3 cups (381 grams) all-purpose flour
1 tablespoon baking powder
1/2 teaspoon fine salt
1/2 teaspoon freshly grated nutmeg
3 tablespoons (43 grams) unsalted butter, (melted and cooled to lukewarm)
1/2 cup buttermilk, (at room temperature)
2 large eggs, (at room temperature)
3/4 cup (150 grams) granulated white sugar
1 1/2 teaspoons pure vanilla extract
Vegetable, canola, refined coconut oil, vegetable shortening, or peanut oil, for frying
1 stick (113 grams) unsalted butter
1/4 cup whole milk
1 tablespoon light corn syrup*
2 teaspoons vanilla extract
4 ounces semisweet chocolate, (chopped)
2 cups (250 grams) powdered sugar, (sifted)
Rainbow sprinkles, (if desired)

Steps:

  • In a large bowl, mix together the flour, baking powder, salt, and nutmeg. Combine butter and buttermilk in a small bowl or measuring cup, and set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the eggs and sugar until thick and pale, about 5 minutes. Beat in the vanilla extract. On low speed, alternately add the flour mixture with the melted butter and buttermilk, starting and ending with the flour. The dough will be soft. Cover tightly with plastic wrap and let sit at room temperature for 30 minutes, or until the dough is firm enough to handle.
  • MAKE AHEAD: At this point you can also refrigerate the covered dough for up to 48 hours. Let come to room temperature before proceeding with recipe as written.
  • Turn the dough out onto a floured work surface. Roll the dough out into just over 1/4-inch thickness and cut with a doughnut cutter or with a large round cutter and a small cutter for the holes. Brush off any excess flour and place the doughnut shapes on a lightly floured parchment lined baking sheet. Cover and let the doughnuts sit at room temperature while you heat the oil.
  • Heat at least 1 1/2 inches of oil in a large and heavy pan to 350°F. Place three to four doughnuts in the oil at a time and fry until golden brown, about 1 minute or less per side (30 seconds for the holes). Do not overcook the doughnuts. Drain on a paper towel-lined plate.
  • In a medium saucepan over medium heat, combine the butter, milk, corn syrup, and vanilla and heat until the butter melts. Decrease the heat to low and add the chocolate, whisking until melted. Turn off the heat and add the powdered sugar, whisking until smooth.
  • Immediately dip the doughnuts into the glaze. If the glaze begins to set, return the saucepan to low heat and stir until liquid again. Garnish with sprinkles, if using. Let the glaze set on the doughnuts for 30 minutes before serving.
  • Doughnuts are best made the day they're fried. However, you can store the glazed doughnuts in an airtight container for up to 2 days.

3 tsp baking power (if you using double acting baking powder use half the amount.)
1 tsp salt
1 tsp nutmeg
3/4 c milk
1/4 c oil
TOPPING
1/4 c sugar
1 tsp cinnamon
VARIATIONS
1 c grated granny smith apples (grate with cheese grater)

Steps:

  • 1. Combine all ingredients and mix with a fork until combined. Variation: If adding grated apples to the mixture do so at the end and fold in.
  • 2. Drop by teaspoonfuls into hot oil. Turn when underside is brown and finish cooking. Remove from oil and drain on paper towel. Roll in cinnamon sugar mixture to coat while still warm. Serve warm and delicious. Can be stored in an airtight container if you have any left.

A classic fried cake donut recipe that makes the most delicious old fashioned donuts ever! Light and crispy on the outside, tender, moist, and cakey on the inside.

4 ounces unsalted butter (softened but not melted)
5 ounces granulated sugar
2 large eggs (room temperature)
6 ounces buttermilk (room temperature)
2 teaspoons vanilla extract
15 ounces All-Purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon nutmeg
1/2 teaspoon salt
32 ounces lard or oil (for frying (4 cups))
5 ounces powdered sugar
2 Tablespoons milk (or water)
4 ounces chocolate chips
2 Tablespoons butter
1 Tablespoon corn syrup (or glucose/honey)
2 Tablespoons heavy cream
1 cup granulated sugar
2 Tablespoons cinnamon

Steps:

  • In the bowl of your stand mixer with the paddle or the whisk attachment, cream the softened butter and the sugar on medium high speed until the mixture is light in color and fluffy.
  • While mixing on low, add in one egg, let it mix in and then add in the second egg and mix on medium speed until everything is smooth and combined
  • Add in the buttermilk and the vanilla and mix until combined
  • While mixing on low, add in the flour, salt, baking powder, baking soda, and nutmeg and mix until the dough is combined. Do not over-mix. The dough will be sticky.
  • Lightly flour your work surface and transfer the sticky dough to the floured surface.
  • Press the dough down lightly until its about 1" thick.
  • Fold the dough over onto itself 3-4 times until the dough is smooth.
  • Flatten the dough down to about 1/2" or use a rolling pin. Let the dough rest for 5-10 minutes while your oil is heating up.
  • Turn on your FryDaddy or begin heating your oil to 360ºF-375ºF (182ºC -190ºC). Set up a draining station for the donuts by placing a cooling rack over a sheet pan to catch the oil.
  • Use a donut cutter or ring cutter to cut out the donuts. You can press together the scraps and roll them out again to get as many donuts as you can. Just keep in mind the more you work the dough, the tougher the donuts will get.
  • Add the donut to the hot oil using your slotted spoon to lower it gently. Fry the donut for 2 minutes then flip it over and fry it for 1 more minute.
  • Fry your donut holes for about 1 minute, stirring and pushing them down with your spoon until golden brown on the outsides.
  • Transfer the dough to a cooling rack over a sheet pan to let the oil drain away from the donut
  • Once your donuts are cooked you can roll them in powdered sugar, cinnamon sugar, glaze them with donut glaze or chocolate glaze!
  • Store donuts in a paper bag at room temperature for up to two days. They are best eaten fresh! Do not refrigerate.
  • Sift the powdered sugar into a bowl and add the milk (or water). Whisk together to combine, add more powdered sugar to make it thicker or more milk to make it thinner.
  • In a medium sized bowl, add the heavy cream, butter and corn syrup to the chocolate chips. Microwave for 30 seconds and stir together until the chocolate is melted. Microwave for another 15 seconds if needed.

