CARAMEL APPLES

- In a heavy 3-qt. saucepan, combine butter, brown sugar, corn syrup and milk; bring to a boil over medium-high heat. Cook and stir until mixture reaches 248° (firm-ball stage) on a candy thermometer, about 30-40 minutes. Remove from the heat; stir in vanilla. Insert wooden sticks into apples. Dip each apple into hot caramel mixture; turn to coat. Set on waxed paper to cool. If desired, roll the bottom of the dipped apples into chopped peanuts.

- Remove stems and thoroughly wash and dry apples; insert pop sticks into tops. Line a baking sheet with parchment and grease the parchment; set aside., Place caramels and water in a small saucepan; cook and stir over medium-low heat 3-5 minutes or until smooth, stirring frequently. Remove from heat; cool slightly. Dip each apple in caramel mixture, allowing excess to drip off. Place on prepared pan. Refrigerate until set.

Steps:
- Wash, dry and skewer the aples onto the stick.
- Melt the caramel and evaporated milk together in a glass container and microwave on high for 30 seconds.
- Repeat at 30 second intervals until mixture is smooth.
- Plunge the apples into the caramel mixture and twist to coat evenly.
- Place them on a wax paper covered cookie sheet.
- Press the candies into the warm caramel.
- Cool slightly in fridge to set candies.
- Melt chocolate chips, (you can also use orange candy melts)transfer to a ziploc bag.
- Cut off the end of the ziploc bag and drizzle chocolate over the apples.
- Eat and Enjoy :).

This is a wonderful recipe that I found in one of my Gooseberry Patch books. While baking, it fills the entire house with the wonderful smell of caramel apples! Perfect for a chilly fall evening!!

Steps:
- Place cored apple in apple baker or baking dish.
- Sprinkle apple with brown sugar (push some down into the core).
- Top with caramel ice cream topping and pecans.
- Bake at 350 for 30-45 minutes (depending on size of apple).

- Wash and thoroughly dry the apples then press a lollipop stick firmly into the top of each apple. Line a baking sheet with wax paper.
- Unwrap the caramels then place them in a medium saucepan set over medium-low heat. Add the heavy cream and cook the caramels, stirring occasionally, until they melt and the mixture is a smooth consistency. Reduce the heat to low.
- Dip each of the apples into the caramel mixture, shaking off any excess and scraping any caramel off the bottoms of the apples. Roll the apples in your preferred toppings then place them on the lined baking sheet. Refrigerate the apples for 15 minutes or until the caramel has firmed up. Serve the apples immediately or store them in the fridge until ready to serve.
- Any store-bought soft caramels will work in this recipe, however my preferred brand is Werther's Original Soft Caramels.
