BUTTER LETTUCE SALAD WITH CRISPY PROSCIUTTO, OYSTER MUSHROOM CHIPS, CABRALES AND PEARS



Butter Lettuce Salad with Crispy Prosciutto, Oyster Mushroom Chips, Cabrales and Pears image

1 1/2 pounds oyster mushrooms
Extra-virgin olive oil
Kosher salt
Crushed red pepper flakes
1/4 pound prosciutto, thinly sliced
Red wine vinegar
2 heads butter or Boston lettuce
1 D'Anjou pear, cored and thinly sliced
1/4 pound Cabrales or other blue cheese, crumbled

Steps:

  • Preheat the oven to 375 degrees F.
  • Remove the oyster mushrooms from the stem and pull them into bite-size pieces (the smaller ones can be left whole). Add them to a bowl along with some olive oil. Season with salt and crushed red pepper, to taste, and toss to coat. Spread the seasoned mushrooms out on 2 baking sheets in a single layer. Roast the mushrooms in the preheated oven until the mushrooms are sort of "cooked on" to the bottom of the baking sheet, about 10 to 12 minutes. Remove the baking sheet from the oven and let it cool for 3 to 5 minutes. Scrape the mushroom chips off the bottom of the baking sheet with a bench scraper and reserve in a small bowl.
  • MMMMM...mushroom chips!
  • Cut the prosciutto crosswise into 1/2-inch strips. Try to keep them separated. Coat a large saute pan with olive oil and put over low heat. Lay the prosciutto strips in the pan, and when they start to shrivel and shrink add more strips to the pan. When the strips get crispy and crinkly give them a douse of red wine vinegar. Stir quickly and turn off the heat. Remove the strips to paper towels until ready to use. These are best when they are cooked the day of use.
  • Separate the leaves of the lettuce, removing any thick ribs. Wash and spin dry, if needed; usually this lettuce is pretty clean and healthy looking. Add the lettuce to a large bowl and toss in the mushrooms chips, sliced pears and blue cheese. Dress with red wine vinegar, olive oil and salt, to taste. Check the seasoning to make sure the salad is dressed appropriately. Arrange the salad on serving plates and sprinkle with the prosciutto strips.

CRISPY FRIED OYSTERS WITH WASABI AIOLI AND ASIAN PEAR AND ENDIVE SALAD



Crispy Fried Oysters with Wasabi Aioli and Asian Pear and Endive Salad image

2 large egg yolks plus 2 large whole eggs
1 1/2 tablespoons white wine vinegar
1 cup canola oil, plus more for frying
Kosher salt
1 tablespoon wasabi powder
1 bunch fresh parsley, stems removed
4 cups coarse sea salt
1 Belgian endive, julienned
1 red endive, julienned
1 Asian pear, sliced thinly on a mandoline, then julienned
1 cup panko breadcrumbs
1 cup crushed wasabi peas, plus more for garnish
1 cup all-purpose flour
1 dozen Wellfleet oysters, shucked and bottom shells reserved

Steps:

  • Add the egg yolks and white wine vinegar to a food processor. With the blade running, gradually add the canola oil, little by little, until the mixture is emulsified. Season with kosher salt. If the aioli is too thick, you can thin it out with a little water, 1 tablespoon at a time. Spoon the aioli into a bowl and set aside. Combine the wasabi powder and a little water in a small bowl. Add to the aioli and stir to combine. Season with kosher salt. Transfer to a pastry bag and set aside.
  • To another food processor bowl, add the parsley and pulse to combine. Add the coarse sea salt and process until the parsley is fully incorporated with the salt.
  • Toss the endives and pear in a small bowl and set aside.
  • Set up a deep-fryer with canola oil and preheat to 350 degrees F. Line a plate with a paper towel.
  • Combine the panko and crushed wasabi peas together in a bowl. Add the flour to a second bowl and whole eggs to a third; whisk the eggs with a bit of water. Dredge the oysters in the flour first, then egg, and finally the panko-wasabi mixture. Fry the oysters until crispy, 3 to 4 minutes. Transfer to the paper towel and season immediately with kosher salt.
  • To plate, add 3 mounds of parsley salt on the bottom of a rectangular plate. Nestle 3 shells into each salt mound. Pipe 1 dollop of wasabi aioli into each shell. Add a small bit of the endive and pear salad. Top each with a fried oyster. Add 1 more dollop of wasabi aioli. Garnish with crushed wasabi peas.

