EASY BATTER FRUIT COBBLER
Short of serving store-bought ice cream, you won't find a simpler, more delicious dessert than this fruit cobbler. Use any juicy summer fruit: peaches, nectarines, blueberries, blackberries, strawberries, raspberries. And if you use frozen berries, this dessert can be assembled in less than 10 minutes.

Steps:
- Adjust oven rack to upper-middle position, and heat oven to 350 degrees.
- Put butter in an 8-inch square or 9-inch round pan; set in oven to melt. When butter has melted, remove pan from oven.
- Whisk flour, 3/4 cup of sugar, baking powder and salt in small bowl. Add milk; whisk to form a smooth batter. Pour batter into pan, then scatter fruit over batter. Sprinkle with remaining 1 Tb. of sugar.
- Bake until batter browns and fruit bubbles, 50 to 60 minutes. Serve warm or at room temperature with a dollop of whipped cream or a small scoop of vanilla ice cream, if desired.

FRUITY PRALINE COBBLER
This recipe is from Cajun Chef Ryan. Inspired by his wife who loves peaches-- but this recipe can be made with other fruit- fresh or frozen or canned. It is so unique and easy you will want to have it at your next party of holiday gathering. I just love the idea of the pecan praline rolls on top which are good baked in a buttered pan by themselves!!!!

- Preheat oven to 400^. Peach Filling: Cut the peaches into 10 slices per peach. In a large saucepan, combine the remaining ingredients, stir to dissolve the sugar, then turn on the heat to medium and add the peaches. Stir well to evenly coat the peaches, continue to cook until thick and just starts to bubble. Turn off heat and cover to keep warm.
- Dough Filling: Melt the butter in a medium bowl and add the brown sugar and stir until dissolved. Add the pecans and stir until evenly coated then set aside.
- Dough:In a small bowl combine the milk and lemon juice and set aside. In food processor combine all the ingredients , except the butter, pulse to combine. Now add the butter to the processor and pulse until it resembles coarse crumbles.( this process can be done with a pastry blender if you do not have a food processor).
- Place the mixture in a large bowl and make a well in the middle. Add the lemon milk mixture and stir just until the dough clings together and is in one solid mass.
- Turn dough onto a floured surface and kneed gently for 1- to 12 times. Roll dough into an 8x12 inch rectangle. Then spread the pecan filling evenly over the top of the dough.
- Roll up the dough from the long side.
- Cut dough into 12 one inch pieces. Pour the warm peach filling into the ungreased pan. Place the filled dough rolls with the cut side down on top of the peaches. Bake uncovered for 25 minutes, until golden brown and dough is fully baked. Cool in pan for 30 minutes. Serve warm with heavy cream or 1/2 & 1/2 drizzled over top.

- Place a piece of parchment paper on a small rimmed baking sheet or large plate.
- In a food processor, pulse together flour, granulated sugar, baking powder, baking soda and salt. Pulse in butter just until mixture looks like small pebbles. Drizzle in buttermilk and cream, and pulse just to combine.
- Transfer to a lightly floured surface and pat dough together, incorporating any stray or dry pieces. - Meanwhile, heat oven to 350 degrees. In a large bowl, toss together fruit, sugar to taste, and tapioca. Let sit for 20 minutes to hydrate tapioca, then scrape into a 2 1/2-quart gratin dish or 9-by-13-inch baking pan.
- Top with biscuits, then brush biscuit tops with remaining 1 tablespoon cream. Sprinkle with turbinado sugar, and bake until dark golden on top and fruit is bubbling in the middle, about 1 hour, rotating halfway through. Let cool for at least 30 minutes before serving.

- Brush the top of the biscuit dough with 1 Tablespoon of buttermilk, then sprinkle with coarse sugar. These two are optional, but both help achieve a shiny, crunchy, golden brown crust.
