1 package (13-1/2 ounces) frozen chicken nuggets
1/3 cup grated Parmesan cheese
1 can (26-1/2 ounces) spaghetti sauce
1 cup shredded part-skim mozzarella cheese
1 teaspoon Italian seasoning

Steps:

  • Preheat oven to 350°.Place chicken nuggets in a greased 11x7-in. baking dish. Sprinkle with Parmesan cheese. Layer with spaghetti sauce, mozzarella cheese and Italian seasoning. , Cover and bake until chicken is heated through and cheese is melted, 30-35 minutes.

From Jo Ann Shirley's 1978 Cakes and Cookies cookbook. These cookies are flavored with cinnamon, vanilla and orange and are said to make your house smell amazing when you bake them. The dough should be chilled until firm enough to shape into balls, but this time is not included in the prep time I have given.

1/2 cup margarine
1/3 cup sugar
1 egg
1 1/4 cups sifted all-purpose flour
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
2 teaspoons grated orange rind
2 tablespoons orange juice
1 1/2 cups chopped walnuts

Steps:

  • Cream together margarine and sugar until light and fluffy. Add egg and beat well.
  • Add sifter flour, salt, cinnamon, vanilla, orange rind and juice. Mix well. Chill.
  • Shape into 1" balls. Roll in nuts. Bake @ 325 degrees for about 20 minutes.

This is from "Easy to Bake, Easy to Make" collection. HINT: Ground beef can be stored in the refrigerator up to 2 days. For longer storage, it can be frozen, wrapped airtight, up to 3 months.

1 1/2 lb lean ground beef
1 c sliced onion (medium)
1 pkg dry onion soup mix (1.35 oz)
2 Tbsp all-purpose flour
1 c water
1 c shredded cheddar cheese
1/2 pkg frozen potato nuggets (32 oz)

Steps:

  • 1. Preheat oven to 350F. Crumble ground beef into a 10-inch skillet; add onions. Cook over medium-high heat, stirring frequently, until beef is well browned and thoroughly cooked, 5-7 minutes.
  • 2. Stir soup mix and flour into beef in skillet. Add water; continue cooking, stirring constantly, until thickened. Spoon beef mixture into 9-inch square baking dish.
  • 3. Sprinkle Cheddar over beef mixture. Arrange frozen potato nuggets over cheese. Bake until potato nuggets are golden and mixture is bubbly, 30-40 minutes.

1/2 cup shredded American-Cheddar cheese blend (2 oz)

Steps:

  • Heat oven to 375°F. In ungreased 2-quart casserole, mix soup, milk, dried onion, chicken and vegetables. Arrange frozen potato nuggets over top.
  • Bake uncovered 40 to 45 minutes. Sprinkle with cheese. Bake 5 to 10 minutes longer or until bubbly and cheese is melted.

3 golden nugget* or golden acorn squash (3 to 3 1/2 pounds total)
1 tablespoon olive oil
*available at specialty produce markets, many supermarkets, and some Asian markets

Steps:

  • Preheat oven to 400°F.
  • Cut each squash into 6 wedges and scoop out and discard seeds and strings. In a large shallow baking pan drizzle squash with oil, rubbing to coat flesh. Season squash with salt and pepper and arrange, cut edges down, in pan.
  • Bake squash, turning it over halfway through baking, until tender, about 40 minutes.

  • Mix first 5 ingredients together in a bowl.
  • Arrange bread in a single layer on the bottom of a 9 x 13 inch casserole dish.
  • Pour the egg mixture evenly over the bread.
  • Mix cinnamon and sugar together. Sprinkle over bread.
  • Sprinkle raisins on top.
  • Cover with foil and bake in a water bath at 400 degrees for 75 to 90 minutes.
