Number Of Ingredients 8

1 pound Italian pork sausage, casings removed
One 28-ounce can chopped tomatoes
2 cups macaroni noodles
1 1/2 cups vegetable or chicken stock
3/4 cup peas, fresh or frozen
Kosher salt and freshly ground black pepper
1 cup shredded cheese (I like a mix of Parmesan and mozzarella!)
A handful of fresh parsley or torn basil, for garnish, optional

Steps:

  • Heat a large pot over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned and cooked through, about 7 minutes. Add the chopped tomatoes, noodles and stock and bring to a boil. Reduce to a simmer, cover and cook, stirring occasionally, until the noodles are tender, 25 to 30 minutes. Stir in the peas (if they're frozen, they'll thaw pretty much immediately when stirred in). Season with salt and pepper. Top with cheese and herbs, if desired.

Our grandmother passed away earlier this year 2022 and the Altar Rosary Society has put together a beautiful dinner following her burial. One of the things that stood out to me was the dressing on the salad. It was light and full of flavor. I thanked the ladies for the wonderful meal they prepared and asked for the recipe. It didn't have a name so I call it Funeral Dressing.

Number Of Ingredients 6

1 cup(s) sugar
1 1/2 teaspoon(s) dry mustard
1 teaspoon(s) salt
1/3 cup(s) apple cider vinegar
1 tablespoon(s) finely grated sweet onion
1 cup(s) canola oil

Steps:

  • Add all ingredients to a pint mason jar or shaker and blend until opaque. Dress salad and serve immediately.
  • That's it, simple and light dressing. Refrigerate any leftovers.
  • You will make this dressing time and time again.

These little sandwiches are delish and are favorites at a party or funeral!

cooking spray
1 pound thinly sliced ham
½ pound sliced Swiss cheese
2 (12 count) packages Hawaiian bread rolls (such as King's®)
1 cup butter, melted
4 tablespoons brown sugar
2 tablespoons Worcestershire sauce
2 tablespoons prepared yellow mustard
2 tablespoons poppy seeds

Steps:

  • Spray a cookie sheet with cooking spray. Place ham and Swiss cheese slices on the bottom of the rolls and cover with roll tops.
  • Mix butter, brown sugar, Worcestershire, mustard, and poppy seeds together in a small bowl and spoon over sandwich tops. Let sit, 4 hours to overnight.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bake in the preheated oven until golden and cheese is melted, about 25 minutes.
