CHINESE EGGPLANT DIP

4 medium eggplant
2 tablespoons vegetable oil
4 teaspoons sesame oil
6 cloves garlic, minced
4 tablespoons chopped fresh ginger
6 scallions, trimmed and minced
1/2 teaspoon dried red-pepper flakes
7 tablespoons soy sauce
3 tablespoons light brown sugar
2 tablespoons rice-wine vinegar
2 tablespoons lemon juice
4 tablespoons chopped cilantro

Steps:

  • Preheat the oven to 425 degrees.
  • Place the eggplant on a baking sheet, and prick them in several places with a fork to allow steam to escape. Pour 1 tablespoon of the vegetable oil into your hands, and rub the eggplant. Roast them until soft, for 30 to 40 minutes, turning once halfway through the cooking. Remove from the oven, and set aside until the eggplant are cool enough to handle.
  • When cool, cut off the stems, and peel the eggplant. Place the pulp in a food processor, and process until smooth. Set aside.
  • Heat the remaining vegetable oil, along with the sesame oil, in a skillet over medium-high heat. Add the garlic, ginger, scallions and red-pepper flakes; cook quickly, stirring constantly, for 1 minute.
  • In a small bowl, whisk together the soy sauce, brown sugar and vinegar. Add to the skillet, and bring to a boil. Stir in the eggplant, and simmer for 3 minutes. Remove from the heat, and stir in the lemon juice and cilantro. Serve warm, at room temperature or chilled.

1 teaspoon extra virgin olive oil
1 cup chopped onions
2 tablespoons minced ginger
2 tablespoons minced garlic
1 1/2 pounds unpeeled eggplant, cut into 1/4 -inch cubes
1/4 cup ponzu sauce (see note)
1/2 to 1 teaspoon Asian chili-garlic sauce or sambal
2 teaspoons toasted sesame oil
4 tablespoons chopped fresh cilantro
Cooked brown rice, for serving

Steps:

  • Heat a large nonstick skillet over medium-high heat. Add olive oil, then add onions, ginger and garlic. Cook, stirring, about 2 minutes. Add eggplant and cook, stirring, until lightly browned and tender, 8 to 10 minutes.
  • Add 6 tablespoons water, the ponzu, chili-garlic sauce, sesame oil and half the cilantro. Reduce heat to medium, cover and cook, stirring occasionally, until eggplant is tender and liquid is absorbed. Serve hot, on brown rice, sprinkled with remaining cilantro.

1/4 cup water chestnuts (or peeled Jicama), finely chopped

  • Mix all ingredients well. Chill and serve with vegetables.

1 large eggplant
4 tablespoons grapeseed oil, plus more for oiling the eggplant
2 tablespoons grated ginger
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon ground fennel
1/2 teaspoon ground cardamom
1/2 teaspoon smoked paprika
A pinch of salt
A pinch of pepper
3 tablespoons ground almonds
2 tablespoons chopped cilantro
1 tablespoon mayonnaise
Serving suggestions: carrot sticks, trimmed green beans, trimmed asparagus spears, bread sticks or crispy flat bread.

Steps:

  • Preheat the oven to 350 degrees F.
  • Cut the eggplant in half lengthwise, oil the cut sides and place on a baking sheet. Bake until very soft, 45 minutes to an hour. When cool enough to handle, scoop the pulp out with a large spoon and reserve.
  • Place a skillet over medium heat and add the oil. When it's hot, add the ginger, coriander, cumin, fennel, cardamom, paprika, salt and pepper and cook for 1 minute. Add the almonds and stir well, letting them toast a bit in the hot oil. Scrape into a bowl, add the eggplant pulp, cilantro and mayonnaise and mix gently. Serve with cut vegetables, bread sticks or flat bread.

2 medium eggplants (about 1 pound each), halved lengthwise
1 tablespoon olive oil
1 tbsp finely chopped or pressed garlic
1 teaspoon ground cumin
1/4 cup finely chopped red bell pepper
1/4 cup chopped fresh parsley
1tbsp minced peeled fresh ginger
Pita bread cut into wedges, toasted or other dippers

Steps:

  • Preheat oven to 400 F. Brush cut sides of eggplant halves with 1/2 tablespoon olive oil. Arrange cut sides down on baking sheet. Bake for about 50 minutes, until the eggplant is very soft. Cool slightly. Scoop eggplant from shell and chop finely or mash. Combine remaining 1/2 tablespoon oil and garlic in a heavy skillet over low heat and cook until fragrant, for about 1/2 minute. Stir in cumin. Add eggplant, bell pepper, parsley and ginger. Cook until heated through, about 4 minutes. Season to taste with salt and pepper. Cool to room temperature and serve with pita bread. (Can be prepared 1 day ahead. Cover and refregerate.)

