BEST APPLE BARS
VERY MOIST!! Popular apple bars with carmel frosting! The absolute best of all the apple recipes I have ever tried. Grating the apples helps let the apple juice ooze out and give flavor. Always a WINNER. So yummy you'll smack your lips!! A good item to have with your coffee at snack time!

Steps:
- Cream butter and sugar. Add beaten egg and mix well. Add vanilla.
- In a separate bowl combine flour, baking soda, salt, nutmeg and cinnamon. Add to creamed mixture. Add grated apples.
- Pour mixture into a greased 9 x 9 inch baking pan. Bake in a 350 degree oven for 30 minutes.
- For frosting: Bring brown sugar, butter and milk to a boil. Boil only 2 1/2 minutes. Remove from heat and add sifted powdered sugar while stirring. Cool slightly and spread on bars. Sprinkle chopped pecans on top.
- Cool completely and cut into bars. Store in air-tight container to retain moisture.
- Note: If you prefer sweeter, add 1/4 cup sugar to batter of bars, but remember the apple juice from the grated apples will provide some sweetness. We enjoy it as is because the carmel frosting is sweet. Also, we have had them with no frosting and just a sprinkling of powdered sugar on top. Enjoy!

GLAZED APPLE PIE SQUARES
These apple squares are a good change from apple pie since they are glazed and a little bit sweeter. The dough is firm enough that you can eat them with your hands and are best when apples are in season. -Diane Turner, Brunswick, Ohio

Steps:
- To make the dough: In a medium bowl, whisk together eggs and milk - set aside.
- In a large bowl, whisk together flour, yeast and salt. Add butter chunks - cut it in with a pastry blender until the mixture resembles coarse crumbs. Pour in the milk mixture and stir until a soft dough forms. Divide in half, wrap in saran wrap and chill for about 30 minutes.
- Roll one piece of dough into a 12" x 17" rectangle - because the dough will be quite thin, you will want to roll the dough out onto a large sheet of parchment so it will be easier to handle. Carefully flip the dough into a 13" x 18" half-sheet pan - smooth out the corners and dough if needed.
- To make the filling: In a medium bowl, whisk together the sugar, cornstarch, salt and cinnamon. Spread the apples over the prepared dough - scatter the sugar mixture evenly over the apples. Roll out the other piece of dough in the same fashion and place it over the apples. Pinch the edges together. Cut steam vents in the top. Cover with plastic wrap lightly coated with nonstick spray - let rise in a cool place for about 1 hour.
- After about 30 minutes, preheat the oven to 350.
- Bake until golden brown, about 25 to 30 minutes. Remove and place pan on a rack to cool for about 20 minutes.
- To make the glaze: In a small bowl, stir together sugar, milk and vanilla until smooth. Drizzle it over the bars. Cool completely.

Steps:
- For Apple Filling: In a saucepan, combine water, sugar, cornstarch/water mix, cinnamon, nutmeg, and salt. Stir in egg yolk and apples. Cook over medium heat, stirring constantly, until thick, about 5 minutes. Remove from heat and let cool.
- For Dough: In a large bowl, combine 1 1/4 cups of the flour, sugar, undissolved yeast, and salt, and set aside.
- In a medium saucepan, heat the water, milk, and butter until very warm (120 to 130 degrees). Gradually add to the flour mixture. Beat for 2 minutes at medium speed, scraping the bowl occasionally.
- Add the egg yolks and 1/2 cup flour; beat for 2 minutes at high speed. Stir in enough remaining flour to make a soft dough.
- Divide the dough in half; roll half of the dough on a lightly floured surface to fit the bottom of an ungreased 15x10 baking pan.
- Spread with the apple filling.
- Roll remaining dough large enough to cover the filling. Place over the apple filling. Seal the edges of the dough together.
- Snip the surface of the dough with scissors to let steam escape. Cover; let rise in a warm, draft-free place until doubled in size, about 45 minutes.
- Bake at 375 degrees for 20 minutes or until evenly golden.
- Make Powdered Sugar Glaze: In a small bowl, combine the powdered sugar and enough milk to get a good drizzling consistency. Start with 2 tablespoons milk in 1/2 cup powdered sugar, and work up from there. Stir until smooth.
- Drizzle warm apple pastry with glaze. Let cool in pan. Cut into squares and serve.