1 stick (8 tablespoons) unsalted butter, cut into pea-size pieces
1 cup all-purpose flour, plus extra for rolling
1/4 cup sugar
Pinch kosher salt
Zest of 1 lemon
1 large egg yolk
2 to 3 tablespoons ice water
1 cup sugar
1/4 cup apple cider
Juice of 1/2 lemon
1 vanilla bean, seeds scraped
1 stick (8 tablespoons) unsalted butter, cut into pats
6 pears, such as Bosc, halved, stemmed and seeded
1/2 cup mascarpone mixed with 2 tablespoons sugar, for garnish

Steps:

  • For the crust: Combine the butter, flour, sugar, salt and lemon zest in a food processor and pulse until it looks like finely grated Parmigiano. Add the egg yolk and 1 to 2 tablespoons of the ice water. Pulse, pulse, pulse until the mixture comes together. If it seems a bit dry, add a little more water and pulse, pulse, pulse until the mixture comes together into a ball. Dump the whole thing out onto a lightly floured work surface. Knead the mixture only enough to make it a smooth ball, 1 or 2 times. Using a rolling pin or your fingers, roll or press the dough out into an even circle 11 to 12 inches in diameter. Transfer to a cookie sheet lined with plastic wrap and enclose the dough in plastic wrap, then refrigerate for at least 1 hour, or preferably overnight.
  • For the filling: Preheat the oven to 425 degrees F.
  • Place the sugar, apple cider, lemon juice and vanilla bean seeds in a 10-inch nonstick ovenproof pan and stir to combine. Bring the mixture to a boil over high heat, brushing down the sides of the pan occasionally with a pastry brush dipped in water, if necessary. Cook, swishing the pan around gently to promote even cooking, until the mixture turns light brown, 6 to 7 minutes. Continue to cook the mixture until it becomes a much deeper amber color, another minute or so. Remove from the heat and stir in the butter, 2 pats at a time. The mixture will bubble up. That is okay, just be VERY CAREFUL not to get any of this on you. When all of the butter has been incorporated, begin to arrange the pears rounded-side down in circles. Try to do this neatly and in a pretty way. Remember, the bottom will be the top!
  • Return the pan to the burner and cook over medium heat for 20 minutes, then remove from the heat.
  • Retrieve the chilled pastry and place it on top of the pears. Tuck the pastry in around the edges of the pan. Bake until the dough is golden brown and crispy, 20 to 25 minutes. Let the tart cool for 10 to 15 minutes. Place a serving platter upside down on top of the pastry and CAREFULLY flip the platter and the pan over. Let the tart fall gently out of the pan.
  • Slice tart into pieces and garnish with a dollop of sweetened mascarpone.

CRISP FRIED OYSTERS WITH ASIAN VEGETABLE SLAW AND GARLIC-ANCHOVY AIOLI



Crisp Fried Oysters with Asian Vegetable Slaw and Garlic-Anchovy Aioli image

30 fresh oysters, shucked, with the shells reserved
2 large eggs
2 tablespoons milk
1 cup quick mixing flour
2 cups Japanese panko bread crumbs
1/2 cup rock salt
1/2 cup black sesame seeds
6 fresh banana leaves, available at Asian markets
Asian Vegetable Slaw, recipe follows
6 cups vegetable oil, approximately
1 recipe Garlic-Anchovy Aioli, recipe follows
6 lime wedges
1/4 cup peanut oil
3 tablespoons rice wine vinegar
1 lime, juiced
1 lemon, juiced
2 tablespoons soy sauce
1 tablespoon mirin (Japanese rice wine)
1 tablespoon sake
1 tablespoon nam pla (Thai fish sauce)
1 teaspoon sriracha (smooth Thai chili paste)
2 tablespoons sugar
1 teaspoon minced garlic
1 carrot, trimmed, peeled, and julienned
1 leek, trimmed, well washed, and julienned
1 cup shredded bok choy or other cabbage
1 hothouse (seedless) cucumber, well washed, trimmed and julienned
2 large eggs, beaten*
2 tablespoons rice wine vinegar
3 anchovy fillets, well drained and minced
1/2 teaspoon minced garlic
1/2 teaspoon turmeric
1 1/2 cups peanut oil
Coarse salt and freshly ground pepper, to taste

Steps:

