ORANGE-GLAZED TURKEY



Orange-Glazed Turkey image

I've used this recipe for our Thanksgiving meal for years. Everyone loves the flavor the orange marmalade gives the turkey.

2 teaspoons salt
2 teaspoons pepper
2 teaspoons dried savory
2 teaspoons rubbed sage
1 turkey (18 to 20 pounds)
2 medium pears, thinly sliced
1 large onion, quartered
1 celery rib, quartered
1/2 cup butter, melted
3/4 cup orange marmalade
3/4 cup orange juice
1 tablespoon honey

Steps:

  • In a small bowl, combine the salt, pepper, savory and sage. Rub 1 tablespoon of seasoning mixture in turkey cavity. Place the pears, onion and celery in turkey cavity; tie drumsticks together. Place, breast side up on a rack in a roasting pan. Combine butter and remaining seasoning mixture; brush over turkey. Bake, uncovered, at 325° for 3-1/4 to 3-1/2 hours. , Meanwhile, combine orange marmalade, orange juice and honey in a saucepan. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until thickened, stirring occasionally. Set aside and keep warm. When turkey begins to brown, cover lightly with a tent of foil. Bake 1 hour longer or until thermometer reads 180°, brushing occasionally with the orange glaze. Cover and let stand for 15 minutes before carving. Thicken pan juices for gravy if desired.

TURKEY WITH POMEGRANATE GLAZE

Number Of Ingredients 16

6 quarts water
1 1/2 cups kosher salt, plus more for seasoning
3/4 cup light brown sugar
1/4 cup coriander seeds
One 2-inch piece fresh ginger, sliced
2 bay leaves
1 gallon ice cubes
One 16- to 18-pound turkey, giblets removed
2 celery stalks, cut into 4 pieces
1 lemon, quartered
1 onion, quartered
4 sprigs parsley
1/2 cup pomegranate molasses
1 tablespoon Aleppo pepper
1 tablespoon unsalted butter
2 teaspoons soy sauce

Steps:

  • For the brine and turkey: In a large stock pot, bring water, 1 1/2 cups kosher salt, sugar, coriander, ginger and bay leaves to a boil over high heat. Lower heat and simmer for 10 minutes, stirring occasionally to make sure the salt and sugar dissolve. While the brine is simmering, place the ice in a bucket or pot big enough to hold the turkey. Pour the brine over the ice. When the brine has cooled, add the turkey. Place a heavy object like a plate or lid on top of the turkey to keep it submerged in the brine. Refrigerate for 8 to 12 hours.
  • Position an oven rack on the lowest level of the oven and preheat the oven to 450 degrees F. Remove the turkey from the brine and pat it dry; discard the brine. Tuck the wings underneath the turkey. Sprinkle the turkey inside and out with salt. Put the celery, lemon, onion and parsley into the cavity of the turkey and tie the legs together with kitchen twine. Place breast-side down in a roasting pan fitted with a rack. Roast for 30 minutes.
  • For the glaze: While the turkey roasts, combine the pomegranate molasses, 3 tablespoons water and Aleppo pepper in a medium saucepan and bring to a simmer. Adjust heat and simmer, uncovered, until thick and syrupy, 5 to 10 minutes. Stir in the butter and soy sauce and remove from heat.
  • After 30 minutes of roasting, turn the turkey breast-side up and lower the oven temperature to 325 degrees F. Roast 3 hours longer, or until a meat thermometer inserted into the thickest part of the thigh but not touching bone registers 160 degrees F. When the thermometer registers 155 degrees F, or during the last 30 minutes of cooking, begin basting with glaze every 5 to 10 minutes. Remove the turkey from the oven and allow to rest for 15 minutes before carving.