GRILLED GARLIC EGGPLANT DIP

3 eggplants
1 head garlic
Olive oil
Kosher or sea salt
1/4 cup parsley, minced

Steps:

  • Wash and dry eggplants. Peel garlic and set aside. If the cloves are very large, cut in half. Make multiple 1/2-inch slits in the eggplant and stud with garlic. Push towards the center of the eggplant so the garlic is not sticking out. When done, coat eggplant with olive oil and sprinkle with salt.
  • Place in the center of the cooking grate until the eggplants have collapsed and are soft. You will need to turn occasionally. This will take approximately 30 minutes, depending on the size of the eggplants. When very soft, cut in half and scrape flesh and garlic from skin. Mash with a fork and mix in enough olive oil to make creamy. Season with salt, pepper and parsley. Serve with pita wedges or flatbread.

ROASTED EGGPLANT AND GARLIC DIP WITH PARSLEY

1 large eggplant (about 1 1/2 pounds)
1 teaspoon olive oil plus additional for coating eggplant
1 large head garlic, unpeeled
4 teaspoons fresh lemon juice, or to taste
1/3 cup well-stirred tahini (sesame seed paste)*
3/4 cup finely chopped fresh parsley leaves
pita wedges, toasted if desired
*available at specialty food shops, natural food stores, and some supermarkets

Steps:

  • Preheat oven to 450°F.
  • Prick eggplant with a fork several times and on a baking sheet rub with just enough oil to coat.
  • Cut off and discard top quarter of garlic head to expose cloves and set garlic in middle of a large piece of foil. Drizzle garlic with 1 teaspoon oil and enclose completely in foil. Place foil packet next to eggplant on baking sheet and roast in middle of oven, turning eggplant after 30 minutes, 45 to 50 minutes, or until eggplant is very soft and collapsed. Unwrap garlic carefully and cool eggplant and garlic on baking sheet.
  • Transfer eggplant to cutting board. Cut off and discard stem end and halve eggplant lengthwise. Scoop flesh out into a bowl, scraping as close to skin as possible. Pour off any liquid accumulated in bowl.
  • Squeeze roasted garlic from skins into a food processor. Add eggplant, lemon juice, tahini, parsley, and salt to taste and blend until smooth and parsley is minced fine. Dip may be made 1 day ahead and chilled, covered.
  • Transfer dip to a bowl and serve with pita wedges.

JULIA CHILD'S EGGPLANT-WALNUT DIP

This recipe from the second volume of "Mastering the Art of French Cooking" is nontraditional but very Julia Child, with her famous love of cocktail snacks. Caviar d'aubergines, fluffy eggplant caviar, is popular in the South of France, but this one contains raw ginger and hot sauce, two of the least-French ingredients imaginable. Feel free to tinker with the spices (cumin and coriander are also good) and the heat level. This dip ripens very well over a few days in the refrigerator. Taste and re-season before serving.

2 firm, shiny eggplants (about 2 pounds total)
1 cup finely chopped toasted walnuts
1 to 3 garlic cloves, smashed, peeled and minced or put through a press
1 teaspoon freshly grated ginger
1/4 teaspoon ground allspice (or another warm spice or spice blend, like cinnamon, coriander or garam masala)
Salt and freshly ground black pepper
Hot sauce, such as Tabasco
5 to 8 tablespoons extra-virgin olive oil

Steps:

  • Heat oven to 425 degrees. Cut green caps off eggplants and place them whole in a baking dish. Bake until very soft and collapsing, 30 to 35 minutes. When cool enough to handle, scrape flesh into the bowl of a mixer (or use a hand mixer).
  • Beat at high speed for about two minutes, until smooth and fluffy. Add walnuts, garlic, ginger, allspice, two big pinches of salt and one of pepper. Shake in a few dashes of hot sauce. Mix well.
  • With the mixer running, gradually drizzle in oil, as if making mayonnaise, just until mixture is emulsified and creamy. Stop, taste and adjust the seasonings with salt, pepper and hot sauce. If desired, beat in remaining olive oil.
  • Serve immediately, or cover and refrigerate for up to one week.

Steps:

  • Recipe directions lets you know what to do with the ginger.
  • Put all ingredients except oil into 4 or 5 quart slow cooker.
  • Drizzle oil over everything; mix thoroughly.
  • Cook on low for 5 hours. If eggplant begins to look dry while cooking, drizzle a little more oil into the slow cooker.
  • Serve with roti, naan or rice.

  • GRILL EGGPLANT: Heat grill to high. Pierce eggplant in several spots with a sharp knife. Place eggplant on grill and cook for 15-20 minutes, turning occasionally. Eggplant is ready when very soft (pierced through with knife) and charred. [To ROAST instead, see NOTE 1]. Transfer to colander and slit eggplant open. Let drain and cool. Remove skin and seeds (if any).
