6 tablespoons raspberry liqueur
1-1/2 pints vanilla ice cream
1-1/2 pints fresh raspberries
2-1/4 cups chocolate wafer crumbs
Sweetened whipped cream

Steps:

Layer each of 6 parfait glasses with 1 teaspoon raspberry liqueur, 2-1/2 tablespoons ice cream, 4 or 5 raspberries and 2 tablespoons chocolate wafer crumbs. Repeat layers twice. Freeze. To serve, top with whipped cream and remaining raspberries.

This is a fast-to-fix dessert I got from Taste of Home. The time to make is 10 minutes plus 1 hour for chilling.

Ingredients

3 cups cold milk
1 cup refrigerated hazelnut-flavored nondairy liquid coffee creamer
2 (4 ounce) packages instant chocolate pudding mix
1 cup crushed shortbread cookie
2 cups fresh strawberries, sliced
whipped cream (optional)

Steps:

In large bowl, whisk the milk, creamer and pudding mixes for 2 minutes. Let stand for 2 minutes or until soft-set.
Spoon 1/4 cup pudding into each of eight parfait glasses; sprinkle each with 1 T cookie crumbs.
Top with strawberries and remaining pudding and crumbs.
Refrigerate for 1 hour before serving.
Garnish with whipped cream, if desired.

6 egg yolks
1/2 teaspoon vanilla
1-ounce white chocolate (pastilles)
1/2 cup cocoa powder
2 tablespoons coffee liqueur
1 1/2 cups heavy cream
1/2 cup confectioners' sugar

Steps:

Whip the egg yolks until light in color and thickened. Add vanilla, set aside. Melt 1-ounce pastilles in a double boiler, add cocoa powder, and coffee liqueur. Combine mixture with the yolks. In double boiler, whisk until smooth over a low flame. Whip heavy cream to stiff peaks. Fold in sugar and then fold in cream into the yolk mixture. Pour in parfait glasses.
