Leche Flan is silky smooth, rich, and creamy with golden caramel. This classic Filipino custard dessert is easy to make and sure to be crowd favorite.

9 tablespoons sugar
12 egg yolks, from large eggs
1 can (14 ounces) sweetened condensed milk
1 can (12 ounces) evaporated milk

Steps:

  • Place 3 tablespoons of sugar in each of the three llaneras.
  • Set llanera on the stove over low heat and using tongs, move repeatedly over flames until sugar is melted and turns into a golden liquid.
  • Continuously tilt and swirl the llanera to ensure even melting and to distribute the liquid on the bottom of the mold. Remo
  • Remove from heat and allow caramel to cool and harden. Repeat the process with the remaining llanera.
  • In a bowl, combine egg yolks and condensed milk. Whisk to combine.
  • Add evaporated milk, gently stirring in a circular motion until blended.
  • Using a cheesecloth or fine-mesh sieve, strain egg-milk mixture to remove stray egg whites.
  • Pour mixture into prepared llaneras and cover tighly with foil Arrange in a a wide, oven-safe dish with about 1-inch of water (bain marie or water bath)..
  • Bake in a 375 F oven for about 50 minutes to 1 hour or until a toothpick inserted in the middle of custard comes out clean.
  • Remove from oven, allow to cool, and refrigerate to chill and completely set. To serve, turn flan over on a serving plate, ending with caramel on top.

For the clearest caramel and smoothest custard, ceramic or glass baking dishes work best for cooking this Filipino-American-style dessert.

Yield 8 servings

Number Of Ingredients 7

1 small grapefruit
1 2/3 cups sugar, divided
4 large eggs
5 large egg yolks
1 1/3 cups heavy cream
1 1/3 cups whole milk
1/4 teaspoon kosher salt

Steps:

  • Finely grate zest from grapefruit; set aside. Cut away peel and white pith from flesh; discard. Working over a bowl, cut along membranes to release segments into bowl; discard membranes. Set segments aside.
  • Cook 1 cup sugar in a small saucepan over medium heat until it begins to melt and turn brown around the edges. Using a heatproof rubber spatula, pull melted sugar at edges toward center of unmelted sugar. Continue cooking, pulling in melted sugar, until all the sugar is melted and caramel is uniformly dark brown (it should smell toasty but not burnt), 10-12 minutes total (if you still have undissolved lumps of sugar, stir off heat until they melt). Divide caramel between two 8"-diameter shallow ceramic ovenproof baking dishes or two 9x5" loaf pans, preferably glass or ceramic, to create a 1/8"-1/4" deep layer. Let cool.
  • Place a rack in middle of oven; preheat to 275°F. Bring a large pot of water to a boil. Purée eggs and egg yolks with remaining 2/3 cup sugar in a blender until smooth and sugar is dissolved, about 1 minute. Transfer to a large bowl and gently mix in cream, milk, salt, and reserved grapefruit zest; let sit 5 minutes. Strain into a large measuring glass. Divide custard between prepared baking dishes.
  • Line a roasting pan with a thick kitchen towel; this will keep baking dishes from sliding and will insulate flan, preventing it from overcooking. Set dishes on towel and place roasting pan in oven. Pour very hot water into pan until it reaches the same level as flan in baking dishes. Bake flan until it looks set like Jell-O (it will wobble when gently shaken), 40-55 minutes. Transfer dishes to a wire rack; let flan cool.
  • Run a small knife around edges of flan to loosen. Invert onto a platter and top with reserved grapefruit segments.
  • Flan can be made 1 day ahead. Cover and chill. Unmold and bring to room temperature before serving.

439 g fruit cocktail, drained
3/4 cup sugar
3 tablespoons water

Steps:

  • Caramel: Heat sugar and water over medium heat until brown and sugar has caramelized. Distribute in 8 individual molds (1/2 cup capacity). Set aside.
  • Flan: Combine first 4 ingredients. Beat well. Strain mixture into prepared molds until half-full. Spread 2 tablespoons of Fruit Cocktail on each mold. Cover with wax paper or foil and steam for 40 minutes. Cool, then chill. Unmold and serve upside down.

