1 cup all-purpose flour
1/2 cup whole wheat flour
1-1/2 tsp. baking powder
1 tsp. ground ginger
1/2 tsp. baking soda
3 pears, peeled, chopped (about 2 cups)
1/2 cup granulated sugar
1/4 cup packed brown sugar
1/4 cup butter, melted
1 egg, beaten
1 cup fresh cranberries

Steps:

  • Heat oven to 350°F.
  • Combine flours, baking powder, ginger and baking soda in medium bowl. Toss pears with sugars and butter in large bowl. Add egg; mix lightly. Add flour mixture; stir just until moistened. (Batter will be thick.) Gently stir in cranberries.
  • Pour into greased and floured 8x4-inch loaf pan.
  • Bake 1 hour or until toothpick inserted in center comes out clean. Cool bread in pan 10 min. Remove to wire rack; cool completely.

2 cups fresh cranberries
1 can (14 ounces) whole-berry cranberry sauce
1 cup sugar
1 cup water
1/2 cup sweet white wine
1/4 teaspoon coconut extract
CUSTARD:
1 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
3 cups 2% milk
6 large egg yolks, beaten
1/4 teaspoon coconut extract
CAKE:
1 frozen pound cake (16 ounces), thawed
3 tablespoons sweet white wine, optional
1/2 cup slivered almonds, toasted
Whipped cream
Additional fresh cranberries and toasted slivered almonds

Steps:

  • In a large saucepan, combine cranberries, cranberry sauce, sugar and water. Bring to a boil, stirring to dissolve sugar. Reduce heat to medium; cook, uncovered, until thickened, 10-15 minutes. Add wine and extract. Remove from heat; cool completely., For custard, mix sugar, cornstarch and salt in another large saucepan; gradually whisk in milk until smooth. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2-3 minutes longer. Remove from heat., In a small bowl, whisk a small amount of hot mixture into egg yolks. Return all to pan, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. Stir in coconut extract. Cool 30 minutes. Refrigerate, covered, for 1 hour., To assemble, cut cake into 1-in. cubes. In a 3-qt. trifle bowl or other glass serving dish, place half of the cake cubes; sprinkle with wine if desired. Layer with half of the almonds, cranberry mixture and custard. Repeat layers. Refrigerate, covered, until serving. Top with whipped cream, additional cranberries and toasted almonds.

1 (12 ounce) package fresh cranberries
1 large Bosc pear, peeled and diced
1 cup fresh orange juice
1 cup white sugar
¼ cup water
2 ounces candied ginger, minced
1 orange, zested
1 whole star anise pod
1 cinnamon stick
½ teaspoon garam masala
¼ teaspoon salt

Steps:

  • Combine cranberries, diced pear, orange juice, sugar, water, candied ginger, orange zest, star anise, cinnamon stick, garam masala, and salt in a large saucepan over medium-high heat. Bring to boil, reduce heat to medium, and simmer, stirring occasionally, until cranberries have softened, 10 to 12 minutes. Remove from heat and allow to cool completely.
  • Remove cinnamon stick and star anise. Chill until ready to serve.

1 cup finely crushed gingersnap cookies
1/4 cup packed brown sugar
1/4 cup granulated sugar
1/4 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, melted
4 pounds pears, peeled, cored and sliced 1/4 inch thick (8 to 10 medium)
1 1/2 cups chopped dried cranberries
1 cup granulated sugar
1/4 cup cornstarch
2 teaspoons orange zest plus 2 tablespoons orange juice
1 teaspoon vanilla extract
Butter, softened, for buttering the baking dish

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crumble: Mix the flour, gingersnap crumbs, brown sugar, granulated sugar and salt in a large bowl. Stir in the melted butter until the mixture has a crumbly texture.
  • For the filling: In a separate large bowl, combine the pear slices, cranberries, granulated sugar, cornstarch, orange zest and juice and vanilla.
  • Brush a 2-quart baking dish with softened butter. Pour the fruit mixture into the bottom of the prepared dish, and sprinkle the gingersnap crumble evenly over the top. Bake until golden brown and bubbly, 40 to 45 minutes.

