SIMPLE SAUTEED FISH WITH GARLIC



Simple Sauteed Fish with Garlic image

8-12 ounces skinless white fish fillets
Celtic sea salt and pepper
3 tablespoons grass fed unsalted butter
4 garlic cloves, minced
4 tablespoons roughly chopped flat leaf parsley
2 tablespoons lemon juice

Steps:

  • Rinse the fish fillets and blot dry with a paper towel. Season with salt and pepper.
  • Heat butter in wide sauté pan over medium low heat. Once butter has begun to foam, place the fish into the pan.
  • Add garlic. Sauté 1 minute without disturbing the fish.
  • Tilt the pan toward you and using a spoon, ladle the garlic butter over the fish. Continue to sauté while basting the fish for 2-3 minutes.
  • Using a spatula, gently flip fish. Reduce heat to low, cover pan and cook for 2 minutes.
  • Uncover pan, and continue basting fish with butter until it is just cooked through, another minute or two.
  • Add 3 tablespoons of parsley and turn off the heat.
  • Transfer fish onto a platter or individual plates. Tilt pan and spoon butter sauce evenly over fillets.
  • Sprinkle with remaining tablespoon parsley and lemon juice.

Garlic-Crusted Cod Fish image

This recipe comes from The Black Dog Summer on the Vineyard Cookbook. Just buy the cod and parsley; and you probably have everything else at home. Such a simple fish recipe and it packs a lot of flavor. This is for garlic lovers! Note: if the breadcrumb coating doesn't immediately adhere to the fish, just pat it on. It works great.

1 tablespoon unsalted butter, plus a little more to oil roasting pan
2 tablespoons extra virgin olive oil
6 garlic cloves, chopped
1 cup breadcrumbs (I use seasoned)
1/4 cup parsley, chopped
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 egg, beaten
2 lbs boneless cod fish fillets, 1 inch thick and cut into 4 pieces
4 lemon wedges, for serving

Steps:

  • Preheat oven to 400 degrees F.
  • Heat butter and oil in a saucepan over low heat and add the garlic for one minute to soften, not brown.
  • Remove pan from heat and add the bread crumbs, parsley, salt and pepper.
  • Mix to moisten the crumbs and seasonings.
  • Dredge each fish fillet in the beaten egg first.
  • Then dredge each fish fillet into the crumb mixture.
  • Place the coated fish fillets in an oiled roasting pan for the oven.
  • Bake the fillets in the preheated oven for about 10 to 12 minutes, until the crust is golden brown. The fish inside should be flaky. Use a fork to make sure the fish flakes and is done.
  • Serve with lemon wedges.

This is a lovely fish dish I made last night for a dinner party which is a Thai dish. Excellent! From a Nita Mehta cookbook on Thai cookery. Time does not include marination time.

250 g white fish fillets, cut into 1 inch chunks
1 teaspoon ginger paste
1 teaspoon garlic paste
1 tablespoon lemon juice
2 tablespoons garlic, chopped
1 tablespoon ginger, chopped
1/2 cup chopped spring onion, plus
extra spring onion, for garnish
2 tablespoons fish sauce (I used soya sauce in its place)
1 teaspoon pepper
1 1/2 teaspoons red chili paste or 1 1/2 teaspoons chili powder (cayenne)
1 1/4 teaspoons salt
1 tablespoon chopped cilantro
1 tablespoon oil

Steps:

  • Marinate the fish in the ginger and garlic paste, salt and the lemon juice for a couple of hours.
  • Heat the oil in a wok and then saute the chopped ginger and garlic for 2 minutes.
  • Add the cayenne and the pepper powder.
  • Add the spring onions, salt, sauce and the fish.
  • Cook on high for 2 minutes.
  • Cover and simmer for another few minutes till the fish is cooked and the gravy dry.
  • You may have to cook uncovered to dry it up after a minute or so of covering it cooked.
  • Serve hot garnished with chopped cilantro and chopped spring onions too.

2/3 cup olive oil
20 cloves garlic, peeled and sliced thinly
1 teaspoon salt
1/2 teaspoon of ground black pepper
2/3 cup clam juice or fish stock
Juice of 3 limes, about 1/4 cup
1 ancho chile, stemmed, seeded and chopped
1 bunch flat leaf parsley, roughly chopped
6 6-ounce skinless, boneless filets of fresh fish
1 pound tomatillos, husked, washed and chopped
1 pound Roma tomatoes, cored and chopped
1 large onion, chopped
1/2 cup olive oil
1/3 cup white vinegar
1 bunch cilantro, leaves only, chopped
1/4 cup sugar
6 garlic cloves, minced
1 jalapeno chile, stemmed, seeded and diced
1 red bell pepper, cored, seeded and chopped
2 teaspoons salt
1 teaspoon fresh black pepper

Steps:

  • Preheat oven to 350 degrees. Season fish filets with salt and pepper. Heat a large cast iron or heavy bottomed skillet over moderately high heat. When hot add 2-3 tablespoons of olive oil. Sear fish fillets about 1-2 minutes per side or until lightly golden, remove to a oven proof platter and set in oven to finish cook for 3-5 minutes or, to desired doneness. Meanwhile add the remaining olive oil, slivered garlic, salt and pepper to the pan and cook over medium low heat stirring often for about 2 minutes. Add chopped ancho chiles and continue cooking a minute or two until a toasty aroma is released. Add the fish stock or clam juice reduce by half, adding any juices that have collected on the platter holding the fish fillets. Then add lime juice and parsley, bring sauce to a boil and pour over fish on platter. Serve immediately along with plenty of white rice.
  • Combine all the ingredients in a pot, cover and simmer about 1 hour. Set aside to cool to room temperature. Tomatillo relish can be stored in the refrigerator up to a week. To serve, line a large platter or serving plates with relish and top with grilled fish fillets. Or serve as a condiment with cold meats. Garnish with scallions.

Cover and continue to cook until fish flakes easily with a fork, about 2-3 minutes. Squeeze lemon over fish. Serve immediately.
