Provided by Amy Nash

Categories     Dinner

Time 1h5m

Number Of Ingredients 10

2 cups uncooked sticky rice
3 1/2 cups water
1/2 teaspoon salt
9 cloves garlic (chopped)
1/4 cup canola oil
4 eggs
2 Tablespoons salted butter
1/4 cup chopped fresh cilantro
1/4 cup chopped green onions
1/4 cup soy glaze

Steps:

  • Prepare sticky rice by soaking the rice and water in a medium saucepan for at least 30 minutes and up to 4 hours. Stir in the salt, then place on the stovetop over high heat. Bring to a boil, reduce the heat to medium-low and partially cover the pot with a lid set at a slight angle to vent some of the steam. Simmer without stirring for 10-15 minutes until all of the liquid has been absorbed. Remove from heat and cover securely with the lid to steam the rice for another 10 minutes.
  • Meanwhile, add the oil and garlic to a small skillet, then place over medium heat. Cook, stirring frequently, just until the garlic begins to turn a light golden brown, about 3 minutes. Remove from heat immediately and transfer the garlic to a plate lined with paper towel using a slotted spoon.
  • Fry the eggs sunny-side up by melting butter in a non-stick skillet over medium heat. Crack the eggs into the pan, then immediately reduce the heat to medium-low. Cover with a tight-fitting lid and cook for 2 1/2 to 3 minutes, just until the whites are set but the yolk is still runny and has not clouded over. Season with salt and pepper.
  • Pile 1 cup of sticky rice on each plate, then sprinkle with the crispy fried garlic, chopped cilantro, and green onions. Drizzle with soy glaze, then top each mound of rice with a sunny-side up egg. Serve immediately. The yolks will combine with the soy glaze to create a sort of sauce for the rice when you break up the egg with a spoon.

FRIED EGGS WITH GARLICKY GREEN RICE

Fried Eggs With Garlicky Green Rice image

Fried eggs are a simple vegetarian staple. But set them on top of garlicky kale- and herb-flecked rice, and they form a deeply satisfying supper. This recipe is endlessly customizable: Go with what you have - reheated leftover rice works equally well as a fresh pot - or use any whole grain you have. The secret here is locking flavor into the grains by stirring in garlic herbs while the rice is warm. To finish, be generous with the lime - the acid brings all the flavors up a notch - and play around with your tolerance for garlic and heat. Lastly, don't be afraid to raid your fridge: Avocado or leftover beans would be right at home here, too.

Time 30m

Yield 4 servings

Number Of Ingredients 14

2 cups brown or white basmati or long-grain rice, rinsed and drained
1/2 teaspoon kosher salt, plus more for seasoning
2 tablespoons olive oil
4 large eggs
Black pepper
1/2 small bunch kale, stems removed and leaves finely chopped (about 1 packed cup)
1/2 bunch fresh cilantro, stems discarded and leaves finely chopped (about 1 packed cup)
1/2 bunch fresh parsley, stems discarded and leaves finely chopped (about 1 packed cup)
4 garlic cloves, finely chopped
1 jalapeño, seeded and finely chopped
4 small pink radishes or 1 large watermelon radish, thinly sliced
4 ounces cotija cheese or queso fresco
2 limes, cut in wedges
Hot sauce, for serving (optional)

Steps:

  • Cook rice with 1/2 teaspoon kosher salt according to package instructions. Set aside, covered, to steam.
  • Meanwhile, heat the oil over medium in your largest skillet or griddle until glistening. Crack in the eggs and cook until golden-brown around the edges, about 2 minutes. Cover loosely using a lid or aluminum foil and cook until the whites are just set and the yolks are still runny but starting to set. (They'll break and mingle with the rice in a beautiful way.) Season with salt and pepper.
  • While the eggs cook, fluff the cooked rice with a fork, then stir in the kale, cilantro and parsley. Add the garlic and jalapeño a little at a time and taste, adding more salt, garlic or jalapeño to your liking.
  • Spoon rice into shallow bowls and top with the fried eggs, radishes, cheese and lime wedges. Serve with your hot sauce of choice.

SPRING GREEN FRIED RICE & EGGS

Spring green fried rice & eggs image

Get all your ingredients ready before you start making this rice, eggs and spring greens dish - once you start cooking it can be on the table in 10 mins

Provided by Elena Silcock

Categories     Dinner, Lunch, Supper

Time 20m

Number Of Ingredients 10

1 tbsp vegetable oil
3 eggs , 1 beaten
bunch of spring onions , chopped into 3cm lengths, tops finely sliced to serve
1 green chilli , chopped
2cm chunk of ginger , grated
1 garlic clove , grated
150g spring greens , shredded
250g pouch of ready-cooked rice
1 ½ tbsp soy sauce , plus extra to taste
sesame seeds , toasted, to serve

Steps:

  • Heat a splash of the oil in a large non-stick frying pan over a high heat. When hot, crack the eggs in and turn the heat down. This should make the eggs nice and crispy - without burning - while the yolks cook. Use a fish slice to remove, set aside on kitchen paper and cover with foil to keep warm.
  • Add the remaining oil to the pan, then scatter in the chopped spring onions, chilli, ginger and garlic and gently fry until softened, about 2-3 mins. Tip in the beaten egg and leave for 30 seconds until just set, then mash up with a spoon. Tip in the spring greens with a splash of water and cook until wilted. Add the rice and soy sauce and mix everything together, then season and tip into two bowls. Top with the eggs, sliced spring onion and sesame seeds to serve.