  • Line a cookie sheet with parchment paper. Set aside. Wash and drain the oysters. Pat them dry. Wash and dry the shells and set them aside. Whisk together the eggs and milk. Place the flour into a plastic bag and the panko bread crumbs onto a shallow dish. Working with a few at a time, place the oysters into the flour and shake to coat. Dip the oysters into the egg mixture and then into the bread crumbs. Place the coated oysters on the prepared cookie sheet and continue coating until you have prepared all of the oysters. (If not frying immediately, cover and refrigerate).
  • Combine the rock salt and sesame seeds in a small bowl. Lay a banana leaf out on each of 6 plates. Place an equal portion of the salt mixture in the center of each leaf. Arrange 5 oyster shells around the banana leaf and fill each one with Asian Vegetable Slaw.
  • Heat the oil to 365 degrees on a candy thermometer in a deep-fat fryer. Working with a few at a time, drop the breaded oysters into the hot fat and fry for about 1 minute or until golden. Using a slotted spoon, lift the oysters from the fat and drain on paper towels. Continue frying until all of the oysters are cooked.
  • Place a fried oyster on top of each slaw-filled shell. Spoon a small dot of Garlic-Anchovy Aioli on the top of each oyster. Place a lime wedge next to each oyster and serve.
  • In a medium bowl, whisk together the peanut oil and rice wine vinegar. Add the lime and lemon juices and whisk to combine. Whisk in the soy sauce, mirin, sake, nam pla, and sriracha. When well combined, stir in the sugar and garlic. Set aside.
  • Place the carrot and the leek in boiling salted water for 30 seconds to set the color. Immediately drain and refresh under cold running water until well chilled. Pat dry.
  • Place the blanched carrot and leek in a mixing bowl along with the bok choy and cucumber. Add the reserved sauce and toss to combine. Cover and refrigerate for 2 hours before serving.
  • Place the eggs and vinegar in a mixing bowl and whisk vigorously to combine. (If you are concerned about the safety of eating uncooked eggs, replace the above ingredients and the peanut oil with 1 1/2 cups fine-quality mayonnaise, which can be seasoned with the anchovies, garlic, and turmeric.) Add the anchovies, garlic, and turmeric and whisk to blend. Slowly whisk in the oil, beating until the mixture is the consistency of mayonnaise. Taste and adjust the seasoning with salt and pepper. Store, covered and refrigerated, for up to 3 days.

Fried Oyster Salad With Lemon Dressing image

Crunchy fried oysters over a cool bed of lettuce drizzled with a refreshing lemony dressing. It's a meal unto itself.

vegetable oil, for frying
24 oysters, shucked, small to medium-sized
2 egg whites
1 cup all-purpose flour
1/2 cup cornmeal
1 teaspoon salt
1/2 teaspoon pepper
1/2 lb arugula or 1/2 lb spring greens
lemon, dressing (recipe follows)
lemon wedge, for serving
1/2 cup olive oil
1/4 cup meyer lemon juice (if unavailable, substitute 3 tablespoons fresh lemon juice and 1 tablespoon orange juice)
1/4 cup grated parmesan cheese
1 tablespoon mayonnaise
2 teaspoons minced garlic
salt and pepper

Steps:

  • In a deep skillet, heat 1/4 inch of the vegetable oil until very hot.
  • While oil is heating, whisk the egg whites in a pie plate and set aside. In another pie plate, whisk together the flour, cornmeal, salt and pepper.
  • When oil is ready, dip each oyster into egg whites, drain and then roll in flour mixture. Be sure all sides of oysters are coated with flour. Shake oysters lightly to remove excess flour and carefully arrange oysters in hot oil.
  • When arranging oysters in pan, begin at outer edge and lay oysters in a ring around outside of pan. Place a few oysters in center. Do not crowd pan. When you finish laying out oysters, first ones will be ready to turn. Turn all oysters and cook just until they turn golden-brown, for about 2 minutes total. Remove oysters from oil, drain on paper towels and keep warm. Continue with remaining oysters, if needed; discard any remaining egg whites and flour mixture.
  • Divide the arugula among serving plates. Divide fried oysters between portions of arugula, drizzle each plate with some of the Lemon Dressing and serve immediately with a lemon wedge on the side.
  • Lemon Dressing: In a small bowl, whisk together olive oil, Meyer lemon juice, grated Parmesan and minced garlic. Taste for seasoning, adding salt and freshly ground pepper to taste. May be made ahead and refrigerated for up to 1 week. Bring to room temperature before using.

1 tablespoon cornstarch
1 tablespoon oyster sauce
1 1/2 tablespoons soy sauce
1 tablespoon oil

4 cloves garlic, minced
3 green onions, cut into 2" pieces
1 1/4 inches ginger, chopped finely

Steps:

  • Boil 4 cups water in pot and add oysters for 10-15 seconds .
