Quick Cornmeal Pizza Crust (Gluten-Free) image

This gluten-free pizza crust has a whole lot of satisfying crunch, thanks to the cornmeal and almond flour in the dough. The recipe has one big advantage over traditional pizza crust recipes, too. Because it is made with baking powder instead of yeast, it requires no kneading or rising time, so you can have homemade pizza ready to serve in under an hour. Parchment paper is put to good use here as it keeps the dough from sticking to the work surface and the pan (no greasing necessary!), plus the parchment squares makes it easier to move the relatively fragile dough disks from work surface to baking sheet.

1 cup gluten-free oat flour
⅔ cup fine cornmeal, plus more for dusting the pan
6 tablespoons almond flour
1½ tablespoons ground flaxseeds
1 teaspoon baking powder
½ teaspoon sea salt
¼ teaspoon ground cumin (optional)
1 cup unflavored plant-based milk, lukewarm (100˚F), plus more to brush the crust
2 tablespoons fresh lime juice (from 1 lime)

Steps:

  • Preheat the oven to 400°F. Prepare two 10-inch squares of parchment paper.
  • Whisk together the oat flour, cornmeal, almond flour, ground flaxseed, baking powder, salt, and cumin (if using) in a large bowl.
  • Add the milk and lime juice, and knead lightly with your hands until the mixture forms a stringy but not sticky dough. Divide the dough into two rounds.
  • To make the pizza crusts, lay one parchment square on a clean work surface, and sprinkle with cornmeal. Place one round of dough on the parchment square, sprinkle it with more cornmeal, and roll it out to a 6-inch disk with a rolling pin. (The rolled-out dough should be about ⅛ inch thick.) Gently push around the edges of the dough with your hands to build up a slight edge, if desired. Slide the parchment and dough disk onto the prepared baking sheet. Repeat with the remaining dough.
  • Lightly brush the tops of the crusts with milk using a pastry brush or a small spatula. Bake for 20 minutes, or until the top of the crust(s) is dry and crisp.
  • Top the crusts with your desired pizza sauce and toppings. Return the pizzas to the oven and bake for 20 minutes, or until the toppings are hot and cooked through.

This easy gluten free cornbread recipe can be made naturally gluten free with all cornmeal and no other flours. Use it to make muffins, too!

2 cups coarsely ground yellow cornmeal ( (See Recipe Notes))
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
1 1/2 cups plain yogurt (at room temperature (can substitute an equal amount of buttermilk or half sour cream/half whole milk))
4 tablespoons unsalted butter (melted and cooled)
1 egg (at room temperature, beaten)
4 tablespoons honey

Steps:

  • Preheat your oven to 400°F. Grease a 12-inch cast iron skillet or an 8-inch square or round pan, and set it aside.
  • In a large bowl, place the cornmeal (See Recipe Notes), baking powder, baking soda, and salt, and whisk to combine well. In a separate bowl, place the yogurt (or buttermilk or sour cream and milk mixture), butter, and egg, and whisk to combine well.
  • Create a well in the dry ingredients and pour in the wet ingredients and the honey. Mix until just combined. The mixture will be relatively thin (thinner if you used buttermilk). Pour the mixture into the prepared pan.
  • Bake for 20-30 minutes (closer to 20 minutes if using a cast iron skillet, closer to 25 minutes if you made the all purpose gluten free flour variation), or until lightly golden brown on top, golden brown around the edges, and firm to the touch in the center. Slice and serve immediately.

This is another recipe from Judith Fertig's book 200 Fast & Easy Artisan Breads. I have never made it, but am posting it by request. The master recipe is already dairy free, and you can use an egg substitute if you need to. It is the assortment of flours & other ingredients that is supposed to give you a finished product that resembles a wheat bread. The recipe notes that the dough is unique, at first it will resemble a very wet batter. After an hour it will thicken to the consistency of brownie batter. After 2 hours it rises to about 1 inch from the top of the bowl & looks like cornbread batter or golden mashed potatoes. The raw dough doesn't taste like a yeast bread dough. I will create a gluten-free recipe book in my shared cookbooks that will include all of the gluten-free recipes from this book. If you don't have a baking stone, you can still make artisan breads, just make sure your oven has preheated for at least 30 minutes & add the 2 cups of water to a broiler pan."