CRANBERRY-ORANGE GLAZED TURKEY

1 1/2 teaspoons kosher salt
One 11-pound turkey, cut into 6 pieces
2 tablespoons extra-virgin olive oil
3/4 teaspoon freshly ground black pepper
Cranberry-Orange Glaze, recipe follows
1 cup low-sodium chicken broth
Assorted fresh herb sprigs, for garnish
orange wedges, for garnish
whole cranberries, for garnish
1/2 cup frozen orange juice concentrate, thawed
1/2 cup frozen cranberry juice cocktail concentrate, thawed
1/4 cup orange marmalade
1 1/4 teaspoons chopped fresh rosemary
1 tablespoon butter
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper

Steps:

  • Position an oven rack in the bottom third of the oven. Preheat the oven to 400 degrees F.
  • Rinse the turkey pieces and pat very dry with paper towels. Brush the turkey all over with the oil, and then sprinkle with the salt and pepper. Arrange the turkey pieces, skin-side up, on a baking sheet with the thick end of breasts and thighs at the corners and the drumsticks in the center. Roast for 1 hour and 10 minutes.
  • Remove the turkey from the oven and brush with the Cranberry-Orange Glaze. Pour the broth onto the baking sheet to prevent the drippings from burning and roast the turkey 20 more minutes, covering loosely with foil if browning too quickly, until an instant-read thermometer registers 165 degrees F to 170 degrees F in the thickest part of the thigh (do not let the thermometer touch the bone).
  • Transfer the turkey to a platter. Brush generously with more glaze and let rest 25 to 30 minutes.
  • Meanwhile, scrape all the pan juices and browned bits from the baking sheet into a large measuring cup. Spoon off and discard the fat that rises to the surface. In a heavy, medium saucepan, heat the degreased pan juices over medium-high heat. Whisk 2 to 3 tablespoonfuls of the glaze into the pan juices (or more if desired) to make the gravy and bring to a simmer for the flavors to blend.
  • Slice the turkey and arrange on the platter. Garnish with the herb sprigs, oranges wedges and cranberries. Serve the turkey with the gravy.
  • In a small saucepan, bring the juices, marmalade and rosemary to a boil over medium-high heat. Boil until the glaze thickens enough to coat a spoon, whisking often, about 15 minutes. Remove from the heat. Whisk in the butter, and then season the glaze with the salt and pepper.

This Roasted Turkey with Maple Bourbon Glaze is so simple yet so beautiful! It's perfect for all home chefs, from Thanksgiving novices to seasoned pros.

1 (14 to 16 pound) turkey, thawed if frozen
4 sprigs thyme
3 sprigs sage
1 apple, sliced
1/2 white onion, sliced
3 tablespoons canola oil
1 stick (8 tablespoons) unsalted butter
1/2 cup apple juice
1/4 cup bourbon
1/4 cup maple syrup
1/4 teaspoon ground black pepper

Steps:

  • Make the Roasted Turkey: Preheat oven to 500 degrees F with a rack set at the lowest level. Pat turkey completely dry with paper towels, and place turkey on rack inside roasting pan.
  • Place thyme, sage, apple and onion in turkey's cavity. Tuck turkey wings underneath the turkey. Liberally brush oil all over turkey.
  • Transfer turkey to oven and cook 30 minutes. Reduce oven temperature to 350 degrees F and continue roasting about 2 to 2-1/2 hours (although it could be a little less!), until a probe thermometer inserted in the thickest part of the breast reaches 161 degrees F.
  • Meanwhile, make the Maple Bourbon Glaze: Add butter, juice, bourbon, maple syrup and pepper to medium saucepot. Heat to boiling over medium-high heat, then reduce heat to medium. Cook 24 to 28 minutes or until mixture is reduced by half, watching carefully to make sure mixture doesn't boil over. Mixture should have a thin glaze consistency, and will continue to thicken as it cools. Remove from heat; set aside at room temperature.
  • When turkey is finished cooking, remove from oven and brush with some Maple Bourbon Glaze. Transfer turkey to cutting board and loosely tent with foil. Let rest 30 minutes before carving and serving brushed with additional glaze.
