GEORGE'S SWEET POTATO DELIGHT
George, my housemate, does most of the cooking at our house. For Thanksgiving dinner, he created a sweet potato dish to die for. I don't have a picture yet, but a digital camera is at the top of my Christmans list and I will take a picture at Christmas and post it. George is a trained cook and former owner of a restaurant and catering business, which he sold after suffering a stroke. Geoge doesn't measure, but has a good eye for amounts, so we wrote down his "eyeball" amounts of ingredients. Hope you like it.

Steps:
- Preheat oven to 350 degrees. Have an 8x8 glass casserole dish ready.
- In bowl, mix sweet potatoes, apples, Craisins and raisins.
- In microwave melt butter. Add brown sugar and add to sweet potato mixtue. Mix together.
- Add Cinnamon and Nutmeg and mix in.
- Place in baking dish and bake for 1 hour.

- 1. Preheat the oven to 350 degrees F. Bake the sweet potatoes on a baking sheet for about 1 hour, or until soft when pierced. 3 .Let cool; remove the skins. Purée the potatoes in a food processor. In a medium bowl, combine the sugars with the cinnamon, nutmeg and salt. In a large bowl, lightly whisk the eggs. Whisk in 3 cups of the sweet potatoes, then the sugar mixture. Spoon half the mixture into a 9x 13 baking dish that has been sprayed with non stick baking spray.?Top with half the chocolate . Cover with the rest of the mixture. Arrange the remaining chocolate chips on top. Add a few more if needed? Bake in the center of the oven for about 1 hour Take out and top the dish with a bag of mini marshmallows. Put back in the oven until marshmallows are golden. Sprinkle graham cracker crumbs on top Top with chocolate syrup .Top with caramel syrup (optional)
SWEET POTATO AND GRUYèRE GRATIN
This rich, cheese-laden gratin is a more savory take on the usual Thanksgiving sweet potato casserole, with sage and rosemary giving it an herbal bite. If you'd like to make it partway ahead, you can peel and slice the potatoes the day before; store in a sealable plastic bag in the fridge. You can also simmer the cream mixture (don't add eggs) and grate the cheese the day before as well, storing them covered in the refrigerator.

- Heat oven to 400 degrees and generously butter a 9-by-13-inch baking pan or shallow gratin dish. Butter a piece of foil large enough to cover top of pan. Sprinkle Parmesan all over bottom of pan.
- In a medium pot, bring cream, sage, rosemary, garlic, nutmeg and a pinch of salt to a simmer. Simmer until reduced by 1/4, about 10 minutes.
- In a large, heatproof bowl, whisk eggs just enough to break them up. Slowly pour hot cream into eggs to combine, whisking while pouring, and reserve the mixture.
- Meanwhile, using a mandoline or sharp knife, slice the potatoes into 1/8-inch-thick rounds.
- Place 1 layer of potatoes in the pan, slightly overlapping as you go, using about a third of the slices. Sprinkle with 1/4 teaspoon salt and pepper to taste, then pour 1/3 of the egg mixture over potatoes. Top with 1/2 cup Gruyère. Repeat with another layer of potatoes, 1/2 teaspoon of salt, pepper and 1/3 egg mixture. Top with 1/2 cup Gruyère. Top with remaining potatoes, 1/4 teaspoon salt, pepper to taste, and remaining egg mixture (but not the remaining cheese). Press down to compact the potatoes. Cover with foil and bake until potatoes are tender, about 40 minutes, then remove foil, sprinkle top with remaining 2/3 cup Gruyère and bake until browned and bubbling, 25 to 30 minutes. Let cool slightly, then serve.

- 1. Boil sweet potatoes in Dutch oven until soft, about 1 hour. On cutting board or other prep surface, use a knife to cut potato skins length-wise and peel away skins of hot potatoes with fork. Skins should easily come off. Discard skins and place potatoes in large mixing bowl.
- 2. Using a hand mixer, mash potatoes. Add white sugar, evaporated milk, vanilla extract, 1/4 cup of melted butter or margarine, eggs, and salt. Mix all ingredients together until well blended. Set aside.
- 3. For Topping: Melt 1/2 cup butter or margarine. Cool slightly. Stir in brown sugar. Add flour, then pecans. Mix thoroughly.
- 4. Pour potato mixture into a 9" X 13" buttered casserole dish. Sprinkle topping over potato mixture, covering completely. Bake at 350 degrees F for 30 minutes. Serve warm.

- In a large frying pan, dry roast the nuts for a few minutes. Shake the pan often.
- Cut the banana in half lengthwise. Cut the sweet potato in 1/2 inch slices.
- Add the oil to the pan. Push the nuts to the outer edge and add the banana pieces to the pan. Add the sweet potatos.
- Cover and cook for 2 minutes. Uncover and cook for 5 minutes until everything is heated through and browned on one side.
- Drizzle with syrup or honey before serving.
