HONEY PUNCH

- Dissolve 1/2 cup honey in 1/2 cup boiling water. Let cool, then pour into a pitcher; add the juice of 2 lemons, 2 cups apricot nectar and 1 cup vodka, if desired. Chill. Add a bottle of sparkling apple juice to the pitcher. Serve over ice with lemon slices.

GOLDEN HONEY DARJEELING PUNCH
Shamelessly stolen from a Celestial Seasonings insert and not yet tried by me. Cook time is chill time. IMPORTANT NOTE: It's important to use the equivalent of ginger ale commonly found in the U.S. as anything else is too strong ("gingery" as the reviewer noted). This is not ginger beer or ginger lemonade, but a product made, for instance, in the U.S. by Schweppes and Canada Dry. I didn't think to address this distinction before and I apologize to anyone who might have unsuccessfully made this recipe with the wrong ingredient.

- Bring water to a boil and pour one cup over tea bags. Steep for 5 minutes.
- Squeeze and remove tea bags. Add honey, stir well. Cool down by adding ice to bring up to one cup. Add lemon juice to tea mixture and chill. Before serving, combine tea, ginger ale, lemonade and orange slices. Mix well and serve over ice.

- In a blender, add bananas and orange juice concentrate. Put a cover on the blender and process until smooth.
- Into a large bowl pour the mixture and add pineapple juice, water, honey, sugar, and the soft drink mix. Stir well until sugar is dissolved.
- Pour this into two 2 quart freezer containers and cover. Freeze until a slushy texture is obtained.
- To serve: Using 2 large pitchers transfer each container of fruit slush to pitchers. Slowly add 2 liters of soda to each pitcher and stir to blend.

CHILES RELLENOS WITH SAUCE
My mom started making this for us when we lived in Southern California. It remains one of my favorites. It's important to use the specified peanut oil in the sauce. The taste adds something special to it. If you do not have access to Anaheim chiles, please see http://www.foodsubs.com/Chilefre.html for possible substitions. The only one I haved tried are whole canned green chiles. If you used those, you would not have to parboil them.

- Slit peppers at lower end. Remove seeds and pulpy connective tissue, but leave on stems. Parboil until tender.
- Stuff each pepper with two pieces of cream cheese 1/8-inch thick.
- Beat egg whites until they are white. Add yolks and continue beating until uniform and fluffy. Salt the egg batter.
- Heat oil for cooking. Roll pepper in flour then dip in egg batter. Fry until egg is golden. If you put more than one pepper at a time into the pan, be sure not to put in so many that the oil temperature drops too much. The rellenos shouldn't be touching each other either.
- Pour some sauce over each relleno and serve.
- SAUCE: Saute onions in 1 T. peanut oil. Add tomato sauce, a couple shakes of salt and oregano. Simmer 5 minutes. Should be hot when served over the rellenos.
