4 russet potatoes (about 2 pounds)
2 teaspoons canola oil
1/2 cup grated Parmesan cheese
1 teaspoon dried basil
1 teaspoon seasoned salt
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350°. Cut each potato lengthwise in half. Cut each half into three wedges. In a large bowl, sprinkle potatoes with oil; toss to coat. Combine the remaining ingredients. Add to potatoes; toss to coat., Arrange potatoes in a single layer on a 15x10x1-in. baking pan coated with cooking spray. Sprinkle with any remaining coating. Bake until golden brown and tender, 45-55 minutes.

3 potatoes
3 eggs
1 cup grated parmesan cheese
¼ cup fresh parsley, chopped
1 tablespoon dried oregano
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
½ teaspoon red pepper flakes

Steps:

  • Preheat oven to 375ºF (190ºC).
  • Slice potato in half then take the half and quarter it.
  • Whisk 3 eggs in a small bowl.
  • Combine remaining ingredients in a medium bowl.
  • Coat each wedge in egg wash, then coat in dry mix, until entirely covered.
  • Place on a greased baking sheet and bake for 30 minutes.
  • Allow to cool for 5 minutes.
  • Enjoy!

  • Slice the potatoes into wedges.
  • Place potato wedges in a large bowl. Drizzle olive oil and toss to coat. Sprinkle potato wedges with shredded cheese and toss again.
  • In a small bowl, mix salt, Italian seasoning, garlic powder, and paprika. Sprinkle seasoning onto potato wedges and toss to coat.
  • Place potato wedges on a baking sheet with skin-sides-down.

This cooking method, along with a little oil and Parmesan cheese, makes these potato wedges come out nice and crispy. I used garlic powder and Italian seasoning, but your favorite seasonings can be substituted.

1 large russet potato, scrubbed
1 tablespoon vegetable oil
1 tablespoon finely grated Parmesan cheese
¼ teaspoon garlic powder
¼ teaspoon Italian seasoning

Steps:

  • Preheat an air fryer to 425 degrees F (220 degrees C) according to manufacturer's instructions. Line the basket with nonstick foil.
  • Pierce the potato several times with a paring knife. Microwave on high power until very soft, 8 to 10 minutes. Turn the potato over after about 4 minutes to ensure even cooking. Remove and let cool enough to handle.
  • Slice potato in half lengthwise; slice each half into 4 wedges, then cut the wedges in half. Drizzle with oil and toss very gently to coat. Place the potatoes close together in the air fryer with the skin sides down. Sprinkle with Parmesan cheese, garlic powder, and Italian seasoning, then move the slices apart. (Starting with them close together helps you get more of the cheese and seasonings on the potatoes.)
  • Air-fry until golden brown, about 20 minutes, checking every 5 minutes. Reduce air fryer temperature to 350 degrees F (175 degrees C). Continue to air-fry until well browned and crispy, about 5 minutes more.
