This is a BBQ rub that should be used with the Gates & Sons KC BBQ Sauce or Gates & Sons KC BBQ Baked Beans, both posted here. This is authentic KC Barbeque at it's best. If you can't be here then try these.

Mr Gates was on Martha Stewart and they gave out the recipes. Then the restaurant was featured on "The Best of" on Foodtv and they gave out the secret of keeping the grilled meat moist. You will be surprised, but it works and you will be in BBQ heaven with this.

- The rib seasoning is a dry rub that should be applied 15 minutes before grilling.
- Mix the pickle juice with the water.

OLLIE GATES'S BARBECUE SAUCE

SMOKY SAUCE FOR RIBS
This recipe is dedicated to Chef Bethany, whose "Slow cooked BBQ Ribs" (recipe ID #16705) are out of this world. She recommends using KC Masterpiece BBQ sauce, but I can't use it because of the high sodium content. So I used this sauce instead.

- Turn the ribs meat side down on your work surface. Use a dinner knife to carefully separate one piece of the membrane near the narrow end of the ribs. Once you have a piece lifted, grab and carefully pull from the membrane away from the ribs.
- Liberally coat the ribs with the spicy BBQ dry rub and allow to rest on the counter while the grill preheats.
- Place the ribs in the smoker and cook for 2 hours, making sure to replace the wood chips as needed to maintain constant smoke.
