2 tablespoons honey
1 tablespoon chopped fresh ginger
1 clove garlic, chopped
salt and ground black pepper to taste

Steps:

  • Combine carrots, honey, ginger, garlic, salt, and pepper in a saucepan over medium heat; stir until carrots are coated with honey. Cook until simmering, about 5 minutes. Reduce heat to low, cover, and steam carrots until tender, 10 to 15 minutes.

1 cup ginger beer
1 1/2 tablespoons unsalted butter
Heavy pinch kosher salt
1/2 teaspoon chili powder

4 pounds medium carrots, cut into 1/4-inch slices
1/4 cup water
3 tablespoons butter, divided
1 tablespoon minced fresh gingerroot
1/3 cup maple syrup
1 tablespoon cider vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
Minced fresh parsley, optional

Steps:

  • In a Dutch oven, combine the carrots, water, 2 tablespoons butter and ginger. Cover and cook for 10 minutes. Cook, uncovered, until carrots are crisp-tender, 6-8 minutes longer., Stir in the syrup, vinegar, salt and pepper. Cook, stirring frequently, until sauce is thickened, 5-6 minutes. Stir in remaining butter. If desired, garnish with parsley.

1 1/2 pounds bay carrots (peeled and trimming the greens; leaving about 1 inch of the green tops)
Olive Oil
Salt & freshly cracked black pepper
2 Oranges (zested and juiced; divided)
2 cloves garlic, smashed
1/2 cup ginger ale
1 tablespoons ginger, finely minced
1/4 cup hazelnuts, chopped (toasted)
1/4 cup parsley, chopped & divided

Steps:

  • Preheat the oven to 400 degrees F. In a large bowl, toss the carrots with 4-5 tablespoons of the olive oil and season generously with salt and pepper. Zest the orange over the carrots, squeeze the juice, add the garlic cloves and toss. Put the carrots out into a large saute pan that has been heating over medium high heat. Arrange in an even layer. Pour in the ginger ale and cook the carrots on the stove top until they begin to color, and then transfer to the oven and cook for about 25-30 minutes, or until fork tender. Once the carrots are cooked and the glaze is reduced, remove from the oven and allow to cool slightly. Meanwhile, in a small bowl, mix together the remaining orange zest, juice, ginger, hazelnuts, parsley, salt and pepper. Garnish the carrots with the hazelnut mixture.

1 lb carrot, peeled and cut on the bias 1/4 inch thick (about 7 medium)
2 tablespoons unsalted butter
heavy pinch kosher salt
1 cup good-quality ginger ale
1/2 teaspoon chili powder
1 tablespoon fresh parsley, chopped

Steps:

  • In a 12-inch saute pan over medium heat, combine the carrots, butter, salt and ginger ale. Cover and bring to a simmer.
  • Once simmering, remove the lid, stir, and reduce the heat to low.
  • Cover again and cook for 5 minutes.
  • Remove the lid, add the chili powder and increase the heat to high.
  • Cook, tossing occasionally, until the ginger ale is reduced to a glaze, approximately 4 to 5 minutes.
  • Pour into a serving dish and sprinkle with the parsley. Serve immediately.

When carrots are cooked, it's often a sad affair. They are boiled to death and presented almost as an apology. Yet when they're treated with the respect they deserve, even ordinary supermarket carrots can be among the most reliable and enjoyable of vegetables, especially from fall through spring. This braise-and-glaze technique can be varied at will and can also be used with other roots, like beets, turnips and radishes. Once you have the hang of the technique, changing the flavorings is a snap. Try substituting a mixture of half balsamic vinegar, half water or soy sauce similarly diluted for the orange juice, adding a few cloves of peeled garlic with the carrots. Or add a half cup or so of chopped onions, shallots, scallions or leeks, or of chopped pitted dates or raisins, dried currants or even dried tomatoes.

I came up with this and served them at Easter and was told by several people that they liked these even though they normally don't like cooked carrots. Use Vernor's ginger ale instead of Canada Dry if you can find it. It's definitely worth it. Also, make sure to reduce the sauce down enough that it will stick to the carrots. Too runny and it will pool in the bowl.
