HEALTHY GLUTEN-FREE ARTISAN BREAD -- FREE-FORM CRUSTY BOULE

Healthy Gluten-Free Artisan Bread -- Free-Form Crusty Boule image

The Artisan Bread in 5 Minutes a Day people (e.g., "Artisan Bread in Five Minutes a Day" by Jeff Hertzberg & Zoe Francois) have developed a gluten-free loaf - this is from their website and recommended to me by duonyte when I asked for some suggestions on how to work with gluten-free bread dough I was having problems with. Recipe makes enough dough for at least four 1-pound loaves. This recipe suggests baking the free-form loaf in a 5-quart dutch oven -- this is for the steam effect that produces the nice crust and wonderful crumb for this bread. Reading through their website, I also saw an option that this bread can be baked free-form, on a stone or baking sheet as long as a metal pan of hot water is placed in the oven below the dough in order to produce the steam effect while baking. This option is included in the instructions. Website: http://www.artisanbreadinfive.com/?p=1396&cpage=3#comment-28745

Time 3h5m

Yield 4 loaves, 40 serving(s)

Number Of Ingredients 10

2 cups brown rice flour
1 1/2 cups sorghum flour
3 cups tapioca flour (also called tapioca starch)
2 tablespoons yeast (can be reduced but you will have to increase the rise time)
1 tablespoon kosher salt (increase or decrease to taste)
2 tablespoons xanthan gum
2 2/3 cups lukewarm water
4 large eggs, whisked together
1/3 cup neutral-flavored oil or 1/3 cup olive oil
2 tablespoons honey or 2 tablespoons sugar

Steps:

  • MIXING AND STORING THE DOUGH:.
  • Whisk together the flours, yeast, salt and xanthan gum in a 5-quart lidded Round Food Storage Container or the mixing bowl of your stand mixer (a metal mixing bowl should be fine as long as it is stainless steel).
  • Combine the oil, honey and water; set aside.
  • Dump the eggs into the dry ingredients and then stir while you pour in about 1/3 of the oil and water. (Unlike wheat doughs, we do not add all of the liquid at once and stir. If you do that it will result in a lumpy dough).
  • Continue to stir while you pour in another 1/3 of the liquid; the dough will start to come together in a thick dough. NOTE: You can use your mixer for these steps with your bread hook rather than stirring the dough ingredients together.
  • Add the final 1/3 of liquid and stir until the dough is nice and smooth. Cover container with the lid, but do not snap it shut. Allow it to rest on the counter for about 2 hours.
  • Place the dough in the refrigerator and store for up to 7 days.
  • NOTE: If you want to bake a loaf immediately after the initial proving you can bake it the first day, but you need to reduce the resting time before hand. In fact, you can mix the dough, shape it and let it rest on the parchment. After it has risen then slide it directly into the oven.
  • BAKING DAY:
  • On baking day take the bucket from the refrigerator. The dough will be quite fluffy still and you do not want to handle the dough too much. Just like our other doughs the trick is to keep as much of the air bubbles intact as possible.
  • Use WET HANDS to remove a 1-pound (grapefruit-size) piece of dough from the bucket. In order to not handle the dough too much you can even scoop it out of the bucket with a slightly wet metal spoon.
  • The dough will be quite scraggly when you take it out, just place it on a piece of parchment paper.
  • Use wet hands to smooth out the surface of the dough and shape it as desired. DO NOT KNEAD. This may take dipping your hands in the water a few times...to get a nice shape. Gently smooth it out with wet hands into the shape you want.
  • Cover dough loosely with plastic wrap and allow to rest on the counter for about 90 minutes. If your kitchen is very warm you may only need about 75 minutes.
  • The dough will not have grown much while resting, but it will seem a little bit puffier. Use a serrated knife to cut slashes in the dough.
  • BAKING OPTIONS:.
  • STONE OR COOKIE SHEET OPTION: If you want to bake using a baking stone, you can OR you can use a cookie sheet.
  • Preheat oven to 450°F
  • Place parchment paper with your prepared dough on prepared stone or baking sheet.
  • Place a pan (not glass) under the baking stone or sheet (at least 4 inches away) and add a cup of hot water to it when you put the loaf in the oven to create steam.
  • Bake at 450 degrees for 30 minutes.
  • DUTCH OVEN OPTION: Preheat the oven with a 5 1/2 quart Dutch Oven in it to 500 degrees 30 minutes before baking time. (Be sure it is fitted with a metal Replacement Knob, the original plastic knobs can only be heated to about 400 degrees.)
  • Remove the pot from the oven and take off the lid.
  • Lift the bread on the parchment and VERY CAREFULLY lower the parchment and bread into the pot, replace the lid onto the pot.
  • Return to the oven and bake for 20 minutes.
  • After 20 minutes remove the lid, turn the heat down to 450F and bake for an additional 15 minutes.
  • COOL THE BREAD:
  • Once the bread is done baking remove it from the pot using a spatula or from the stone/sheet and transfer to a baking rack to cool.
  • ALLOW THE BREAD TO COOL COMPLETELY before eating or the center may seem gummy.
  • The loaf is also wonderful toasted and served with butter and marmalade. Enjoy!