3 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons ground ginger
1/2 teaspoon ground cinnamon
Pinch kosher salt
3/4 cup (1 1/2 sticks) butter, softened
1/4 cup granulated sugar
1/4 cup real maple syrup
1/4 cup molasses
1 large egg
1/4 cup store-bought honey-pear shrub (see Cook's Note)
3 cups heavy whipping cream, cold
3 tablespoons confectioners' sugar
1 cup mascarpone cheese, softened

Steps:

  • Preheat the oven to 350 degrees F. In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon and salt.
  • In a large bowl, cream the butter and sugar until light and fluffy. Add the maple syrup, molasses and egg, beating to combine. Gradually add the flour mixture into the egg mixture and continue beating until the dough comes together.
  • Line 2 baking sheets with parchment paper. Form the dough into 1-inch balls and evenly space and arrange on the baking sheets. Bake until very dark, rotating halfway through the cooking time, 10 to 12 minutes. Remove and allow to cool. Drizzle the cooled cookies with the honey-pear shrub.
  • In a large glass bowl, combine the whipping cream and confectioners' sugar and whip until it holds soft peaks. Add the mascarpone and whip to combine.
  • Spread some of the cream mixture on the bottom of a trifle dish and top with some of the ginger cookies. Spread more of the cream mixture over the cookies, and then top that with more cookies and cream. Garnish with any extra cookies you may have. Chill completely before serving.

2 1/2 cups half-and-half
3 tablespoons cornstarch

Steps:

  • Make gingerbread: Preheat oven to 350°. Butter an 8- by 8-in. baking pan. In a medium bowl, mix flour, baking soda, cinnamon, 1 teaspoons ground ginger, the cloves, and 1/2 teaspoons salt. In a large bowl, whisk 3/4 cup granulated sugar with 1 egg until thick and pale.

2 tablespoon finely chopped crystallized ginger
1 package Lady Finger Cookies
Pear Brandy
GINGER VANILLA CUSTARD:
3 cup whole milk or half-and-half
8 Large egg yolks
3/4 cup sugar
1/2 - 1/3 cup flour
pinch of salt
2/3 teaspoon grated ginger
1 teaspoon vanilla

WHIPPED CREAM:
2 - 2 1/2 cup heavy cream
1 teaspoon vanilla extract
4 tablespoon granulated sugar
Garnish:
1/2 cup toated pecans
2 tablespoon ginger chews

Steps:

  • LADY FINGERS: Soak cookies in pear brandy until soft. FOR THE PEAR AND CRANBERRY COMPOTES: In a skillet, melt 3 tablespoons butter over med-high heat. Add pears and salt, stirring occasionally for about 10 mins. Add 3 tablespoons water to the pan, remove from the heat, and stir to incorporate some of the brown bits from the bottom of the pan. In another pan, add half cranberries,maple syrup, cinnamon, a pinch of salt, and 2 tablespoons water. Bring to a boil over med-high heat, lower the heat to med low, and simme and most of the cranberries have popped, about 2 minutes. Add the remaining cranberries and simmer until about half of the new cranberries have popped, 2-3 minutes. remove pan from heat and stir in 2 tablespoons ginger. Let cool Keep pears and cranberries seperate; CUSTARD: Heat milk in a pan over med-high heat with the ginger until warm. Set aside until lukewarm. In a bowl, whisk the egg yolks, vanilla and sugar until smooth and thick. Whisk in the flour and salt. Slowly pour in warm milk while whisking egg-sugar mixture. Transfer the mixture back to the pan. Cook the mixture over medium heat, stirring constantly so the bottom doesn't scorch. It will quickly start to thicken to the consistency of pudding. Continue stirring for 1-2 minutes longer. Strain into clean bowl removing any lumps. cover with plastic wrap and refrigerate. LADY FINGERS: Soak the lady fingers in pear brandy WHIPPED CREAM: Whip heavy cream and 1 teaspoon vanilla until it begins to thicken, about 1 minute. Slowly sprinkle 4 tablespoons sugar and continue whipping until soft peaks form. Assembly: Layer the the lady fingers, followed by the pastry cream, cranberries, pears, whipped cream, and repeat layers in this order. Top with toasted pecans and ginger chews.
