I first tried this recipe at a family gathering and loved it! It is a great meatless lunch or dinner for a warm day, served hot or cold. This is my most requested dish for parties and a fairly simple one to make. Enjoy! -Heidi Anne Quinn, West Kingston, Rhode Island

Dough for single-crust deep-dish pie
1 cup chopped onion
2 tablespoons butter
4 large tomatoes, peeled, seeded, chopped and drained
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried thyme
2 cups Monterey Jack cheese, divided
4 large eggs, room temperature
1-1/2 cups half-and-half cream

Steps:

  • Preheat oven to 425°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling. In a large skillet over medium-high heat, saute onion in butter until tender. Add the tomatoes, salt, pepper and thyme. Cook over medium-high heat until liquid is almost evaporated, 10-15 minutes. Remove from the heat. , Sprinkle 1 cup cheese over crust. Cover with tomato mixture; sprinkle with remaining 1 cup cheese. In a small bowl, beat eggs until foamy. Beat in cream. Pour over filling. , Bake 10 minutes. Reduce heat to 325°. Bake until top begins to brown and a knife inserted in the center comes out clean, 35-40 minutes longer. Let stand 10 minutes before cutting.

1/2 cup shredded part-skim mozzarella cheese
1/2 cup shredded Swiss cheese

I knew this delicious recipe was a "keeper" when I first tried it in the 1970s as a new bride- it impressed my in-laws when I made it for them! Now I sometimes substitute Mexican or Cajun seasoning for the basil. No matter how it's seasoned, it's wonderful.

3/4 cup all-purpose flour
1/2 cup cornmeal
1/2 teaspoon salt

4 to 5 tablespoons cold water
FILLING:
2 cups chopped plum tomatoes
1 teaspoon salt
1/2 teaspoon dried basil
1/8 teaspoon pepper
1/2 cup chopped green onions
1/2 cup shredded cheddar cheese
1/2 cup shredded Swiss cheese
2 tablespoons all-purpose flour
2 eggs
1 cup evaporated milk

Steps:

  • In a small bowl, combine the first four ingredients. Cut in shortening until crumbly. Add water, tossing with a fork until dough forms a ball. Refrigerate for 30 minutes., On a lightly floured surface, roll out dough to fit a 9-in. pie plate; transfer pastry to plate. Trim to 1/2 in. beyond edge of plate; flute edges. Bake at 375° for 10 minutes. Cool completely., Place tomatoes in the crust; sprinkle with salt, basil, pepper, onions and cheeses. In a small bowl, whisk the flour, eggs and milk until smooth. 2 tablespoons butter or 2 tablespoons margarine
1 onion, chopped
2 cloves garlic, minced
8 -10 mushrooms, sliced
2 tablespoons flour
1 teaspoon cayenne pepper, divided
1 teaspoon salt
1 teaspoon basil (or 1 tablespoon fresh basil)
4 eggs, beaten
2 carrots, shredded (1 cup)
1 1/2 cups half-and-half (or 1 cup light cream and 1/2 cup milk)
1 1/2 cups swiss cheese, grated shredded,divided
10 asparagus spears, washed and trimmed,divided
1 tomatoes, sliced in 1/4 inch rounds
parsley
parsley sprig, garnish (optional)
1 10-inch pie shell

Steps:

  • Preheat oven to 375-degrees F.
  • Roll out pastry to fit 10-inch quiche pan.
  • Melt butter or margaine in skillet.
  • Add onions, garlic and mushrooms to pan and cook 8-10 minutes or until soft.
  • Add flour, 1/2 teaspoon cayene pepper, salt and basil to pan and cook for an additional 3-5 minutes.
  • Remove from heat and set aside.
  • Beat eggs with half and half (or light cream and milk), 1 cup cheese and carrots.
  • Add mushroom/onion mixture to egg/cheese/carrot mixture and stir to combine.
  • Slice 5 asparagas spears into 1-2" pieces.
  • Lay asparagas pieces on the bottom of pie shell.
  • Pour filling (cheese/egg/carrot mixture) over asparagas in pie shell.
  • Crimp edges on pie shell (if not done previously) and place pie pan on cookie sheet.
  • Bake for 20 minutes.
  • Remove from oven.
  • While quiche is baking slice remaining aspasagas spears into 1-2" slices or leave 5" long for decorative design.
  • Arrange tomato slices and asparagas pieces on top of quiche in a wagon-wheel pattern or other attractive pattern.
  • Bake an additional 20-30 minutes or until quiche is firm to the touch and knife comes out clean.
  • Sprinkle with remaining 1/2 cup shredded cheese and parsley.
  • Bake 10 minutes.
  • Remove from oven.
  • Let cool (5-10 minutes) before slicing.
  • Garnish with parsley sprigs, if desired.

