SUGAR-FREE PALEO PECAN SNOWBALL COOKIES

Steps:
- Preheat oven to 350 degrees F.
- Place all ingredients into food processor and process until batter forms a ball. Pulse if needed.
- Taste batter, adjust sweetener if needed.
- Line a baking sheet with silpat or parchment.
- Use a cookie scoop and make 24 mounds.
- Roll each mound in the palm of your hand.
- Place in freezer for 20-30 minutes.
- Place in oven for 15 minutes or until golden around edges.
- Allow to cool slightly.
- Once able to handle roll each in some confectioners sweetener.
- Allow to cool completely before storing in an air tight container.

HOMEMADE EDIBLE GLITTER - COLORED SALT OR SUGAR
Easy, cheap and fun! Coat the rim of a drink with this or let the kids use it like glitter for a rainy day art project. I actually made pink and green salt and sugar for my dd's bridal shower. There are so many uses for this! Kids of all ages love this! Great for wedding and baby showers, kids parties or craft projects etc,. Try different types of salt from fine to coarse if you like. Great way to get the kids involved! Try the sugar on top of breads, cookies or even toast! Storing in a clear salt shaker makes it easy to see the contents. Try making several colors and/or mixing two or more food colors to make a 'new' color. Great way to teach kids colors, math =measuring and so on. This is also just a great way to have fun and save money at the same time! You can use this same method to color rice, pasta, coconut flakes etc... Experiment and have FUN!

Steps:
- Measure salt or sugar into a clear jar with a tight fitting lid. Add food coloring one drop at a time and screw the cap on tightly. SHAKE to combine. Repeat until desired color is reached.
- Sprinkle, dip or shake onto whatever you like. I like to put this in a clear salt shaker for easy shaking or pour some into a saucer and dip the wet rim of an empty glass in it to make the glass pretty!
- Tip: This will keep for a very long time. This stays drier and stores wonderfully as is but even better if you spread colored salt/sugar in a thin layer to air dry for about an hour or microwave in 30 second intervals, stir and repeat for about 1-2 minutes or until moisture is evaporated. You can also add a few grains of rice to absorb any moisture.

WHITE PIE
In southern IL Burton's Cafe is famous for their White Pie. This is my attempt to replicate it. White vanilla can be found wherever cake decorating supplies are sold and in many kitchen specialty shops. Prep and cook times do not include pie crust. Cook time is chill time.

Steps:
- In a saucepan cook flour, cornstarch, sugar, salt,egg whites and milk until bubbling, stirring constantly; continue to cook and stir another 3 minutes.
- Remove from heat and add butter, white vanilla and almond extract, stir.
- Lay plastic wrap on pudding surface and allow to cool; pour into cool pie shell and chill, again covering surface with plastic wrap.
- When ready to serve top with whipped topping and sprinkle with ground almonds.
SNOWBALLS II
Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Cream the butter with 1/2 cup of the confectioners' sugar and the vanilla. Mix in the flour, pecans, and salt. Roll about 1 tablespoon or so of dough into balls and place on an ungreased cookie sheet.
- Bake in preheated oven until bottoms are golden, about 15 minutes. Do not allow these cookies to get too brown: it's better to undercook them than to overcook them. While cookies are still hot, roll them in confectioners' sugar. Once they have cooled, roll them in confectioners' sugar once more.

- Cream together shortening and brown sugar replacement.
- Add egg ,beat until light and fluffy.
- Combine flour,baking powder,cinnamon,salt,baking soda,nutmeg and cloves in sifter.
- Add alternately with milk to creamed mixture.
- Fold in raisins and walnuts.
- Drop by teaspoonfuls onto lightly greased baking sheets,2 to 3 inches apart.
- Bake at 350F for 12 to 15 minutes.

ABSOLUTELY SUGAR FREE FROSTING
This is so simple and so good, not just as frosting either!! I am a recently diagnosed diabetic with a gigantic sweet tooth, so I am always looking for goodies. I was sitting around bored and craving something sweet one day and this is what happened. This is pretty low in carbs too-- which is great for diabetics as well as low carb dieters. But beware, it is NOT low in fat!! This recipe makes a bunch, but I am pretty sure it can be reduced by parts. The serving number is a guess-- it depends on what you use this for.