A beautiful fresh fruit dessert, this is not your regular 'fruit pizza.' This recipe was given to me by a great cook and great friend. You can substitute your favorite fruits or berries for those in this recipe.

2 ⅛ cups all-purpose flour
½ teaspoon cream of tartar
½ teaspoon baking soda
½ cup white sugar
½ cup confectioners' sugar
½ cup butter
½ cup vegetable oil
1 egg
½ teaspoon vanilla extract
1 (8 ounce) package cream cheese, softened
⅓ cup white sugar
½ teaspoon vanilla extract
3 cups fresh strawberries, hulled and halved
1 cup fresh blueberries, rinsed and dried
3 kiwifruit, peeled and thinly sliced
1 tablespoon cornstarch
¼ cup white sugar
½ cup water
½ cup orange juice
2 tablespoons lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10-by-15 inch jelly roll pan.
  • For the crust, sift together the flour, cream of tartar, and baking soda into a mixing bowl. In a separate bowl, cream together white and confectioners' sugars, butter, vegetable oil, egg, and vanilla. Add the dry ingredients. Blend well. Spread the dough evenly on the bottom of the greased pan. Bake until golden brown, 10 to 12 minutes. Allow to cool completely.
  • For the filling, cream together the cream cheese, sugar, and vanilla. Spread over the cooled crust. Arrange the fruit on the cream cheese filling and refrigerate.
  • For the glaze, mix together the sugar and cornstarch in a small saucepan. Whisk in the water, orange juice, and lemon juice. Bring to a boil over medium heat; boil gently for one minute. Remove from heat and allow to cool completely.
  • Spoon or brush the glaze evenly over the fruit. Refrigerate until ready to serve.

8 oz of plain flour
4 oz of butter
2 oz of sugar
1 pint of milk
1 vanilla pod seeds removed
2 oz of corn flour
2 oz custard powder
1 egg
and a selection of fruit of your choice
stock syrup
2 oz sugar
pint water

Steps:

  • rub flour and fat together untill resembles bread crumbs
  • then add sugar if you have no caster sugar cream the granulated sugar into the butter then add the flour bring together to a soft paste , do not need pastry requires little effort . let pastry rest for 15 mins in cling film in the fridge
  • once rested line a greased flan case put a peice of cling film over the top and fill with baking beans or lentils and bake till golden brown . put milk on the hob with vanilla pod and seeds and start to boil , mean while cut your selected fruit and if using bananas toss in lemon juice to prevent browning
  • mix corn flour custard powder and the egg together till pale then strain your scorching milk over the mix and beat quickley and hard , then put back in the pan return to the heat whilst whisking once it resembles a thick glue remove from heat .and spread inside your flan case
  • leave to cool for a while till set then decorate your flan with the fruit
  • make a stock syrup from 2 oz of sugar and a pint of water on the heat till resembles wall paper paste carefully using a pastry brush or ladle cover all the fruit leave to set and serve

2 (11.3 ounce) cans evaporated milk
8 egg yolks
zest of 1 lime

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Combine 1 cup sugar and water in a saucepan over medium heat. Heat until sugar is dissolved and mixture is thickened and light brown, 7 to 10 minutes. Line the inside of a flan mold with the caramel mixture, tilting the mold to make sure the whole surface is covered.
  • Combine remaining 1 cup sugar, evaporated milk, egg yolks, and lime zest in a bowl. Gently mix, not beat, until yolks are all broken and blended. Strain the custard through a sieve to remove the zest. Pour mixture into the flan mold. Place flan mold in a larger baking pan filled with water.

1 cup sugar
¾ cup water
1 (13 ounce) can evaporated milk
1 (13 ounce) can sweetened condensed milk

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Combine sugar and water in a saucepan over medium heat. Heat until sugar is dissolved and mixture is thickened and light brown, 7 to 10 minutes. Spread caramel evenly over the inside of a flan mold, tilting the mold to make sure the whole surface is covered.
