1 can (14 ounces) sweetened condensed milk
1 can (8 ounces) crushed pineapple, undrained
1/4 cup lemon juice
1 carton (8 ounces) frozen whipped topping, thawed
1 graham cracker crust (9 inches)
Optional: Chopped toasted macadamia nuts and additional crushed pineapple

Steps:

  • Combine milk, pineapple and lemon juice; fold in whipped topping. Pour into prepared crust. Refrigerate until serving. If desired, serve with toasted macadamia nuts and additional crushed pineapple.

My Dad's mom would make this for him every time we visited Illinois. As a child, I could hardly wait for the filling to cool enough to eat. The secret is to stir constantly for a rich, velvety smooth pudding-like melt-in-your-mouth experience. These instructions are per my grandmother, written down by my mother not too long before Grandma passed away. Grandma wouldn't give the recipe away until her last years. It's a family treasure now! Top the pie with meringue, whipped cream, or whipped topping.

1 cup sugar
3 tablespoons all-purpose flour
½ teaspoon salt
1 cup milk
1 (15 ounce) can crushed pineapple, drained
2 egg yolks
3 tablespoons butter
1 (9 inch) baked pie crust

Steps:

  • Whisk sugar, flour, and salt together in a saucepan over medium heat. Add milk and cook, whisking constantly, until mixture thickens and begins to bubble, 3 to 5 minutes. Remove from heat.
  • Stir pineapple, egg yolks, and butter into milk mixture. Return to heat and cook over medium heat until mixture begins to bubble, 3 to 5 minutes. Continue cooking, stirring constantly, until hot and thick, about 2 minutes more. Pour mixture into prepared pie crust. Refrigerate until chilled, at least 3 hours.

This was posted on the back of a store brand can of sweetened condensed milk. It sounds so good. Unfortunately, my daughter's allergic to pineapple, but it gives options for lime, lemon, cranberry, orange or tangerine juice. I think the combination of orange and chocolate could be delicious. The prep time is a guess and does not include freeze time. I have not tried this, but I hope you like it!

1 (14 ounce) can sweetened condensed milk
1 (6 ounce) can frozen pineapple concentrate
1 (8 ounce) carton frozen whipped topping
food coloring (optional)
1 (9 inch) chocolate crumb pie shell (or other ready-to-eat crust)

Steps:

  • Combine sweetened condensed milk and fruit juice concentrate.
  • Fold in topping and food coloring. Pour into pie shell.
  • Freeze. Defrost slightly before serving.
  • Variations: substitute lime, pink lemonade, lemon, cranberry, orange or tangerine juice concentrate for pineapple.

1 1/2 cups frozen whipped topping, thawed
1 (20 ounce) can crushed pineapple, well drained
9 inches graham cracker pie crust
1 (15 1/2 ounce) can pineapple chunks, drained

Steps:

  • Mix together cream cheese and sugar in a bowl.
  • Fold in whipped topping and well drained crushed pineapple. Spoon into pie crust.
  • Top with pineapple chunks.
  • Chill 2 hours or overnight.
  • Garnish with additional whipped topping if desired.

A creamy & refreshing summertime dessert you are sure to enjoy! It would be lovely served at a bridal shower. Individual servings are very pretty presented with whipped cream and a little pineapple ice cream topping. While creating this RSC #12 Contest entry, my objective was to come up with something like an orange creamsicle only made with the combination of pineapple and vanilla flavors. Frozen Pineapple Dream was the deliciously addicting result. I kept this dessert tightly covered in the freezer and ready to serve at a moment's notice. That way we had many opportunities to enjoy the recipe!

9 graham crackers (1 cellophane sleeve or 5.33 ounces)
1/4 cup sugar (half Splenda & half sugar may be used)
1/3 cup melted butter
1 (8 ounce) can crushed pineapple
2 teaspoons unflavored gelatin (1 envelope)
1/2 cup mascarpone cheese, at room temperature
1 1/2 tablespoons Splenda sugar substitute
3 cups pineapple sherbet, slightly softened
5 -6 drops yellow food coloring
1 (8 ounce) container Cool Whip Lite, thawed
optional pineapple topping (optional)
additional whipped cream (optional)

Steps:

  • Crush graham crackers into 1 1/3 cups crumbs and combine them with sugar & butter.
  • Press evenly across bottom of a 9x13" glass baking dish.
  • Bake graham crust at 350°F for 8 minutes then set aside to cool.
  • Drain pineapple and reserve the juice.
  • In a microwave-safe bowl, sprinkle gelatin powder over pineapple juice and allow to stand for 2 minutes until dissolved, then microwave for 30 seconds, stir, and let stand another 2 minutes until slightly thickened, then stir back into the pineapple.
  • In a large bowl, cream together mascarpone cheese & Splenda until smooth and fold into pineapple.
  • Add sherbet & food coloring to pineapple and stir until evenly mixed (You may place mixture into the freezer for a few minutes if it seems too thin - My sherbet was too soft and so I put my pineapple/sherbet mixture in the freezer for about 15 minutes at this point until it was just about as thick as the whipped topping).
  • Gently fold in whipped topping and pour evenly over cooled graham crust.
  • Cover and freeze for 1 1/2 to 2 hours or until you are ready for dessert.
  • Remove from freezer 5-10 minutes in advance of cutting into individual squares which may be decorated with optional pineapple ice cream topping and additional whipped cream.

This is my Favorite pie. It is adapted from my mothers old recipe.The amount of milk is aprox. You just add enough to equal 3 Cups of liquid, and don't worry if it curdles a little when you add the pineapple juice.it doesn't hurt a thing. Note: This works well as a pudding as well.

prepared. graham cracker crust (9 in)
2/3 cup sugar
1/2 teaspoon salt
3 tablespoons cornstarch
1 tablespoon flour
1 (14 ounce) can crushed pineapple (well drained juice reserved)
2 1/2 cups milk (aprox)
3 egg yolks, well beaten
1 1/2 teaspoons vanilla
2 tablespoons butter

Steps:

  • Mix sugar,salt,cornstarch and flour well.
  • Place reserved pineapple juice in measuring cup and add milk to equal 3 cups liquid.
  • Add to dry ingredients slowly.
  • Bring to a boil and allow to boil about 2 minutes.
  • Add some of hot liquid to egg yokes mix well and return to pot.
  • Boil another 2 minutes.
  • Remove from heat and add pineapple, vanilla and butter mix well.
  • Allow to cool about 5 minutes and pour into crust.
  • Serve as is or with whipped cream.