We grow tomatoes in the summer so I am always looking for ways to use them. I suggested using spinach or zucchini here but you can add just about any vegetable to the tomatoes. Try corn!

1 - 9 inch pie shell
3 or 4 - tomatoes
1/2 - pkg fresh spinach (9 oz pkg), chopped
1 - medium chopped onion
1 tablespoon(s) oil or butter
1 cup(s) half and half or whole milk
3 - eggs
- dash fresh grated nutmeg
- salt and pepper
1/2 teaspoon(s) dried thyme
1 1/2 cup(s) grated cheese, i like to mix it up - mozarella and swiss, swiss and cheddar, parmesan and mozarella, it's all good
OPTIONS
1/2 cup(s) crumbled, cooked bacon (either in addition or in place of the spinach)
1 - fresh zucchini, chopped instead of spinach

Steps:

  • Pre-bake your pie shell until lightly browned. You can do this in advance.
  • Preheat the oven to 375.
  • Peel and chop the tomatoes. Separate the flesh from the juices and reserve the juices.
  • Heat the oil in a skillet and saute the chopped onion.
  • Add the tomatoes and spinach (or zucchini) and cook on med/low until the juices are gone. I usually add more of the tomato juice and reduce it again to intensify the tomato flavor. If you do not get this pretty dry it will be too wet for the quiche and you'll have a runny quiche.
  • Place the milk, eggs, nutmeg, thyme and salt and pepper in a bowl and whisk until eggs are incorporated.
  • Sprinkle a thin layer of cheese on the bottom of the pie shell. Add the tomato and spinach (or zucchini) and spread evenly over the cheese. Add the rest of the cheese.
  • Gently pour the wet ingredients over the layers in the pie shell. If you are using bacon sprinkle it on now.
  • Bake until a knife inserted in the center comes out clean. It will probably take 45-60 minutes. It depends on how cold your ingredients were. I usually cover it loosely with foil half way through to prevent the crust from over browning.

ROASTED TOMATO, BASIL & PARMESAN QUICHE

A taste of summer, this quiche is full of Italian flavours and is perfect for dinner in the garden

300g cherry tomato
drizzle olive oil
50g parmesan (or vegetarian alternative), grated
2 eggs
284ml pot double cream
handful basil leaves, shredded, plus a few small ones left whole for scattering
280g plain flour, plus extra for dusting
140g cold butter, cut into pieces

Steps:

  • To make the pastry, tip the flour and butter into a bowl, then rub together with your fingertips until completely mixed and crumbly. Add 8 tbsp cold water, then bring everything together with your hands until just combined. Roll into a ball and use straight away or chill for up to 2 days. The pastry can also be frozen for up to a month.
  • Roll out the pastry on a lightly floured surface to a round about 5cm larger than a 25cm tin. Use your rolling pin to lift it up, then drape over the tart case so there is an overhang of pastry on the sides. Using a small ball of pastry scraps, push the pastry into the corners of the tin. Chill in the fridge or freezer for 20 mins. Heat oven to 200C/fan 180C/gas 6.
  • In a small roasting tin, drizzle the tomatoes with olive oil and season with salt and pepper. Put the tomatoes in a low shelf of the oven.
  • Lightly prick the base of the tart with a fork, line the tart case with a large circle of greaseproof paper or foil, then fill with baking beans. Blind-bake the tart for 20 mins, remove the paper and beans, then continue to cook for 5-10 mins until biscuit brown.
  • When you remove the tart case from the oven, take out the tomatoes, too.
  • While the tart is cooking, beat the eggs in a large bowl. Gradually add the cream, then stir in the basil and season. When the case is ready, sprinkle half the cheese over the base, scatter over the tomatoes, pour over the cream mix, then finally scatter over the rest of the cheese. Bake for 20-25 mins until set and golden brown. Leave to cool in the case, trim the edges of the pastry, then remove from the tin. Scatter over the remaining basil and serve in slices.

