ACINI DI PEPE SALAD
Acini di pepe is the Italian word for peppercorns. Any tiny round-shaped pasta works well in this chilled fruit salad. Great in the summer, but my family asks for it every holiday. Every time I bring this to a party I get requests for the recipe.

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain.
- In medium saucepan, combine reserved liquids from pineapple and oranges (equals about 1 1/2 cups), sugar, eggs, salt and flour. Cook until thick, stirring constantly. When mixture becomes thick, add cooked pasta and refrigerate overnight.
- The next day, add pineapple and oranges, whipped topping and marshmallows to taste. Mix together and top with cherries if desired. Keep chilled until served.

ACINI DI PEPE SALAD
A recipe from my Aunt Patty. There are recipes like this on 'Zaar, but this is a bit different in it's preparation and ingredients. An ambrosia type salad, this is good for a winter dessert or a summer barbeque. Cooking time includes refrigeration.

Steps:
- Cook pasta per box directions. Drain and rinse when done then set aside to cool.
- Heat pineapple juice, sugar, salt, flour, and eggs over medium heat. Bring to a boil, stirring until mixture thickens. Set aside to cool.
- When both pasta and pineapple juice mixture are cool, combine them then refrigerate in an airtight container overnight.
- Next day: stir in fruit and nuts (if desired). Fold in Cool-Whip. Refrigerate until ready to serve. Makes enough for a big crowd!

ACINI DI PEPE SALAD
I have been making this for years, and we usually took it camping because it is a 2 step process, and was easy to throw together the next day. The recipe originally came from muy sisters employee cook book St Law Psychiatric Center Centenial Cookbook. The cook was JoAnn Whitford. It's a really sweet salad, almost a dessert.

Steps:
- 1. Cook Acini per package directions, rinse, and drain well.
- 2. Mix together in a saucepan the eggs, flour, sugar, salt, and juices from oranges and pineapple.
- 3. Cook and stir until thick, pour custard over cooked Acini. Cover and chill overnight.
- 4. Next day stir in Cool Whip, fruit, and serve. Add optional fruit you are using at this time also.

- Bring a large pot of salted water to a boil. Cook the pasta for about 6 minutes or until tender. Drain and rinse under cold water to stop the cooking process.
- Toss the pasta with the olive oil, red wine vinegar, and salt. Fold in the tomatoes, pine nuts, radicchio, onion, and basil. Sprinkle with the feta cheese.
- Serve at room temperature.

- In a small saucepan, combine the sugar, flour and salt. Gradually stir in pineapple juice. Bring to a boil, stirring constantly. Stir a small amount of hot mixture into eggs; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Gently stir in lemon juice. , Transfer to a large bowl. Cool to room temperature without stirring. Exotic tropical fruit dish. Easy to make, A gang pleaser and a enjoyable dessert. When cooking pasta, do not over cook it or undercook it. Drain the pasta in cold water after done cooking. Make sure you save the juices for after you mix it.

- Cook the Acine De Pepe pasta--DO not cooked thoroughly.
- Drain the pineapples and oranges. SAVE JUICES. Mix the juices with sugar, flour and eggs.
- In a bowl stir in with all the ingredients. Let sit over night in the refrigerator, then add the fruit and the Cool Whip. Let it chill for 2 hours, then serv it and enjoy it. - SINC.
