Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

2 tablespoons butter
1 onion, chopped
1 egg
1 ½ pounds lean ground beef
½ cup bread crumbs
¼ cup grated Parmesan cheese
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon minced garlic
1 pinch parsley flakes, or to taste
1 (8 ounce) package refrigerated crescent rolls
1 egg
1 tablespoon water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a large skillet over medium heat. Add onion; cook and stir until softened, about 5 minutes.
  • Beat 1 egg in a large bowl until foamy. Add onion, ground beef, bread crumbs, Parmesan cheese, salt, pepper, and garlic; mix until combined. Mold mixture into a loaf on a baking sheet.
  • Unroll crescent rolls and use to cover meatloaf completely, seaming seals and perforations so that no meat is visible.
  • Whisk remaining egg and water in a small bowl to make egg wash. Brush egg wash over crust.
  • Bake meatloaf in the preheated oven until crust is very dark and an instant-read thermometer inserted into the center reads at least 160 degrees F (70 degrees C), about 45 minutes.

1 large egg, beaten
1/4 cup whole milk
1/2 cup soft bread crumbs
1 small onion, chopped
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
1 pound lean ground beef
1/4 pound lean ground pork
1/4 pound fully cooked ground ham
FROSTING:
2 cups hot mashed potatoes
1/2 cup shredded cheddar cheese
1/2 teaspoon salt
1/4 teaspoon ground mustard
1/8 teaspoon pepper

Steps:

  • In a large bowl, combine the egg, milk, bread crumbs, onion, salt, pepper and paprika. Add ground beef, pork and ham; mix well. Pat meat mixture into a 7-1/2x3-3/4x2-1/4-in. loaf pan. , Bake at 350° for 1 hour or until no pink remains and a thermometer reads 160°. Drain. Invert meat loaf onto a heat-proof platter. , In a bowl, combine frosting ingredients. Cover top and sides of meat loaf with frosting mixture. Place under a preheated broiler; broil until lightly browned.

1 tablespoon olive oil
2 cups onions, (chopped (about 2 medium onions))
3 pounds ground beef
2 large eggs
3 cloves garlic, (minced)
1 cup crushed Ritz crackers, (about 1 sleeve)
2 tablespoons kosher salt
2 teaspoons ground pepper
2 tablespoons Worcestershire sauce
½ cup milk
¼ cup ketchup
¼ cup sweet barbecue sauce
4 cups skins-on mashed potatoes
parsley, (for garnish)

Steps:

  • Preheat oven to 350°F. Spray a 6½x10-inch loaf pan with nonstick cooking spray. Set aside.
  • In a large, non-stick pan over medium-high heat, add oil.
  • When the oil is hot, add onions. Cook for 5-7 minutes, or until tender, stirring frequently. Remove from heat; set aside.
  • In a large bowl, combine beef, eggs, cooked onions, garlic, crackers, salt, pepper, and Worcestershire sauce.
  • Pour in the milk, starting with ¼ cup, and mix. The texture should be soft, but not runny. Add the remaining milk, as needed.
  • To the prepared pan, add the meat mixture, making a loaf shape.
  • In a separate bowl, combine the ketchup and barbecue sauce. Mix well and spread over the top of the meatloaf.
  • Bake for 1 hour to 1 hour and 15 minutes.
  • After the meatloaf has been baked, carefully add the mashed potatoes to the top. Use an offset spatula to smooth the potatoes into an even layer.
  • Broil the frosted meatloaf for 4-5 minutes, or until golden.
  • Remove the meatloaf from the oven. Let it rest for about 5 minutes before garnishing with parsley and slicing.

  • Heat oven to 350°F. In large bowl, mix Meatloaf ingredients well. Press mixture in ungreased 8x4-inch loaf pan. Bake 40 minutes.

1 can (5-1/2 ounces) spicy hot V8 juice
1 cup chopped green pepper
2/3 cup chopped onion

1/2 teaspoon pepper
2 pounds ground beef
MASHED POTATOES:
4-2/3 cups water
1 cup plus 2 tablespoons milk
7 tablespoons butter, cubed
1-3/4 teaspoons salt
4-2/3 cups mashed potato flakes

Steps:

  • In a large bowl, combine the first nine ingredients. Crumble beef over mixture and mix well. Pat into two ungreased 9-in. square baking pans. , Bake at 350° for 15-20 minutes or until meat is no longer pink and a thermometer reads 160°; drain. Let stand for 10 minutes., Meanwhile, in a large saucepan, bring the water, milk, butter and salt to a boil. Stir in potato flakes. Remove from the heat. , Invert one meat loaf onto a serving platter; invert the second loaf onto a cutting board. Spread 1-1/2 cups mashed potatoes over loaf on the platter. Carefully slide second loaf onto the potatoes., Spread 3-1/2 cups mashed potatoes over top and sides. Spoon remaining mashed potatoes into a pastry bag with open star tip #195. Pipe a shell border around bottom and top edges. Place ketchup and mustard in separate resealable plastic bags; cut a small hole in a corner of each bag. Pipe onto potato border.