This recipe is one that I created for the Crisco All American Baking Celebration. It won first place at my local fair and then went on to win in my region so I was able to be in the cook off. I hope you enjoy it.

1 single pie crust
1/2 tsp garlic salt
1 egg beaten
5 thin slices sweet onion
1/4 c olive oil, light
1 Tbsp olive oil, light
1 c shredded mozzarella cheese
2 c loosely packed fresh basil leaves
1/2 tsp salt
1/2 tsp ground pepper
1 garlic clove halved
4 eggs
1/2 c half and half
1/2 c ricotta cheese
1/2 c fresh grated parmesan cheese
1 Tbsp fresh grated parmesan cheese
6-8 slice thin sliced tomato

Steps:

  • 1. For crust, prepare using store bought or your own recipe, adding garlic salt to flour mixture if you are making your own crust. Roll and press crust into 9-inch quiche dish or pie plate. Brush edge of pie crust with beaten egg. Bake 10 minutes or until set and lightly browned. Cool while preparing filling. REDUCE OVEN TEMPERATURE TO 350ºF. For filling, cook and stir onion in 1 tablespoon oil in small skillet on medium heat until softened. Spoon into cooled baked pie crust. Sprinkle with mozzarella cheese. Combine remaining 1/4 cup oil, basil, salt, pepper and garlic in blender. Blend at high speed until smooth. Beat 4 eggs in large bowl at medium speed of electric mixer until foamy. Reduce speed to low. Add half-and-half, ricotta cheese and 1/2 cup Parmesan cheese. Beat until well blended. Add basil mixture slowly. Beat until well blended. Pour over cheese in pie crust. Bake at 350ºF for 20 minutes. Remove quiche from oven. Top with tomato slices. Return quiche to oven. Bake 30 minutes or until center is firm. Sprinkle tomatoes with remaining 1 tablespoon Parmesan cheese. Serve hot, warm or cold. Refrigerate leftovers.

1 3/4 cups all-purpose flour, plus more for dusting
1 teaspoon coarse salt
1 stick cold unsalted butter, cut into pieces
1 large egg, plus 1 large egg yolk
3 tablespoons ice water
6 large eggs
1 1/2 cups heavy cream
1 1/2 cups whole milk
1 1/2 teaspoons coarse salt
1/2 teaspoon freshly ground pepper
1/2 cup packed small herb sprigs, such as chervil and dill, on top (if making 2 quiches, double amount)

Steps:

  • Crust: Pulse flour and salt in a food processor until combined. Add butter and pulse until mixture resembles coarse meal. Whisk together egg and yolk with ice water. Add to flour mixture and pulse until moist crumbs start to form (no longer). Transfer mixture to a piece of plastic wrap and, using wrap and your hands, form into a disk (or 2 disks, if making 2 quiches in pie plates). Refrigerate at least 30 minutes and up to 4 hours.
  • Let sit at room temperature until pliable, then roll out dough on a lightly floured surface to a 14-inch round. Fit into a 9-inch springform pan, folding and pressing sides to an even thickness. (Or roll out 2 disks to 11-inch rounds and fit into 8- or 9-inch pie plates.)
  • Trim edge of dough flush with top of springform pan. (If using pie plates, fold edges of dough under; crimp as desired.) Wrap in plastic; freeze at least 30 minutes and up to 3 days. Preheat oven to 400 degrees.
  • Line crust with parchment; fill with dried beans or pie weights. Bake, with a baking sheet on rack below, 20 minutes; remove paper and beans. Bake until golden, 12 to 15 minutes (8 to 10 minutes, for pie plates). Let cool.
  • Reduce oven to 375 degrees. Whisk eggs until smooth, then whisk in remaining ingredients until well combined.
  • Pour custard mixture into cooled crust, stopping just short of top (if making in 2 pie plates, divide evenly between crusts). You may not need to use all of custard; be careful not to overfill.
  • Arrange herb sprigs on top. Bake 10 minutes at 375 degrees, then about 55 minutes at 325 degrees. Let cool about 1 hour before serving.
