Steps:
- Mix all ingredients in medium saucepan. Let stand 5 min.
- Bring to full rolling boil on medium heat, stirring constantly. Remove from heat.
- Cool 20 min. (Pudding thickens as it cools.) Stir pudding. Serve warm or chilled.

EASY FRUIT JUICE TAPIOCA PUDDING
This is my version of the fruit juice pudding recipe on the Minute Tapioca box. I omitted the sugar from the original recipe which I think is rather unnecessary. Topping the pudding with corn flakes adds a great crunch. Also add chopped nuts and dried fruit if you like. Note: Prep. time includes time taken for cooling.

Steps:
- Mix tapioca, salt and fruit juice in a small saucepan.
- Let it stand for 5 minutes.
- Cook on medium heat stirring constantly until mixture comes to a full boil.
- Remove from heat (The pudding thickens as it cools).
- Cool 20 minutes, and stir.
- Top with corn flakes and fresh fruit for a yummy, healthy snack.
- You can have this warm or chilled-- I like it chilled!
FRUIT JUICE PUDDING (SAFTKRAM)
This is the traditional dessert at my community's Swedish smorgasbord. It's a sweet thin-set pudding served with milk or cream. I like this made with grape or any dark red berry juice. From my Grandma's "Swedish Food" cookbook.

Steps:
- Bring juice, water and sugar to boil.
- Mix cornstarch with a small amount of cold water.
- Remove saucepan from heat and whisk in cornstarch.
- Return to heat and bring to boiling point.
- Simmer 3-5 minutes, stirring occasionally.
- Remove to serving bowl, cover and chill.
- Garnish with almonds if desired and serve with cream or milk.

Steps:
- Using a vegetable peeler, cut colored portion from orange in single spiral.
- Reserve orange for another purpose.
- In a large pot combine orange peel and the next five ingredients.
- Let stand 4 hours.
- Bring to a boil over medium heat.
- Reduce to low; simmer 30 minutes.
- Serve hot or cold in punch cups with a few raisins and almonds in each serving.

- Drain pineapple and oranges, reserving juices in a 2-cup measuring cup; set fruit aside. Add enough water to juices to measure 1-1/2 cups. In a saucepan, whisk the juices and pudding mix. Cook and stir over medium heat until mixture comes to a full boil. Cool to room temperature, stirring occasionally., Fold in the strawberries, cherries and reserved pineapple and oranges. Cover and refrigerate. Just before serving, fold in bananas.