GLUTEN-FREE PIZZA CRUST

Gluten-Free Pizza Crust image

Pizza. Need I say more. You don't need gluten for good pizza. This is gluten-free pizza.

Provided by Shauna Ahern

Yield 8 servings

Number Of Ingredients 10

350 grams All-Purpose Gluten-Free Flour Mix, recipe follows
2 1/4 teaspoons active dry yeast
1 teaspoon psyllium husk powder (see Cook's Note)
1 teaspoon kosher salt
2 tablespoons olive oil, plus more for sprinkling
1 large egg, at room temperature
3/4 cup warm water
400 grams millet flour
300 grams sweet rice flour
300 grams potato starch

Steps:

  • Combining the dry ingredients: Whisk together the flour mix, yeast, psyllium, and salt. Pour this mixture into the bowl of a stand mixer.
  • Finishing the dough: With the stand mixer running on low, add the olive oil, then the egg. Slowly, pour in the water. Here's the important part: gluten-free pizza dough will not look the same as gluten dough. It will be far wetter, even a little like pancake batter. As you pour the water, look for the dough to come together around the paddle. However, when your turn off the mixer, the dough should slump off the paddle immediately.
  • Letting the dough rise: Scrape the pizza dough into a large greased bowl. Cover it with plastic wrap and set the bowl in a warm place. Gluten-free dough does not rise as much as gluten dough. Instead, you are looking for the dough to hydrate fully and increase in size by about one-third. When the dough has risen a bit and has the texture of traditional dough, about 1 1/2 hours, you're ready to bake.
  • Preparing to bake: Heat the oven to 500 degrees F. If you have a pizza stone - and we recommend you do - put it in the oven now.
  • If you own a pizza peel, lay down a piece of parchment paper on it now. If you don't own one, put the parchment paper on a pizza pan or baking sheet. Put the dough down on the parchment paper then top it with another one the same size. Using your hands or a rolling pin, flatten the dough slowly and evenly. You want a pizza dough about 12 inches in diameter. Take the top piece of parchment paper off the pizza dough.
  • Sprinkle some olive oil over the top of the dough. Bake the dough in the oven until the edges are starting to brown and crisp and the top of the pizza is a little firm to the touch, 5 to 8 minutes.
  • Pull out the pizza dough and top with whatever toppings you desire.
  • Pour all the flours into a large container. (Restaurant supply stores sell large plastic containers that fit this purpose well. You could also use a large glass jar.) Shake and shake and shake harder until all the flours have become one color.

GLUTEN-FREE PIZZA

Gluten-free pizza image

Make our gluten-free version of a classic pizza. The base is easy, spread over rich homemade tomato sauce, then finish with buffalo mozzarella and fresh basil

Provided by Esther Clark

Categories     Lunch

Time 55m

Number Of Ingredients 13

400g gluten-free bread flour
2 heaped tsp golden caster sugar
2 tsp gluten-free baking powder
1 tsp fine salt
1 heaped tsp xanthan gum
5 tbsp olive oil
2 tbsp olive oil
1 small onion, finely chopped
1 x 400g can chopped tomatoes
2 tbsp tomato purée
1 tsp caster sugar
½ small bunch basil, leaves shredded
2 x 125g balls buffalo mozzarella

Steps:

  • Heat the oven to 220C/200 fan/gas 7 and put two baking sheets inside.
  • Make the sauce: heat the oil in a small saucepan and cook the onion with a generous pinch of salt for 10 mins over a low heat until softened. Add the chopped tomatoes, purée and sugar and bring to a gentle simmer. Cook, uncovered, for 25 - 30 mins or until reduced and thick, stirring regularly. Blitz the sauce with a hand blender until smooth. Season to taste and stir through the basil. Allow to cool a little.
  • Make the dough: mix the flour, sugar, baking powder, salt and xanthan gum in a large mixing bowl. Make a well in the centre and pour in 250ml warm water and the olive oil. Combine quickly with your hands, to create a thick, wet, paste-like texture, adding an extra 20ml warm water if the dough feels a little dry. Store in an airtight container or covered bowl in the fridge for up to 24 hours before using. Lightly flour two more baking sheets. Split the dough into two and flatten with your fingers into 20 - 25cm rounds on the sheets.
  • Finish the bases with a thin layer of the sauce and torn up mozzarella. Place the baking sheets on top of the hot baking sheets in the oven and cook for 8 -10 mins or until crisp around the edges.

