1 pouch (1 lb 1.5 oz) Betty Crocker™ chocolate chip cookie mix
1/2 cup butter or margarine, softened
1 egg
1/2 cup coarsely chopped pecans
24 caramels, unwrapped
1 tablespoon milk
3/4 cup pecan halves
3 tablespoons semisweet chocolate chips
1 teaspoon shortening

Steps:

  • Heat oven to 350°F. In medium bowl, stir together cookie mix, butter, egg and 1/2 cup chopped pecans until soft dough forms. Press evenly in ungreased 8-inch square pan. Bake 28 to 33 minutes or until golden brown.
  • Meanwhile, in 1-quart saucepan, heat caramels and milk over low heat, stirring frequently, until melted and smooth. Remove from heat.
  • Carefully spread melted caramels evenly over warm bars; sprinkle with pecan halves. Cool completely on cooling rack, about 1 hour.
  • In small microwavable bowl, microwave chocolate chips and shortening uncovered on High 30 to 60 seconds, stirring every 15 seconds, until melted and smooth. Drizzle over bars. Let stand about 30 minutes or until chocolate is set. For bars, cut into 4 rows by 4 rows.

Butter, vanilla and egg called for on cookie mix box
1 cup chopped pecans
40 caramels, unwrapped
1/3 cup whipping cream
1/3 cup chopped pecans
1 bag (12 oz) semisweet chocolate chips (2 cups)
1/3 cup whipping cream
1/4 cup chopped pecans

Steps:

  • Heat oven to 350°F. Make cookie mix as directed on box, using butter, vanilla and egg. Stir in 1 cup pecans. In ungreased 13x9-inch pan, press dough evenly. Bake 18 to 20 minutes or until light golden brown. Cool about 30 minutes.
  • In medium microwavable bowl, microwave caramels and 1/3 cup whipping cream uncovered on High 2 to 4 minutes, stirring twice, until caramels are melted. Stir in 1/3 cup pecans. Spread over cooled based. Refrigerate 15 minutes.
  • In another medium microwavable bowl, microwave chocolate chips and 1/3 cup whipping cream uncovered on High 1 to 2 minutes, stirring every 30 seconds, until chocolate is smooth. Pour over filling. Sprinkle with 1/4 cup pecans. Refrigerate 2 hours or until set.
  • To serve, let stand at room temperature 10 minutes before cutting. Cut into 8 rows by 6 rows. Store covered in refrigerator.

1 Box/Bag/ Recipe of your favorite cookie mix. I like Pamela's GF Chocolate Chip Cookie Mix.
Ingredients as called for on the mix
1 cup chopped pecans (I toast these)
Filling
40 caramels, unwrapped
1/3 Cup whipping cream
1/3 Cup chopped pecans (toasted)
Topping
1 bag (12 oz) semisweet chocolate chips (Ok, I use milk chocolate because I like them better)
1/3 cup whipping cream
1/4 cup chopped pecans (toasted) Ok, so I used whole ones.

Steps:

7 ounces sweetened flaked coconut, divided
1 cup butterscotch chips
6 ounces semisweet chocolate chips
8 ounces unsalted peanuts
½ cup sliced almonds
1 (14 ounce) can sweetened condensed milk

Steps:

  • Preheat oven to 350 degrees F ( 175 degrees C ). Generously grease one 13x9-inch baking pan.
  • Spread 2/3 of the flaked coconut evenly on the bottom of the baking pan. Sprinkle the butterscotch morsels, chocolate chips, and peanuts evenly over the coconut layer. Pour condensed milk evenly over the whole pan. Top with sliced almonds and remaining coconut.
  • Bake in preheated oven for 20 minutes. Cool completely before cutting into squares.

1 cup white vanilla baking chips
1 cup milk chocolate or semisweet chocolate chips
1 cup flaked coconut
1 cup chopped walnuts

Steps:

  • Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray. In large bowl, stir cookie mix, butter and egg until soft dough forms (dough will be crumbly). Using fingers, press dough in bottom of pan. Bake 15 minutes.
  • Drizzle condensed milk evenly over baked crust. Sprinkle with white chips, chocolate chips, coconut and walnuts.
  • Bake 30 to 35 minutes or until light golden brown. Cool completely, about 2 hours. For bars, cut into 6 rows by 6 rows.

1/2 cup butter, softened
1 cup packed brown sugar
2 cups all-purpose flour
1 cup pecan halves
TOPPING
2/3 cup butter, cubed
1/2 cup packed brown sugar
1 cup semisweet chocolate chips

Steps:

  • In a large bowl, beat butter and sugar until smooth. Gradually add flour; beat until crumbly. Press firmly into an ungreased 13-in. x 9-in. baking pan. Arrange pecans over crust. , In a small heavy saucepan, combine butter and brown sugar. Bring to a boil; boil for 1 minute or until smooth, stirring constantly. Pour over pecans. , Bake at 350° for 18-22 minutes or until bubbly. Sprinkle chocolate chips on top; Cool in pan on a wire rack for 3 minutes. Spread chocolate but allow some chips to remain whole. Cool completely; cut into small squares.

25 caramels, unwrapped
2 tablespoons whipping cream
1 cup semisweet chocolate chips
1/2 cup coarsely chopped pecans

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom of (8- or 9-inch) square pan. In medium bowl, stir together brownie mix, butter and eggs until blended. Spread 2/3 of batter in pan. Bake 10 minutes.
  • Meanwhile, in medium microwavable bowl, microwave caramels and whipping cream uncovered on High 1 to 2 minutes, stirring every 30 seconds, until smooth. Drizzle caramel evenly over partially baked brownie. Sprinkle with half the chocolate chips and half the pecans. Drop remaining brownie batter by small spoonfuls onto caramel layer. I did a combination of two recipes, peanut butter cookies with three ingredients and magic cookie bars. My brother-in-law loves magic cookie bars but is now gluten-free. I have been trying to come up with desserts for him so he doesn't feel left out. This is an amazing dessert and will stay fresh for days...if they last that long in your house! Perfect for Passover - no flour!

2 cups white sugar
2 large eggs
2 cups peanut butter
¾ cup semisweet chocolate chips
¾ cup dark chocolate chips
½ cup chopped raw pecans
½ cup chopped raw almonds
1 cup flaked coconut
1 (14 ounce) can sweetened condensed milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 9x13-inch glass baking dish with parchment paper.
  • Mix sugar and eggs together in a bowl until smooth; stir in peanut butter until well blended. Pour peanut butter mixture into the prepared baking dish.
  • Bake in the preheated oven until cookie base is partly cooked, 8 minutes.
  • Layer semisweet chocolate chips, dark chocolate chips, pecans, almonds, and coconut onto the cookie base. Slowly pour sweetened condensed milk evenly over the toppings.
