top with butter and garnish with fresh parsley if desired

- Combine dry ingredients in one bowl. Combine liquid ingredients in another.
- Combine wet and dry ingredients in gallon-size ziplock bag. Mix ingredients together.
- Place steaks in ziplock bag.
- Allow to marinade for at least 3-4 hours.
- Heat grill to 600 F.
- Place steaks on preheated grill. Brush extra marinade on top of steaks. Close lid.
- Flip steaks after 5 minutes. Brush extra marinade on steaks again.
- Flip steaks again after 4 minutes. Allow steaks to cook for 1 additional minute.

REALLY GOOD STEAK MARINADE
My mantra has always been 'don't mess with a good steak by marinating it', but this marinade is really yummy. I've used it on several different cuts, from less expensive chuck, flank and even brisket, along with sirloin and NY strip. The servings are flexible, depending on size of steaks and portion size. It does make a lot of marinade.Cook time doesn't include marinating time, and depends on how you like your steaks, ie: rare, med. or well done, and how thick the steaks are, so it was just a guesstimate.
