GIFT IN A JAR ALMOND PANCAKE MIX
This is a tasty, fun, easy and inexpensive gift to give... We let the kids help make this and they give it as gifts to teachers and family. We also do canning, and put together baskets of "goodies" and take them to elderly and disabled people to brighten their holidays!

Steps:
- 1. In a large bowl, stir all ingredients together until well blended. Store in a airtight container or a resealable plastic bag.
- 2. Yields about 10 cups pancake mix, enough for 5 batches of pancakes. Give with the following recipe for pancakes.
- 3. Almond Pancakes: 2 1/2 cups pancake mix 1 1/4 cups water 1 egg 2 tablespoons vegetable oil In a medium bowl, combine all ingredients, and stir just until moistened. Heat a greased griddle over medium heat. For each pancake, pour about 1/4 cup batter onto griddle and cook until top of pancake is full of bubbles and underside is golden brown. Turn with a spatula and cook until remaining side is golden brown. Re-grease griddle as necessary. Serve with butter and syrup. Yields about 1 dozen 5-inch pancakes
- 4. I make labels for the jars or packages, or I make a recipe card with a hole punched in it to hang on the ribbon that I attach to the jar. I also use a plate or other round item to trace circles 3 - 4 inches bigger around than the jar lid. I use a rubber band to attach the cloth circle to cover the lid/ring on the jar. Then I tie a pretty ribbon on to cover the rubber band and to attach the recipe card. Then tie a pretty bow.
- 5. *** If you want to, go ahead and add chocolate or butterscotch chips.
PANCAKE MIX IN A JAR
Steps:
- Combine the first 5 ingredients. Transfer to a 1-qt. jar with a tight-fitting lid. Cover and store in a cool, dry place for up to 6 months. Yield: 2 batches (3 cups total)., To prepare pancakes: Place 1-1/2 cups mix in a large bowl. In another bowl, whisk egg, milk and oil. Stir in dried fruit if desired. Stir into pancake mix just until moistened. Pour batter by 1/4 cupfuls onto a greased hot griddle. Turn when bubbles on top begin to pop; cook until second side is golden brown.

- In a large mixing bowl, combine the flour, milk, sugar, baking powder and soda with a whisk until mix is fully blended.
- With a shifter, gently shift through the mix a few times to remove any lumps and make sure that it is a smooth and even consistency.
- Once smooth, transfer to your large-sized mason jar for storage, or measure out into smaller mason jars for gifts!
- Mix 1 cup of mix with 3/4 cup of water to create batter.
- 1/4-1/2 cup of batter per pancake for desired size.
MASON JAR PANCAKE MIX

- For the pancake mix: Whisk together the flour, sugar, dry buttermilk, baking powder and salt in a large bowl. Divide the mix into 8 quart-sized wide mason jars, about 1 1/2 cups of dry pancake mix per jar. Seal and store until ready to use.
- For finishing and serving: Add 3/4 cup water and 1 teaspoon vanilla extract to a mason jar of pancake mix and shake until completely incorporated.
- Warm a griddle over medium heat and grease with the butter. Drop in the batter with a 1/4-cup measure and fry the pancakes until golden brown and cooked through, 2 to 3 minutes per side. Serve with softened butter and warm syrup.
BLUEBERRY PANCAKE MIX IN A GIFT JAR

Steps:
- Combine flour, baking powder and salt in a medium bowl.
- Pour into 1 pint wide mouth jar with tight fitting lid and pack down lightly. Layer maple sugar and dried blueberries attractively. Pack down lightly before adding each layer.
- Seal jar.
- Cover top of jar with fabric. Attach gift tag/recipe with raffia or ribbon. Attach large spatula if desired.
- Add instructions - melt butter in large heavy bottomed skillet or griddle over medium heat.
- Pour into medium bowl leaving thin film of butter on skillet.
- Mix beaten egg and milk into butter in bowl; set aside.
- Pour Blueberry Pancake into large bowl.
- Stir well.
- Add liquid mixture and stir to mix (Do not beat).
- Pour 1/4 cup portions of batter into skillet.
- Cook over medium heat 2-3 minutes on each side or until golden.
- Dust with powdered sugar (optional).
