MONTE CRISTO SANDWICH (HAM CHEESE FRENCH TOAST)
Monte Cristo is America's answer to the French classic Croque Monseur. Most commonly made with ham, but also found made with turkey and other sliced meats. Gruyere is the most common type of cheese used but really, you can't go wrong no matter what type of cheese you use, just as long as it's a good melting cheese!

Steps:
- Lightly whisk egg, milk and a generous pinch of salt in a flat bowl.
- Spread 2 slices of bread with mayonnaise.
- Top with ham, then cheese, then sandwich with remaining slices of bread. Press down firmly.
- Melt butter in a skillet over medium heat.
- Dip each side of the sandwiches briefly in the egg mixture, then place in skillet.
- Cook the first side, pressing down with an egg flip, for 3 minutes or until deep golden brown.
- Flip and cook the other side for 3 minutes, pressing down firmly with the egg flip, until golden brown and the cheese is melted.
- Serve immediately, while hot!

- Place two slices of Canadian bacon and one slice of cheese on each of six slices of bread. Top with remaining bread. Place eggnog in a shallow dish. - Whisk eggs, 3 tablespoons milk, white sugar, and vanilla extract together in a shallow bowl until smooth.
- Heat 1/4 inch of oil in a large saucepan over medium heat.
- Dip 4 pieces of bread in egg mixture and fry until golden brown, about 2 minutes per side. Repeat with remaining pieces.
- Combine 2 tablespoons of milk with custard powder in a small bowl; stir until smooth. Bring remaining milk to a boil in a small saucepan. Stir custard mixture into the saucepan. Reduce heat and cook, stirring frequently, until custard thickens, about 5 minutes.
- Place 8 bread toasts on a shallow tray. Spread custard over each piece. Cover with remaining 8 toasts to form a sandwich. Dust with confectioners' sugar. Top each sandwich with a dollop of whipped cream and a strawberry. Insert a toothpick through the fruit to hold the sandwich together.

STUFFED FRENCH TOAST WITH FRUIT & CREAM CHEESE (BAKED)
Came up with this as a quick and filling breakfast while I was pregnant. The whole family loves it. I've found the leftovers are a little better because the flavors have a chance to blend more. It looks like a lot but it's actually quick & easy to put together. Please follow the steps for mixing ingredients as they're listed... This prevents the "floating" of the dry ingredients and makes for a smooth & blended caramel colored egg mix. Also, I always spread the cream cheese & pie filling over the bread slices rather than pouring it on top so they end up as "sandwiches". We dish them out as sandwiches but have to eat with forks :)

Steps:
- For the egg mixture:.
- Mix all dry ingredients together (flour, sugar, salt, & cinnamon).
- Add 1/3 cup milk & stir until blended. This will make a bit of a "paste.".
- Add the remaining 1/3 cup milk. Mix.
- Add the melted butter & vanilla. Mix.
- Add the eggs. Mix until completely blended.
- For the cream cheese mixture:.
- Use a mixer to blend cream cheese & sugar until smooth.
- Add egg & vanilla. Blend until smooth.
- Grease a 9x13 pan & dip 6 of the slices of bread into the egg mixture, allowing it to drain a few seconds before placing in the bottom of the pan.
- Place dollops of cream cheese mix over each slice of bread & spread to cover bread.
- Place dollops of fruit filling over cream cheese & spread over the area of each piece of bread.
- Dip the remaining 6 slices of bread into the egg mixture and allow to drain a few seconds before placing on top of the pie filling.
- Sprinkle with chopped nuts and cinnamon sugar.
- Bake at 350 for approximately 45 minutes (may vary based on ovens.).
- Allow to cool and enjoy :).

- In a medium saucepan, combine the apples, water, maple syrup and cinnamon stick and bring to a boil. Simmer over moderately low heat, stirring occasionally, until the apples are tender, about 6 minutes. Using a slotted spoon, transfer the apples to a bowl and let cool to room temperature.
- In a shallow bowl, whisk the milk and eggs. Spread 4 slices of the bread with mustard. Top with half of the cheese, the ham and then the remaining cheese.
- In a large skillet, melt 1 tablespoon of the butter over low heat. Dip the bottoms of the 4 topped bread slices in the beaten egg until just saturated and transfer to the skillet. Dip the remaining slices of bread on 1 side only and place them, soaked side up, on the sandwiches. Cover the skillet and cook over moderately low heat until the bread is browned on the bottom, about 3 minutes. Turn the sandwiches, adding more butter to the skillet if necessary. Cover and cook until the second side is browned and the cheese is melted, about 3 minutes longer. Transfer the sandwiches to a cutting board and let stand for 5 minutes. Cut in half and serve with the maple apples.
