Steps:
- Mix together the apple juice and sugar and pour into two glasses, then add 1/2 cup club soda to each. Be sure that glasses can hold 1 1/2 cups of liquid, adjust as needed. You want two parts apple cider to one part club soda.
- Optional: garnish with fresh cranberries.

BUTTERED APPLE CIDER

- Mix 1 stick softened butter, 1/4 cup light brown sugar and 1/2 teaspoon each ground nutmeg, cinnamon and cloves until combined. Put the butter on a piece of plastic wrap and roll into a 1-inch-thick log; wrap and chill 1 hour. Pour 3 cups apple cider into a slow cooker; cover and heat on high for 1 hour. Divide 1 cup bourbon among 6 glasses. Top each with hot cider and a slice of the spiced butter.
- If you don't have a slow cooker, keep these drinks warm in a saucepan on the stovetop over low heat.
SPARKLING APPLE CIDER PUNCH

- In a pitcher or punch bowl, stir together the sparkling cider, orange juice, cranberry juice and some vodka if using. Float the orange rounds on top. Serve chilled over ice.
SPARKLING APPLE CIDER SANGRIA
Steps:
- Put the apple cider, cognac and apples in a large pitcher and stir to combine. Chill for at least an hour.
- Stir most of the pomegranate seeds into the mixture, reserving a few for garnish. Pour in the cava. Pour the sangria into glasses and garnish each with a few pomegranate seeds.