2 cups brown rice flour (stone ground)
2 cups tapioca flour (or potato starch)
2 cups yellow cornmeal
1 cup cornstarch (or corn flour)
2 tablespoons xanthan gum
2 tablespoons instant yeast (or bread machine yeast)
1 tablespoon salt (fine table, or kosher)
1 tablespoon white pepper (freshly ground)
1 tablespoon black pepper (freshly ground)
1 tablespoon sugar (white, table)
6 eggs (or equivalent substitute)
1/3 cup packed brown sugar (light or dark)
2 cups lukewarm water (mix 1 cup hot tap water & 1 cup cold tap water to get lukewarm temp of about 100 F )
1 cup canned pumpkin puree (not pumpkin pie filling)
1/3 cup vegetable oil
2 teaspoons cider vinegar

Steps:

  • Measure flours and cornstarch into 16 cup bowl, whisk to combine well.
  • Whisk in xanthan gum, yeast, white sugar, salt & peppers.
  • Lightly beat eggs in a separate bowl, add brown sugar, water, pumpkin, oil & vinegar to the eggs. Whisk to combine.
  • Add wet ingredients to flour mixture, and whisk until a smooth, very loose, batter-like dough forms.
  • Cover bowl with plastic wrap (or a shower cap) & let rise at room temperature for 2 hours or until the dough has nearly risen to the top of the bowl & has a thick, golden, mashed potato-like appearance.
  • Use immediately, or refrigerate for up to 3 days before baking.
  • For 1/2 a recipe of dough grease a 9 x 5 loaf pan, or scoop about 1/3 cup of batter into each of 12 greased muffin cups, cover with a teatowel & let rest at room temp for 40 minutes.
  • For artisan baking, preheat oven to 350°. Heat baking stone on middle rack & broiler pan on lower rack for about 30 minutes while preheating oven.
  • Pour 2 cups hot water into broiler pan. Place loaf pan or muffin pan on hot stone. If making 2 loaves, place pans at least 3" apart on baking stone.
  • Bake rolls for 22 - 25 minutes, loaves for 27 - 30 minutes, till crust is medium dark brown. Instant read thermometer inserted in center should read at least 190° F, or 90°C.
  • Cool in pans on wire rack for 10 minutes. Remove from pans & let cool on rack.

1 cup white rice flour
1/2 cup tapioca flour
1/4 cup potato starch flour
1/2 cup cornmeal
2 tablespoons sugar
1 teaspoon xanthan gum
1/2 teaspoon salt
1/4 teaspoon pumpkin pie spice
1/2 cup very cold butter, cut into 1/2-inch pieces
1/4 cup very cold shortening, cut into 1/2-inch pieces
1/4 cup ice water
5 cups fresh blueberries (about 1 1/2 lb)
1/2 cup sugar
1/3 cup cornstarch
1 jar (12 oz) gluten-free blueberry preserves
1/4 cup butter, cut into small pieces
1 teaspoon grated lemon peel
1 tablespoon fresh lemon juice
1/8 teaspoon salt
1 egg, separated
1 tablespoon milk
1 tablespoon sugar

Steps:

  • In food processor, place flours, cornmeal, 2 tablespoons sugar, the xanthan gum, 1/2 teaspoon salt and the pumpkin pie spice. Cover; pulse, using quick on-and-off motions, until blended. Add 1/2 cup butter and the shortening. Cover; pulse until coarse crumbs form, about 5 seconds. Add water; pulse just until dough comes together. Divide dough in half; flatten each into a disk. Wrap in plastic wrap; refrigerate until firm.
  • In large bowl, toss blueberries, 1/2 cup sugar, the cornstarch, preserves, 1/4 cup butter, lemon peel, lemon juice and 1/8 teaspoon salt; set aside.
  • Line cookie sheet with foil; place on lower oven rack to catch any drips. Heat oven to 375°F. Unwrap 1 dough disk (keep remaining dough refrigerated until ready to use). Between 2 sheets of cooking parchment paper generously sprinkled with rice flour, roll dough into 12-inch round about 1/4 inch thick. Carefully peel off top piece of parchment paper; replace paper and turn round over. Peel off parchment paper from second side of dough and discard.
  • Place upside-down 9-inch glass pie plate on dough round. Turn plate with dough over; remove parchment paper and discard. Pat dough into plate, pressing together any cracks or tears. In small bowl, beat egg white. Brush over dough. Spoon filling into crust-lined plate.
  • Unwrap second dough disk. Between 2 sheets of cooking parchment paper generously sprinkled with rice flour, roll dough into 12-inch round about 1/4 inch thick. Carefully peel off top piece of parchment paper; invert dough onto filling. Peel off parchment paper from second side of dough and discard. Using sharp knife, trim crusts even with edge of plate; crimp edge with fork to seal. Cut vents in top crust. In small bowl, beat egg yolk and milk. Brush over dough. Sprinkle with 1 tablespoon sugar.
  • Bake 1 hour to 1 hour 10 minutes or until crust is golden and filling is bubbly. Cool completely on cooling rack, about 2 hours.