GREEN FRIED RICE

Categories     side-dish

Time 30m

Yield 4 servings

Number Of Ingredients 12

2 tablespoons olive oil
1 tablespoon toasted sesame oil
1 bunch scallions, chopped
1 (2 inch) piece ginger root, peeled and finely chopped
1 garlic clove, roughly chopped
2 teaspoons kosher salt, divided
3 cups cooked brown rice
1 bunch swiss chard, stems finely chopped and leaves cut into 1-inch pieces
4 cups baby kale, chopped
1 avocado, pitted and sliced
1/2 English cucumber, peeled and julienned
Toasted sesame seeds, optional garnish

Steps:

  • Heat a large skillet over medium-high heat. Add the olive oil and 1 tablespoon sesame oil to the pan and continue to heat for an additional minute. Add the scallion, ginger, garlic and 1/2 teaspoon salt to the pan. Cook, stirring often for about 2 minutes or until fragrant. Add the rice and toss to coat. Spread the mixture evenly over the bottom of the pan and allow to cook undisturbed for 2 minutes. Using a wooden spoon, scrape the crispy rice from the bottom of the pan and stir well to distribute. Repeat this step to create layers of
  • crispy, golden brown rice. Add the stems of the swiss chard and repeat that step one more time. Add all of the greens along with 1 teaspoon kosher salt. Carefully start to stir in the greens. It will get easier as they wilt. Cook until fully wilted and incorporated into the rice about 5 to 8 minutes. Season with the remaining 1/2 teaspoon of salt. Serve topped with sliced avocado, julienned cucumber and a sprinkling of toasted sesame seeds if desired.

STIR-FRIED LETTUCE WITH CRISPY GARLIC AND FRIED EGGS

Stir-Fried Lettuce With Crispy Garlic and Fried Eggs image

In Chinese culture, cooked lettuce is a symbol of good luck and is often eaten during Lunar New Year feasts. In Cantonese, the word for lettuce is sang choy, and in Mandarin, it's sheng cai, which sounds like the words for "growing wealth" in each language. Stir-fried lettuce is commonly served as a bed for braised mushrooms or simply as a green side dish. Here, stir-fried lettuce, fried eggs and crispy garlic chips perch on a bed of rice, a simple meal with comforting flavors and textures. The joy of this preparation is that the lettuce retains a fresh crunch even after cooking; iceberg is preferred, but romaine will give you similar results. Vegetarian stir-fry sauce is a product sold in Asian grocery stores, but you can also use oyster sauce. For a shortcut, skip the fried garlic and top with store-bought crispy fried onions or shallots.

Categories     dinner, weeknight, vegetables, main course

Time 20m

Yield 4 servings

Number Of Ingredients 15

1 head of iceberg lettuce (about 1½ pounds)
1 tablespoon soy sauce
1 tablespoon sesame oil
2 teaspoons vegetarian stir-fry sauce, or oyster sauce
1/4 teaspoon granulated sugar
Kosher salt (Diamond Crystal)
Black or white pepper
2 tablespoons plus ¼ cup extra-virgin olive oil
1 (1-inch) piece of ginger, peeled and finely chopped
6 garlic cloves, peeled and thinly sliced
4 eggs
Steamed rice, for serving
1 tablespoon toasted sesame seeds
2 scallions, green and white parts, finely sliced
Maggi seasoning sauce, for serving (optional)

Steps:

  • Using a sharp paring knife, run it around the core of the lettuce, then gently pull it out. Remove any discolored outer layers of the lettuce and discard. Tear the lettuce into large chunks. Wash the leaves and allow them to drain after gently shaking in a colander.
  • In a small bowl, combine the soy sauce, sesame oil, vegetarian stir-fry or oyster sauce, sugar and ¼ teaspoon salt. Season with pepper.
  • Heat a large (12-inch) deep skillet on medium-high. Add 1 to 2 tablespoons of olive oil to lightly coat the pan, then add the ginger and cook for 15 to 30 seconds, until fragrant. Add the lettuce and stir-fry for 2 minutes, until it starts to wilt. Pour the sauce over the lettuce and stir-fry for another 1 to 2 minutes. (Take care not to overcook, as you want your lettuce to retain some crunch.) Taste and season with salt, if needed. Place the lettuce (and all the pan juices) in a bowl and set aside. Once your skillet is cool enough to handle, rinse it out and dry.
  • To the same skillet over medium-high heat, add the ¼ cup olive oil and sliced garlic. Stir constantly for 3 to 4 minutes until the garlic turns a pale golden brown. (Watch carefully! It burns quickly.) Remove the garlic from the oil with a slotted spoon and place on a paper towel to drain; it will continue to brown and crisp as it cools.
  • To the remaining oil in the skillet over medium-high heat, add the eggs and cook untouched until whites are set, 2 to 3 minutes.
  • To serve, place a mound of rice in a bowl, top with lettuce, some pan juices, a fried egg, crispy garlic and a scatter of sesame seeds and scallions. Finish with a tiny drizzle of Maggi seasoning sauce, if using.
