OLD FASHIONED STEWED TATERS N' ONIONS

Old Fashioned Stewed Taters n' Onions image

I grew up with stewed potatoes. Mom usually had them with pinto beans and a side of cornbread. This recipe isn't precise because it's one of those handed down from mom to daughter recipes. It's hard to tell how old this is. My mom told me how to make it and I'm sure her mom told her, and so on. These "taters n' onions" as we...

Number Of Ingredients 5

4 or 5 medium white potatoes (yukon gold potatoes work very well, too)
1 medium onion
1/4 to 1/2 c whole milk
butter to taste
salt and pepper to taste

Steps:

  • 1. Peel and rinse potatoes. Cut into pieces and put into a large saucepan. Peel and quarter onion and put into pan with potatoes. Cover with water bring to a boil. Cover and cook until tender.
  • 2. When potatoes are done, pour off most of the water. It's okay if there's a little water left with the potatoes. Add milk, butter, salt and pepper.
  • 3. Cook over medium heat, stirring constantly until butter is melted and potatoes have thickened. This usually only takes a few minutes. Do not mash, but leave in chunks. Serve with your favorite meat and vegetables.

~ BERMUDA ONION & GARLIC FRIED TATERS ~

~ Bermuda Onion & Garlic Fried Taters ~ image

My family loves any kind of fried potatoes. I just love cooking with garlic and onion, so I decided to use a Bermuda ( red onion ) in the potatoes this time. I just threw them together and I measured nothing, so am just going to put approx. measurements. I wasn't going to post the recipe, but they were too tasty not to. Needless...

bacon fat, enough to cover bottom of skillet - about 1/4 cup
6 - 7 medium russet potatoes - or really any potato would work - i just happened to use russets
1 medium bermuda onion - cut in half, then into quarters and sliced
1 Tbsp approx - creole seasoning
1 Tbsp garlic pepper seasoning
1 1/2 Tbsp chunky garlic paste - or minced garlic from jar
vegetable oil - to finish browning as needed

Steps:

  • 1. I washed and dried potatoes. Cut a slice into the tops of each and microwaved for 10 minutes. You want them cooked, but not mushy as you will be cutting them into chunks. Once cool enough to handle. Cut each potato into. Depending how big the potato is, cut each halve 2 - 3 times lengthwise, then cut into cubes crosswise. I use my iron skillet for fried potatoes. Any non stick skillet will work. Pour enough bacon fat into pan to cover bottom. Heat the fat over medium. Once good and hot, add the potatoes and onion. Sprinkle the top evenly with creole seasoning and garlic pepper. Add dollops of the garlic paste here and there. Let potatoes start browning, turning occasionally and adding vegetable oil as needed. The potatoes will soak up the initial bacon fat. So, just keep adding a little oil here and there as needed until potatoes are desired crispness. Salt if needed - I didn't.
  • 2. Serve immediately as a side to any meat. Are great as a side to eggs as well. I served along side of my: https://www.justapinch.com/recipes/main-course/chicken/crispy-soy-honey-thighs.html

UNCLE BILL'S FRIED POTATOES AND ONIONS

Uncle Bill's Fried Potatoes and Onions image

I remember my Grandmother making this marvelous dish over 65 years ago. We were the only vegetarians in our family and therefore Grandma cooked just to please me. A very easy, simple but tasty side dish. Young potatoes are especially good.

Provided by William Uncle Bill

Categories     Potato

Time 30m

Yield 4 serving(s)

Number Of Ingredients 8

4 large russet potatoes or 4 large yukon gold potatoes
1 large onion, sliced thin
4 tablespoons butter (or more if required)
2 tablespoons extra virgin olive oil
1/2 teaspoon granulated garlic powder
1/2 teaspoon dried dill weed
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Peel and slice potatoes about 1/8 inch thick or thinner.
  • Slice onion thinly.
  • In a large frying pan on medium-high heat, melt butter, add olive oil.
  • Add sliced potatoes and onions, cover and fry for 10 minutes. Using a spatula, turn the potatoes and onions over so they do not break apart. If potatoes appear too dry, add some additional butter.
  • Sprinkle with granulated garlic powder, dried dill weed, salt and pepper and continue to fry with cover removed for another 5 minutes or until potatoes begin to turn slightly brown; turning occasionally.
  • Serve hot with your meal.
  • Note: You may use 2 or 3 large garlic cloves (chopped small), instead of granulated garlic powder. Add to the potatoes after the first 10 minutes of cooking time.

FRENCH FRIED ONIONS

French Fried Onions image

A homemade alternative to the Durkee® brand. I use these for casserole recipes. I will never buy store-bought French fried onions again. This recipe makes a lot! I often just use one onion and about 1/2 cup of milk and 1 cup of flour with seasonings if I just want to use them for one dish. Warning: You may have to make what the original recipe calls for because they are so yummy and you won't be able to stop eating them!