GLUTEN-FREE PIZZA (HERTZBERG & FRANCOIS OLIVE OIL BREAD)

Gluten-Free Pizza (Hertzberg & Francois Olive Oil Bread) image

Full credit and thanks for this recipe goes to Jeff Hertzberg & Zoe Francios, since it comes from thier "Healthy Bread in Five Minutes a Day". I'm posting it for friends in the Celiac Disease/Gluten-Free community here on Recipezaar, who love pizza but need a GF version!! This recipe is also potato-free, for those who have additional food allergies. They include a second pizza dough recipe in the book, which I have also posted (Recipe #403323 #403323). A significant advantage to this recipe over the other GF pizza recipes (there's one on recipezaar and several on a number of other websites) is that it is free of the need to knead and the dough can last for 7 days refrigerated. I haven't tried freezing it yet ... will update recipe with info once I try. Makes 4 lbs of dough, roughly 8 14" pizzas; don't know how many mini-pizzas (bagel/muffin size -- 3" diameter ) it can do, but I would estimate about 16 per 1/4 lb dough or 128 for the full 4 lb dough recipe as written. The prep time is estimated assuming you have made the dough previously (i.e, it is refrigerated and you are starting at step 8). If you are making the dough from scratch for immediate use (i.e., starting from step 1), the prep time is about 2 1/2 hours additional, of which only 1/2 hour is active chef prep. The nutritional analysis is for the dough only and doesn't include the pizza toppings.

Time 47m

Yield 8 12, 64 serving(s)

Number Of Ingredients 13

1 cup brown rice flour
1/2 cup soy flour
1 cup tapioca starch (may be labeled tapioca flour)
3 1/2 cups cornstarch
2 tablespoons granulated yeast
1 tablespoon kosher salt (adjust to taste)
2 tablespoons xanthan gum
2 1/2 cups water, lukewarm
4 large eggs
2/3 cup olive oil
2 teaspoons white vinegar (can substitute cider vinegar)
pizza toppings (your choice)
6 tablespoons rice flour (for dusting ( your choice, white or brown rice)

Steps:

  • To make the dough (enough for 8 pizzas) --.
  • Use a container (at least 5 quart capacity) you can cover, but is not airtight.
  • Mix together all the dry ingredients (rice flour through xantham gum).
  • In a separate bowl, mix the liquid ingredients (water through vinegar).
  • Gradually mix the liquid ingredients into the dry ingredients -- no need to knead -- you can use a spoon, a food processor with dough hook, or a stand mixer with paddle.
  • Cover (not airtight) and allow the mixture to rest at room temperature for about 2 hours.
  • Can be used at this point after the rest (go to step 9), but it's best after a 24 hour rest; alternately, you can refrigerate it, covered, but not airtight and use over the next 7 days.
  • On baking day --.
  • Prepare a pizza peel (or a pizza pan, greased cookie sheet or a silicone baking mat), either sprinkled with cornmeal or rice flour or lined with parchment paper.
  • In your oven, put the rack in the middle space and put a baking stone on it in the middle space if you have one; otherwise use a cookie sheet, pizza pan, or a silicone mat.
  • Thirty minutes before baking, preheat the oven to 500 degrees F.
  • Wet your hands slightly -- keep your hands moist so you can work with the dough, but not so wet that the dough becomes soggy.
  • Take an orange-sized piece of the dough (about 1/2 pound) and quickly shape it into a ball (no gluten, so no stretching).
  • Dust as needed to keep it from being sticky, but no so much that you're working lumps of flour into the dough.
  • This dough will be sticky, so use a metal dough scraper and be generous in dusting the peel, the roller, the dough, etc.
  • Roll out the dough (hands or a rolling pin, but remember, no gluten, so no stretch in this dough) 1/8 - 1/16 inch thich, directly on the pizza peel or silicone mat (or roll out, then transfer to the cookie sheet).
  • Add toppings of your choice (you should have them all prepared and ready to go -- the faster this dough gets into the oven, the better the pizza will be).
  • Slide the pizza onto the stone or into the oven.
  • Check for doneness in 10-12 minutes.
  • May need to be turned to brown evenly; may need up to 5 more minutes to complete baking.
  • Cool slightly on a rack before serving.
