GOBBLE-GOOD TURKEY CASSEROLE

My sons teacher sent this recipe home. We didn't have leftover turkey this year, so I haven't tried it.

1 (10 3/4 ounce) can cream of mushroom soup
1 (10 3/4 ounce) can cream of celery soup
1 (1 ounce) package onion soup mix
1 cup rice
1 1/2 cups milk
2 -3 cups leftover cooked turkey

Steps:

  • Combine all ingredients in a large casserole dish. Bake covered 45 minutes at 350.

Not much of a story. I just used what I had on hand.

1 cup(s) torn kale leaves
1/2 - small onion, thinly sliced
1/2 - large tomato, diced
1 - generous handful of corn chips
3/4 cup(s) shredded pepper jack cheese
1 package(s) ground turkey
1 - egg

Steps:

  • Saute onion for one minute. Add kale. Continue until kale is wilted, set aside.
  • Meanwhile, pulse corn chips in a food processor to small pieces. Set aside. Grate cheese in food processor. Also set aside.
  • Add kale/onion to processor bowl with tomato. Pulse several times. Add corn chips, turkey, 1/2 cup of cheese, turkey, salt and pepper to taste. Pulse several times until all ingredients are mixed.
  • Place in oiled baking dish. Sprinkle remaining cheese on top. Bake at 350 for 40 minutes, or until done. Let sit for a few minutes then serve hot.

CHILLED TURKEY LOAF

This loaf jells in its own marrow. You can serve it with bread, lettuce, and condiments for sandwiches, or serve it plain for a low carb meal.

4 lbs turkey drumsticks (about 4 small)
6 cups water
2 chicken bouillon cubes
1 bay leaf
1 teaspoon salt
1/2 cup dry white wine
1 teaspoon thyme
1 teaspoon sage
2 garlic cloves, minced
1/2 cup chopped green onion
1/2 cup chopped parsley
2 ounces diced pimentos
1/4 teaspoon fresh ground black pepper

Steps:

  • In a 6-quart kettle, combine the turkey, water, bouillon, bay leaf, and salt. Cover and simmer until meat is very tender and begins to fall away from the bone, about 2 1/2 hours. Lift out meat and set aside to cool. Add wine to cooking liquid and boil, uncovered, until reduced to 3 cups.
  • Remove meat from the bones, discarding skin, tendons, and bones. Tear meat into fine shreds and combine with the thyme, sage, garlic, onion, parsley, pimento (drained), and black pepper. Pack meat mixture into a 5x9-inch loaf pan, then pour in the cooking liquid. Cover and chill until set, at least 6 hours.
  • Run a knife around the pan sides to loosen. Dip pan into hot water for 5 seconds, then invert onto a serving plate and slice.

This is a mixture of turkey meatloaf recipes I have tried and came up with this gobble-icious turkey meatloaf recipe ....Hope you enjoy it as much as we do. Bon Appetit everyone !!!

2 eggs, slightly beaten (or 1/2 cup egg beaters )
1/2 cup 1% low-fat milk
8 ounces tomato sauce
3 tablespoons balsamic vinegar
2 tablespoons Dijon mustard
1 1/4 lbs lean ground turkey
1/2 cup quick oats
1 large onion, chopped
4 tablespoons parsley, chopped
3 -4 garlic cloves, minced
1 large onion, finely chopped
1/2 cup parmesan-romano cheese mix
1/2 teaspoon sage (or thyme )
1/2 cup green pepper, diced
1 teaspoon dried basil
1 teaspoon dried oregano
2 -3 teaspoons ketchup
2 -3 teaspoons Worcestershire sauce
2 -3 teaspoons barbecue sauce

Steps:

  • In a bowl, combine eggs and milk.
  • In a large bowl,using wet hands, combine tomato sauce, vinegar, mustard, ground turkey. oats, onions, parsley, garlic, cheese, green peper, basil, oregano and sage.
  • Add the egg/milk combination into the large bowl.
  • Place the mixture in a loaf pan.
  • Bake in 350 degree fahrenheit oven for 1 hour and 15 minutes.
  • Combine ketchup, worcestershire sauce and barbecue sauce and spread it over the meatloaf.
  • Return the meatloaf to the oven and bake for 10 minutes.
  • Remove the meatloaf from oven and let it rest for 10-15 minutes before slicing.
