I've made these moist brownies many times and they're always a hit. -June Formanek, Belle Plaine, Iowa

4 ounces unsweetened chocolate, chopped
1 cup butter, cubed
4 large eggs
2 cups sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup semisweet chocolate chips
1 cup chopped pecans, optional
Confectioners' sugar

Steps:

  • In a microwave, melt unsweetened chocolate and butter; stir until smooth. In a large bowl, beat the eggs, sugar and vanilla for 1-2 minutes or until light and lemon-colored. Beat in chocolate mixture. Add flour; beat just until combined. Fold in chocolate chips and pecans if desired., Transfer to a greased 13x9-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out with moist crumbs. Cool on a wire rack. , Cut into bars. To serve, dust with confectioners' sugar or freeze. Brownies may be frozen for up to 6 months.

1/4 cup almond flour
1/4 cup garbanzo and fava flour

1 1/2 teaspoons xanthan gum
1/2 teaspoon salt
1/4 teaspoon baking soda
1 egg
1/2 cup sunflower or canola oil
1 cup sugar
2 teaspoons pure vanilla
1/4 cup almond milk, soymilk or regular milk
1/2 cup miniature semisweet chocolate chips
1/4 cup chopped walnuts
2 tablespoons sugar

Steps:

  • Heat oven to 350°F. Spray cookie sheet with cooking spray (without flour).
  • In small bowl, mix flours, cocoa, xanthan gum, salt and baking soda. In medium bowl, beat egg, oil, 1 cup sugar, the vanilla and milk with electric mixer on medium speed until well blended. Gradually add flour mixture, beating until blended. Stir in chocolate chips and nuts.
  • In small bowl, place 2 tablespoons sugar. Shape dough into 1 1/2-inch balls; dip tops in sugar. Place on cookie sheet.
  • Bake 15 to 17 minutes or until set. Cool 5 minutes; remove from cookie sheet to cooling rack.

I had a jar of hot fudge sauce hanging around in the fridge, so I threw it in. It made the fudgy chocolate cookies so moist and gooey good!

1 ½ cups unsalted butter, softened
¾ cup white sugar
¾ cup brown sugar
½ cup shortening
¼ cup hot fudge sauce
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
⅔ cup cocoa powder
¾ teaspoon baking soda
¼ teaspoon salt
2 cups semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Beat butter, white and brown sugars, shortening, fudge sauce, eggs, and vanilla together in a large bowl until light and fluffy.
  • Combine flour, cocoa, baking soda, and salt in a bowl. Stir flour mixture into the butter mixture until well blended. Mix in the chocolate chips. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
  • Bake in the preheated oven until just set (cookies will be very soft), 8 to 10 minutes. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.

3/4 cup brown sugar
1 egg
1 teaspoon vanilla extract
1/2 cup semi-sweet chocolate chips
1/2 cup unsalted butter
1 cup sugar
2 eggs
1 teaspoon vanilla
1/3 cup cocoa powder
1/2 cup flour
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 cup unsalted butter, room temperature
3 cups confectioners' sugar
1/2 cup cocoa powder
1/2 teaspoon vanilla extract
2 -6 tablespoons milk
1/2 cup confectioners' sugar
1/4 teaspoon vanilla
1 -2 tablespoon milk

Steps:

  • Preheat oven to 350 degrees.
  • Spray an 8×8-inch square baking dish with non-stick baking spray, or grease and flour the pan.
  • In a small bowl, combine the flour, baking powder, and salt; set aside.
  • In a medium bowl, whisk the melted butter and brown sugar together.
  • Add the egg and vanilla and mix until well combined.
  • Fold the flour mixture into the egg mixture until just mixed (be careful not to overmix).
  • Fold in the chocolate chips and spread the batter into the prepared pan and bake for 20 minutes.
  • While the cookie layer bakes, prepare the brownie batter. In a medium saucepan, melt the butter.
  • Once melted, remove from heat and whisk in the sugar until combined.
  • Add the eggs, one at a time, mixing well after each addition.
  • Stir in the vanilla.
  • Whisk in the dry ingredients until combined.
  • Once the cookie layer comes out of the oven, immediately pour the brownie batter on top and return the pan to the oven.
  • Bake for 30 - 35 minutes, or until a toothpick inserted in the middle comes out with a few crumbs clinging to it. Allow to cool completely before frosting or serving.
  • To make the frosting: In a medium bowl, cream the butter.
  • Gradually beat in confectioners' sugar, cocoa and vanilla.
  • Add the milk, 1 tablespoon at a time, as needed, until frosting reaches desired consistency.
  • To make the glaze: Combine the sugar and the vanilla in a small bowl.
  • Whisk in the milk, a little at a time, until the desired consistency is reached. The glaze can be piped on top of the frosting for decoration.
