FRUIT AND NUT SQUARES
Cranberries, apricots and nuts mix up into a rich and delicious favorite holiday bar.

Steps:
- Heat oven to 350°F. Grease bottom and sides of 13x9-inch pan with shortening or cooking spray. In large bowl, mix 2 cups flour, the brown sugar and butter with fork until crumbly. Press firmly in bottom of pan.
- In same bowl, mix filling ingredients. Spoon onto crust; spread evenly.
- Bake 25 to 30 minutes or until lightly browned. Cool completely, about 45 minutes. For squares, cut into 8 rows by 6 rows.

DRIED-FRUIT-AND-NUT HEALTH BARS
These nutrient-dense oat bars are packed with dried fruit, cherries, blueberries, and papaya, as well as nuts, and flaxseed. And there's no refined sugar, they're sweetened with pureed dates and honey -- and just right for a snack or breakfast on the go.

Steps:
- Preheat oven to 350 degrees. Place dates in a small saucepan, cover with cold water, and bring to a simmer. Drain reserving cooking water. Puree dates in a food processor with honey and 1/4 cup reserved cooking water until smooth.
- Coat an 8-inch square baking pan with cooking spray and line with parchment paper leaving a 2-inch overhang on all sides. Mix oats or quinoa flakes, nuts, papaya, cherries, blueberries, bran, flaxseed, wheat germ, salt, and cinnamon in a large bowl. Mix in date puree. The mixture should be moist enough to hold together. If necessary, add up to 1/2 cup more cooking water. Press mixture into pan.
- Bake until center is firm and edges are golden, about 20 to 25 minutes. Let cool in pan on a wire rack. Cut into 16 bars.
FRUIT, OAT & SEED BARS

- Heat oven to 160C/fan 140C/gas 3. Gently heat the sugar, golden syrup and butter in a pan until the sugar and butter have both melted. Stir the oats, raisins, walnuts, seeds and cranberries into the pan until coated in the butter.
- Spoon half the oaty mix into a traybake tin (23 x 23cm or thereabouts). Scatter the apricots over the top, then top with the remaining oat mix. Pack the mix down well and smooth with the back of a metal spoon. Bake for 35 mins or until dark golden. Leave to cool completely before cutting into 16 bars with a sharp knife.

FRUIT AND NUT BARS
A real standout at the pot-luck dessert table amid the brownies and chocolate chip cookies. Very easy to make, but do it the night before to give them time to cool ALL the way. They're better the next day anyway. If you need to leave out the nuts just up the amount of fruit.

Steps:
- prepare cookie sheet or jelly-roll pan by lining with foil and spraying with cooking spray; they'll never come out of the pan otherwise!
- preheat oven to 400°F.
- steam dried fruit for about 15 minutes (I like to use Sun Maid Fruit Bits to get a variety and avoid the chopping).
- beat eggs.
- heat eggs and sugar in saucepan until sugar is melted.
- remove from heat and add salt and vanilla.
- add flour 1/2 cup at a time and stir until combined.
- stir in nuts (any kind, I like pecans).
- pour into prepared pan, taking care to fill the corners, the mixture is very sticky.
- bake 15-16 minutes.
- let cool completely.
- turn tray upside down onto cutting board, gently peel foil, then cut into bars.

- Preheat the oven to 325 F. Line an 8 inch square baking pan (or 7”x 11” glass baking dish) with parchment paper. Spray the parchment with non stick cooking spray to prevent the bars from sticking.
- Mix the nuts, cereal, and dried fruit together in a bowl. Add the corn syrup and add a pinch of salt. Stir and mix well. Press into the baking pan using a wooden spoon or additional piece of parchment paper.

- Line a 13 x 9-inch baking pan with parchment paper. Cut a second piece of parchment paper the same size (you'll use this to press the bars into shape).
- Stir together all ingredients except for brown rice syrup until combined. Pour syrup over and stir until mixture is evenly coated.
- Add to prepared baking dish and lay second piece of parchment paper over the top. Using your hands or an 8-inch square baking dish, firmly press the mixture into an even layer in the pan - put some muscle into this, you want your bars to stay together. Recycle extra parchment sheet.
