3 tablespoons sugar
1/2 teaspoon cinnamon
3 1/2 cups flour
1 tablespoon baking powder
2 teaspoons baking soda
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 cup butter
2 cups sugar
2 eggs
1 tablespoon light corn syrup
2 1/2 teaspoons vanilla extract

Steps:

  • In a small bowl, stir together the sugar and cinnamon and set aside.
  • To make the cookie dough, stir together the dry ingredients.
  • In a bowl with a paddle attachment, cream the butter. Add the sugar and continue to mix, then add the eggs, corn syrup, and vanilla, and mix thoroughly. Add the dry ingredients and mix until blended. Chill dough 1 hour if it's sticky or difficult to handle.
  • Preheat oven to 375 degrees F.
  • Roll balls of dough about the size of a walnut then roll them in the cinnamon sugar to coat. Place on an un-greased sheet pan 2 1/2 inches apart. Bake for 10 to 12 minutes until puffed up and the surface is slightly cracked. Let cool on the sheet pan a few minutes before removing to a wire rack to cool.

My good friend Ann Morgan introduced these wonderful cookies to me in the 70's. We were at her house studying for a test we had to take for our job at the bank. I don't remember what the test was about but I do remember these cookies!

1 cup(s) butter, room temperature
1 1/2 cup(s) sugar
2 - eggs
2 3/4 cup(s) all purpose flour
2 teaspoon(s) baking soda
1/4 teaspoon(s) salt
2 teaspoon(s) cinnamon
2 tablespoon(s) sugar

Steps:

  • Cream butter and 1 ½ cups sugar; add eggs one at a time and beat until fluffy. In a separate bowl, combine all dry ingredients except for cinnamon and 2 Tbsp. Sugar. Add the dry ingredients to butter and sugar mixture; mix well. Refrigerate for 30 minutes.
  • Mix 2 tsp. Cinnamon with 2 Tbsp. Sugar in a small bowl. Roll refrigerated cookie dough into 2-inch balls. Roll in sugar and cinnamon mixture; place on an un-greased cookie sheet. Bake at 350? for 12 to 15 minutes.

  • In a medium-sized mixing bowl, stir the butter and 3 Tablespoons sugar together until creamed – mixture may be a bit crumbly. That’s OK. Add the egg and vanilla until mixed. Stir in flour, baking soda, salt,cream of tartar, and 1/4 tsp cinnamon until just combined. Do NOT overmix.
  • Place the dough in the center of the prepared cookie sheet into a tall ball (see pictures above). Sprinkle with 1/4 teaspoon cinnamon and 1/4 teaspoon sugar. Bake for 14-16 minutes until the edges are browned. The center may appear undone but that’s what you want. It will firm up. Allow to cool completely ON the baking sheet. Enjoy!