Number Of Ingredients 11

1/4 cup vegetable shortening, plus more for deep frying
1 cup sugar
2 large eggs, at room temperature
1 cup canned evaporated milk
2 teaspoons vanilla extract
4 cups unbleached all-purpose flour, plus more as needed
4 teaspoons baking powder
1 1/2 teaspoons freshly grated nutmeg
1/4 teaspoon ground mace
1 teaspoon fine salt
For coating the doughnuts (optional): 1 cup granulated sugar, or 1 cup granulated sugar mixed with 1 tablespoon ground cinnamon, or 1 cup sifted confectioners' sugar

Steps:

  • Melt the shortening in a small saucepan over medium heat. Set aside to cool slightly but still liquid.
  • In a standing mixer fitted with the paddle attachment, beat the sugar and shortening together on medium speed, until just combined. Add the eggs, one at a time, beating well after each addition. Add the milk and vanilla, and continue beating until the mixture is light, about 2 minutes.
  • Meanwhile, sift the flour, baking powder, nutmeg, mace, and salt into a medium bowl.
  • Reduce the mixer's speed to low, add the flour mixture until just combined. (The texture of the dough will be soft and loose.) Transfer the dough to a large piece of plastic wrap and wrap it well. (Make sure you scrap off all the dough clinging to the paddle.) Refrigerate the dough for 4 hours or overnight.
  • On a lightly floured work surface, roll the chilled dough out into a rectangle about 1/2-inch thick. Dip the edges of a 2 1/2-inch-round doughnut cutter in flour and cut the dough into doughnuts. Place the doughnuts and holes on a baking sheet lined with parchment.
  • Put enough vegetable shortening into a tall, heavy-bottomed pot to fill it about a third of the way up. Heat the shortening over medium heat until a deep-fry thermometer inserted in the oil registers 375 degrees F. Line a baking sheet with paper towels.
  • Working in batches, fry the doughnuts and holes, turning once, until they are golden brown, about 2 to 3 minutes. Using a slotted spoon, transfer the doughnuts to the paper towels to drain and cool. Repeat until all the doughnuts and holes are fried. (Make sure the shortening returns to 375 degrees F. between batches.)
  • For sugared doughnuts, roll the doughnuts in sugar or cinnamon sugar while they are still warm. To cover the doughnuts with confectioners' sugar, allow them to cool completely before rolling in the sugar.

¾ cup white sugar
¾ cup milk
⅓ cup vegetable oil
1 egg

Steps:

Grandma Dixon used to make these for the grankids as a special breakfast treat. Served beside her fried fish and eggs it was cholesterol heaven. Still nothing better to use those left over mashed potatoes. Psst, I think she made extra potatoes on purpose! Eat plain, glazeed or cover in cinnamon powdered sugar and enjoy!

1 c sugar
2 Tbsp oil
1 1/2 c mashed potatoes
3 eggs
3/4 c milk
1 tsp baking powder
1 tsp salt
1 1/2 tsp nutmeg
2 c flour
VARIATION
2 c grated apples ( i use a hand cheese grater )

Steps:

  • 1. In mixer beat eggs, sugar and potatoes until light and fluffy. Add oil and dry ingredients and mix well. Roll out on floured surface until desired thickness. Cut into doughnut shapes, reserving the holes. Fry in deep fat fryer at 350 degrees. Flip over when first side is golden brown and cook until the whole doughnut is golden brown. Drain on paper towel. Eat plain, with glaze or roll in cinnamon and sugar. Excellent eaten warm but will store in an airtight container up to one week. Note: Sometimes your mashed potatoes may be dry or other times extremely wet. Adjust the flour added accordingly. I just made a batch this morning and it took 3 cups of flour to get the doughnuts to the roll out consistency.
  • 2. Fold in 2 c of grated apples to make a darn good addition to these doughnuts. These are moist to start with inside but when you add the apples they are even moister. Yum!

DEEP FRIED CAKE DONUTS

2 Tbsp butter, softened
1/2 c white sugar
2 large eggs, lightly beaten
2 c all purpose flour.sifted
1 Tbsp baking powder
1/2 tsp ground cinnamon
dash(es) fresh ground nutmeg
1 tsp salt
1/2 c whole milk
shortening,canola oil or lard for frying

Steps:

  • 1. Heat oil in deep-fryer to 375 degrees F.
  • 2. In a large bowl, sift together flour, sugar, salt, baking powder, cinnamon and nutmeg. Mix in butter until crumbly. Stir in milk and egg until smooth. Knead lightly, then turn out onto a lightly floured surface. Roll or pat to 1/4 inch thickness. Cut with a doughnut cutter, or use two round biscuit cutters of different sizes.
  • 3. Carefully place doughnuts into hot oil, a few at a time. Do not overcrowd pan or oil may overflow. Fry, turning once, for 3 to 5 minutes or until golden. Drain on inverted cooling rack over paper towel-lined sheet tray to wick excess oil away.
