This dessert is fast, easy and chocolatey. I got it from Southern Living's Easy Weeknight Favorites. It's great with scoop of vanilla ice cream. It's kind of like a brownie that hasn't been cooked all the way, so it's best to scoop this out into a bowl.

1/2 cup butter
1 ounce unsweetened chocolate
1 cup sugar
1/2 cup flour
1 teaspoon vanilla extract
2 eggs

Steps:

  • Preheat oven to 325 degrees.
  • Melt butter and chocolate; stir constantly to keep from burning and remove from heat when smooth and melted.
  • Add sugar, then flour, vanilla and eggs.
  • Pour into a greased 8x8 pan.
  • Bake for 22 minutes (do not overbake- this dessert is designed to be rich and gooey, so testing it with a toothpick will not work.) Spoon into a bowl, cover with ice cream or whipped cream and enjoy!

This is a very soft fudge that Mom made when we were young. Rather than "pieces" of fudge, we got "spoonfuls". It's rich and chocolate-y, very candy-like.

2 cups sugar
3/4 cup evaporated milk
2 ounces unsweetened chocolate, chopped
2 tablespoons light corn syrup
2 tablespoons butter
1/4 teaspoon salt
1/2 cup chopped nuts (optional)
1 teaspoon vanilla

Steps:

  • Combine all ingredients except nuts and vanilla in a saucepan.
  • Stir over medium heat until the sugar is dissolved and the chocolate is melted.
  • Continue cooking until it reaches the soft ball stage (236 degrees) stirring occasionally to prevent sticking.
  • Remove from heat and let stand, without stirring, until the bottom of the pan is lukewarm.
  • Beat until the candy loses its gloss, then quickly stir in nuts and vanilla.
  • Pour into buttered 8" or 9" pan.
  • When cool, eat by the spoonful!
